Roasted Potatoes and Carrots

Ingredients
- 15 baby potatoes honey gold
- 9 ounces dip chip carrots about half bag
- ½ tablespoon olive oil
- 4 cloves minced garlic
- ½ tablespoon shallot diced
- 1 teaspoon Italian seasonings
- ¼ teaspoon parsley
- ¼ teaspoon rosemary
- ½ teaspoon garlic powder
- ¼ teaspoon salt
Instructions
- Preheat oven to 425 degrees and grease a baking tray with cooking spray
- Cut potato lengthwise, into a width about equal to the carrots
- Place potatoes and carrots on a baking tray, drizzle with oil and toss to evenly coat
- Add the remaining ingredients and toss to coat
- Cook for 25-30 minutes, stirring/flipping every 10 minutes
