This fiesta Mexican corn dip is made with hidden valley ranch mix and just three extra ingredients for the easiest and most delicious appetizer!

Fiesta Corn Dip

There is nothing I love more than combing a few ingredients together and making a delicious dip that is also extremely easy. It is zesty, it is sweet, it is creamy and has pops of corn kernels in it! Pair it with any chips or veggies for an awesome appetizer.

Ingredients

  • 2 cups plain, nonfat Greek yogurt
  • 1 can Rotel 10 ounces
  • ½ cup sweet corn kernels

Fiesta Ranch Mix

  • 2 tablespoons Ranch seasoning
  • 1 tablespoon parsley
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin ground

Instructions

  • To make fiesta corn dip, just combine all the ingredients in a bowl. You can eat the dip right away; however, I prefer to let it set in the fridge for at least an hour to allow the flavors to form together. Either cover it tightly or place it in an air tight container.
  • If you need to serve this right away, I would drain the Rotel a little so it is not too soupy. However, if you are letting the dip set in the fridge, you can leave the Rotel as it (with the juices) as the mix will absorb the extra liquid.
  • Serve this Mexican fiesta dip cold with some chips or veggies. I also like to keep a little bit of the ingredients to sprinkle on top and make it pretty!
