Chicken Fried Rice

Fakeout Tuesday featuring CHICKEN FRIED RICE!!! I haven’t had this dish in forever but my sister got me craving fried rice!! I wasn’t going to give in to her temptation of going to my local Chinese takeout (hello major points) so I pulled out my recipe and made my version! I couldn’t believe how quick and delicious this recipe was when I first made it. It is so hard to stop sampling it to take some photos! It is a great dish served with edamame or you can throw in some cooked peas and carrots. Either way, I guarantee you’ll be asking for more!!


  • I add 4 tablespoons of riced cauliflower into the mix to incorporate veggies and make the dish extra filling for no added points! Kids and husbands will not even notice it!

  • 1/2 cup dry rice extra long grain, about one cup cooked
  • 1.5 teaspoons sesame oil
  • 2 cloves minced garlic
  • 1/4 white onion
  • 8 ounces ground chicken breast
  • 2 green onions
  • 1/4 cup liquid egg whites sub two eggs
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons teriyaki sauce low sodium
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon paprika
  • 1 teaspoon Splenda one packet


  • Cook rice according to instructions then place in the refrigerator
  • Dice white onion and slice green onion then set aside
  • Heat sesame oil in a large pan over medium heat. Add garlic, white onion and green onion, stirring for 60 seconds, until fragrant
  • Add ground chicken and begin to break up. Season with the seasonings and Splenda and continue to break up. Cook chicken completely, until all the pink is gone
  • Once chicken is completely cooked, push chicken over to one side of the pan and add liquid egg whites to the other side. Stir egg whites until scrambled and cooked
  • Add cooked rice, soy sauce and teriyaki sauce to the chicken and stir until everything is coated and evenly combined
  • Top with more green onions to taste
  • Optional: top with hot sauce!
