If you know me, you know I LOVE a good greek yogurt dip. I decided to ~spice~ things up and make a healthy, jalapeño popper dip. It is everything you love about a classic jalapeño popper; but, in dip form!
Finely dice the jalapeno, you should have about a ¼ cup of pieces.
Combine all the ingredients together, in a small bowl, and store in the fridge for at least an hour, to allow the flavors to form together.
I used one whole jalapeño in this recipe, diced it up and placed it right into the dip. However, if you do not want to use fresh jalapeños, you can use pickled jalapeños or sauté some on the stove, to make them less spicy. Remember, take the seeds out if you do not want overly spicy.
This dip is great on its own with chips. However, I love placing it into a fresh jalapeño. It is amazing with some extra shredded cheese on top. Then, broil that in the oven to get the cheese crispy and melty. However, you can also serve jalapeño slices on the side, for dipping. If you want something less spicy, serve this in some of those mini sweet peppers, in a bell pepper, or with bell pepper strips on the side.
I serve this cold; however, you can also heat this in the oven for 10-20 minutes to get the cheese a little melty.
