cut each chicken breast up into 4 pieces
in a small bowl, combine honey dijon and brown sugar, stirring until the brown sugar is dissolved
place cut up chicken in a bowl and pour half the mustard/sugar mixture on top
cover and marinate in the fridge for at least 30 minutes or up to all day
preheat oven to 350 degrees. Grease a baking tray with cooking spray
cut 10 pieces out of the onion and the pepper, about 1 inch by 1 inch
place marinated chicken, onions and peppers on the greased baking tray and season with the seasonings
bake for 25-30 minutes, until fully cooked, flipping halfway (or cook on the grill)
soak skewers in water for a few minutes, it makes them go in the chicken better
assemble your skewers and serve the remaining sauce on the side to dip
