Shred the chicken as finely as you can, until you get about a half cup.
Combine all ingredients in a bowl and store in the fridge for at least an hour, to allow the flavors to form together. However, if you are short on time, you can serve this immediately.
I usually serve this cold, with the shredded cheese just as shredded cheese. However, you can also dice up the shredded cheese, so it is not in such big pieces. You can also bake this in the oven for 20 minutes, at 350 degrees, if you want to serve it warm with a big more of a melted cheese.
