Ingredients
 

  • 15 baby potatoes honey gold
  • 9 ounces dip chip carrots about half bag
  • ½ tablespoon olive oil
  • 4 cloves minced garlic
  • ½ tablespoon shallot diced
  • 1 teaspoon Italian seasonings
  • ¼ teaspoon parsley
  • ¼ teaspoon rosemary
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

  • Preheat oven to 425 degrees and grease a baking tray with cooking spray
  • Cut potato lengthwise, into a width about equal to the carrots
  • Place potatoes and carrots on a baking tray, drizzle with oil and toss to evenly coat
  • Add the remaining ingredients and toss to coat
  • Cook for 25-30 minutes, stirring/flipping every 10 minutes
