Truffle Roasted Potatoes

These truffle potatoes are roasted to perfection with a spicy parmesan seasoning. This combines everything I love, from potatoes, to truffle oil, to a nice parmesan crispy crust. Plus, make it spicy or keep it chill, whatever you love!

I absolutely love making potatoes. They are one of my favorite sides and never get old. I typically make a garlic herb version, which are amazing. However, I was feeling adventurous and invented these spicy, truffle, parmesan, roasted potatoes.

Roasted potatoes are some of the easiest sides you can make. Plus, customize any of the ingredients and use what you love.

If you do not like truffle, you can substitute out a regular olive oil. Then, this recipe will make spicy parmesan potatoes. Alternatively, if you do not like it spicy, skip the crushed red pepper. This recipe would then make truffle parmesan potatoes.

What You Need for Truffle Roasted Potatoes

Roasted potatoes are some of the easiest sides you can make. Plus, customize any of the ingredients and use what you love.

  • Seasonings

Let's go over some suggestions and substitutions

Potatoes

You can really make this with any type of potatoes. I typically go for baby red potatoes; however, my Instant Cart driver told me they were all out of stock...

I use mini baby potatoes; however, you can use any potato you like. Either cut it up to about the same size as I did or adjust the cooking times. While on the topic, be sure to try and cut the potatoes as close in size as possible. This will allow them to all cook at the same time.

Truffle Oil

Fun fact, I am actually allergic to mushrooms, yes, truffle oil does count. However, I love the taste of truffle fries or truffle potatoes. Therefore, I have to make an except for these roasted potatoes and eat some truffle. Someone grab the Benadryl!!

While you have the truffle oil, make some of my truffle parmesan fries next time!

If you do not like truffle, do not have truffle oil, or are simply allergic, you can substitute out a regular olive oil. Then, this recipe will make spicy parmesan potatoes. Which are still amazing!

Parmesan

I typically use Kraft reduced fat parmesan cheese for the parmesan truffle seasoning. Yes, the bottles stuff that is found in the pizza sauce aisle. Hey, I can't be perfect all the time and I do love this stuff. However, you can substitute any type of parmesan that you love.

Garlic

I mean come on, who doesn't love garlic!? Lately, I have been buying whole, peeled, garlic cloves and mincing them myself with a mini food processor. Typically, I do a whole bunch of them and store them in a mason jar in the fridge. However, use a pre-minced garlic or an alternative. Spice World also makes a great pre-minced garlic.

Crushed Red Pepper

The spice for these truffle roasted potatoes comes from crushed red pepper. Alternatively, if you do not like it spicy, skip the crushed red pepper. This recipe would then make truffle parmesan potatoes. In addition, you can substitute out a different spicy seasonings such as ground red pepper.

Seasonings

For the seasonings, I keep it simple. Some garlic salt, because who does not love some more garlic and some salty potatoes. Then, some paprika, mostly for color, and a little bit of rosemary for a nice herb flavor. However, you can substitute out the seasonings for anything that you love.

Truffle Roasted Potatoes

I top it off with some parsley for color as well.

How to Make Truffle Roasted Potatoes

Start by preheating the oven to 425 degrees. Line a baking tray with aluminum foil, if desired, and spray with cooking spray.

Make sure the potatoes are thoroughly washed and dried. Then, cut the potatoes up into bite-sized, even, pieces.

Add cut potatoes to a large bowl and drizzle with the truffle oil, tossing to evenly coat. Sprinkle on the remaining seasonings and toss to evenly coat.

Add the potatoes to the baking tray and bake in the oven for 25 to 30 minutes, or until desired wellness. Be sure to flip the potatoes halfway through, or three times if starting to get too browned.

Alternatively, air fry at 400 degrees for 12-14 minutes.

  • 8 yukon gold potatoes 10 ounces
  • 1 tablespoon truffle oil
  • 2 tablespoons reduced fat parmesan cheese
  • 2 cloves minced garlic
  • ½ teaspoon garlic salt
  • ½ teaspoon paprika
  • ½ teaspoon crushed red pepper
  • ¼ teaspoon rosemary
