Creamy Garlic Chicken Pasta

I think I have found my new favorite chicken recipe! This is a creamy garlic sauce, tossed with pasta. Served with a perfectly seared piece of chicken breast.

Ingredients
 

Pasta Ingredients

  • 6 ounces penne pasta dry

Chicken Ingredients

  • 4 pieces chicken cutlets 4 ounces each
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasonings
  • 1 teaspoon seasoned salt
  • 1 teaspoon paprika
  • ½ teaspoon black pepper

Sauce Ingredients

  • 1 shallot diced
  • 4 cloves minced garlic
  • 1 cup chicken broth low sodium
  • 1 teaspoon Better Than Bouillon
  • 1 cup fat-free half and half
  • 1 teaspoon basil
  • 1 teaspoon parsley
  • 1 teaspoon Italian seasonings

Instructions

  • Cook pasta according to package instructions. Drain well and set aside. 
  • Preheat the oven to 400 degrees. 
  • Season both sides of the chicken cutlets with the chicken seasonings blend, being sure to press into the chicken. 
  • Heat a pan over medium heat. Grease with cooking spray or drizzle some olive oil.
  • Add chicken cutlets and cook thoroughly, about 5 minutes per side. Then, remove to a clean plate. 
  • Drizzle the pan with oil or grease again. Add diced shallot and cook for about 2-3 minutes, until turning translucent. Add the minced garlic and cook for another 1-2 minutes, until golden and fragrant. 
  • Pour in the chicken broth and Bouillon. Mix together and bring to a simmer. Allow the mixture to simmer for five minutes, scraping the bottom occasionally.
  • Pour in the half and half and the seasonings, mixing together. Allow the mixture to simmer for five minutes, scraping the bottom occasionally.
  • Add in the cooked pasta and bring to a simmer again. Allow the mixture to simmer for five minutes, until thickened, scraping the bottom occasionally.
  • Place the pasta with the sauce into a casserole dish. Add the cooked chicken pieces on top and top with cheese, if desired. 
  • Bake in the oven for 10 minutes, to allow all the flavors to combine.
