Ingredients
 

  • ¼ cup chicken broth low sodium

Potatoes and Carrots

  • 1.5 pounds baby potatoes
  • 1 pound baby carrots
  • 4 cloves minced garlic
  • 1 tablespoon Italian seasonings
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • ½ teaspoon rosemary
  • ¼ teaspoon thyme

Chicken Thighs

  • 6 boneless, skinless chicken thighs
  • 1 teaspoon seasoned salt
  • 1 tablespoon garlic powder
  • ¾ cup sugar free BBQ sauce

Instructions

  • Pour the broth into the bottom of the crock pot. 
  • Cut potatoes into equal, bite-sized pieces. Add the potatoes and carrots to the bottom of the crock pot. Top with their seasonings and toss to coat. Cook on low for 3 hours.
  • Then, add the chicken thighs on top. Season with their seasonings. Then, pour on the BBQ sauce.
  • Cover the pot and cook on low for another 3 hours. Until chicken is fully cooked, and potatoes are soft.
