If you know me, my absolute favorite thing in the world is takeout food. I love making "fakeout" dishes; but, sometimes they take a while. I wanted to create something simple, and delicious, yet packed with flavor, protein and veggies. That's why I love making my ground chicken stir fry!
Start by mixing all the ingredients for the gluten free and sugar free stir fry sauce together in a small bowl and set that aside.
Dice the onion and pepper.
Heat a medium sized pan over medium high heat. Grease with cooking spray.
Once heated, add the pepper and let that cook for 4 minutes. Then, add the onion and let that cook for another 2-3 minutes.
Add the ground chicken and start breaking that up, a meat chopper works great for this. Sprinkle with all the seasonings and continue to break up while cooking.
Once fully cooked, add the stir fry sauce in and bring to a simmer. Simmer for 5 minutes to allow the sauce to thicken and the flavors form together.
I also love adding 2 tablespoons of sweet chili sauce into this for a little kick!
