Cut potatoes into equal, bite-sized pieces. Add the potatoes and carrots to the bottom of the crock pot. Top with their seasonings and toss to coat. Cook on low for 3 hours.
Then, add the chicken thighs on top. Season with their seasonings. Then, pour on the BBQ sauce.
Cover the pot and cook on low for another 3 hours. Until chicken is fully cooked, and potatoes are soft.
