Instructions
Preheat oven to 425 degrees and grease a baking tray with cooking spray
Cut potato lengthwise, into a width about equal to the carrots
Place potatoes and carrots on a baking tray, drizzle with oil and toss to evenly coat
Add the remaining ingredients and toss to coat
Cook for 25-30 minutes, stirring/flipping every 10 minutes
