These healthy ground chicken sloppy Joes are the skinny weight watchers’ version of your favorite sloppy joe recipe. Sloppy Joes are quite simple to make and pretty easy to make healthy. I use ground chicken breast, vegetables and low sugar sauces to keep this healthy, yet enjoyable.
Start by cutting up the onion and the bell pepper. You will need about 2-3 tablespoons each of diced onion and diced pepper.
Heat a medium sized pan over medium high heat. Grease it with cooking spray. Add the minced garlic, cooking for about a minute. Place the diced onion and pepper into the pan and cook for about 3 minutes, until softened.
Add in the ground chicken breast and start to break it up. Sprinkle on the seasonings and continue to mix up and break up until the chicken is fully cooked.
Once the chicken is fully cooked, reduce the heat to medium. Add in the remaining ingredients, the ketchup, sugar, Worcestershire and mustard. Mix everything together and bring to a slight simmer. Simmer the mixture for about 3 minutes, until slightly thickened. You can skip the sugar if you want a much more savory chicken sloppy Joe, as opposed to a slightly sweet dish.
