I love a good one pot meal. Especially when it is made in the crock pot. I always use a crock pot liner for easy clean-up. Now, there is no mess and no dishes!
It is great to find a meal that gives you everything you need. You get some protein, carbs, a veggie and lots of flavor! Plus, you can use my technique and add your own personal style and preferences to it.
Why I Love Slow Cooked Chicken Thighs
It is no secret that I am a huge chicken fanatic. I love chicken thighs as they are always nice and tender. Plus, they are pretty easy to make and pretty hard to mess up. But, my favorite way to make chicken thighs has been in the crock pot with some BBQ sauce.

There are not that many ingredients; therefore, you can really make this recipe your own. Plus, they make for great leftovers as they are so tender.
Essential Ingredients
First things first is a crock pot or slow cooker to make the BBQ chicken thighs, of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to.
- Broth
- Carrots
- Potatoes
- Chicken thighs
- BBQ sauce
- Seasonings
Using Different Chicken Thighs
I typically like boneless, skinless chicken thighs in this slow cooker recipe and lots of other recipes. However, you can use different types of chicken thighs. But, the cooking times will vary. I will reference how to make the different types of chicken thighs, using two pounds of each type.
- Boneless, skinless chicken thighs - 3 hours on low
- Bone-in, skin-on chicken thighs - 4 hours on low
- Frozen chicken thighs - add 2 hours
However, you do want to make sure you grab a meat thermometer to know exactly when the chicken is done.
Substituting a Different Cut of Chicken
Can I use chicken breast? Of course you can! However, those only take about two hours to cook. Therefore, when you have about two hours left on your cook time, add those in. Use the same seasonings and same BBQ sauce.
Adding in Veggies and Potatoes
I love adding carrots and potatoes to my crock pot BBQ chicken thighs because they are hearty and are a while to cook. You really need something that can withstand the long cook time in the slow cooker.
However, with that being said, you also need the potatoes and vegetables to be fully cooked. I leave my baby potatoes whole, as I like they a little crunchier; however, you can cut them in half, or use another shape of carrot, if you prefer them more well done.
Now, for the potatoes, I do like those more well done. Therefore, I cut them up into smaller pieces. Just make sure everything is cut evenly for an even cook.
Customizing Your Flavor
I season in layers to make sure everything is flavorful!
The potatoes and carrots will be going into the bottom of the crock pot. I will season those with some fresh garlic and dried herbs. This is my favorite way to season potatoes and the carrots are coming along too. However, if you want to change up the flavor, this is a good time to do it. You can do Ranch potatoes or spicy potatoes. Really, anything you have in the cabinet.
Then, the chicken thighs go in at the top of the crock pot with BBQ sauce. I first season the chicken thighs with some garlic powder and seasoned salt. Then, I pour the BBQ sauce on top. However, you can also add in some hot sauce, brown sugar, honey mustard, or just about any other sauce that you enjoy.
How to Make the Best Slow Cooker Thighs
First things first is to grab a crock pot or slow cooker to make the BBQ chicken thighs, of course. I use the original crock pot brand; however, you can try others. I love using the liners for easy clean up; however, you do not have to.
Then, pour the broth into the bottom of the crock pot.
Cut potatoes into equal, bite-sized pieces. Add the potatoes and carrots to the bottom of the crock pot. Top with their seasonings and toss to coat. Cook on low for three hours.
Then, add the chicken thighs on top. Season with their seasonings. Then, pour on the BBQ sauce.
Cover the pot and cook on low for another 3 hours. Until chicken is fully cooked, and potatoes are soft.

While I am biased to say this is my current favorite recipe, there are different ways to make BBQ chicken thighs, potatoes and carrots that do not involve the crock pot.

- ¼ cup chicken broth low sodium
Potatoes and Carrots
- 1.5 pounds baby potatoes
- 1 pound baby carrots
- 4 cloves minced garlic
- 1 tablespoon Italian seasonings
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon seasoned salt
- ½ teaspoon rosemary
- ¼ teaspoon thyme
Chicken Thighs
- 6 boneless, skinless chicken thighs
- 1 teaspoon seasoned salt
- 1 tablespoon garlic powder
- ¾ cup sugar free BBQ sauce
Instructions
- Pour the broth into the bottom of the crock pot.
