Queso Mac and Cheese

Queso mac and cheese combines all your favorite flavors of a taco, macaroni or pasta and salsa with a creamy queso cheesy sauce.

Ingredients
 

  • 6 ounces elbow pasta dry
  • 4 cloves minced garlic
  • cup diced white onion
  • 16 ounces ground chicken breast
  • 1 tablespoon Taco Bell Sauce
  • ½ cup shredded lite Mexican cheese
  • ½ cup salsa con queso
  • ¼ cup plain, nonfat Greek yogurt
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • 1 pinch oregano
  • 1 pinch black pepper

Instructions

  • Cook pasta according to the package directions, drain well and set aside
  • Heat a large pan on the stove over medium/high heat, greased with cooking spray.
  • Place minced garlic in the pan and cook for one minute, then, add in the diced onion and cook until soft and translucent, about 3 more minutes.
  • Add ground chicken, breaking it apart while cooking. Once slightly broken up, season with the seasonings then cook until it is fully cooked, all the pink is gone.
  • Reduce heat to a medium / medium-low.
  • Pour in the taco sauce, stirring to combine. Then, add in the shredded cheese and mix until fully melted.
  • Remove from heat and add pasta back in, tossing to combine, then add in yogurt and salsa con queso and stir everything together.
  • Top with any of your favorite taco toppings.
