Air fryer baby honey gold potatoes are mini but pack a punch as they are diced then air fried to perfection. This is a much quicker way to make potatoes, and they provide a nice little crunch to them. Think French fries, but diced potatoes. I love potatoes. I truly love potatoes in all shapes, sizes and forms. Give me tater tots, give me waffle fries, give me mashed potatoes, scalloped potatoes, I do not care. But, you know the worst part about potatoes, they take forever to cook. You need to cook potatoes all the way. Who wants a hard potato, but who wants to wait forever for a soft and delicious potato! Air fryer baby potatoes cook in almost half the time as oven potatoes, are just as delicious, but pack a nice crunch to them.
This is a quick and easy recipe that will be done in less than 20 minutes. All you need to do is cut, season, then air fry! It cannot get more simple than that.
Would you consider potatoes a vegetable. I mean, I wouldn't, but my dad calls potatoes his favorite vegetable. If I could eat fries and call them a vegetable, I would be one happy gal. As far as carbs go, I would say potatoes are not too bad. At least roasted potatoes, or in this case air fried baby potatoes. We are not dunking them in oil or anything crazy. The potatoes will just be diced then placed in the air fryer. I guess it does mimic being fried, especially when spray with cooking spray, but still healthier than takeout fries.
What You Need for Air Fryer Mini Potatoes
First things first will be an air fryer. You can use a rack type air fryer but I prefer a basket type air fryer for this recipe. I prefer a basket type air fryer with little things, such as baby potatoes, because then everything is not rolling around or falling down. With a basket air fryer, all of the mini potatoes are corralled in one container. It also makes it easier to flip the potatoes as you can just shake the basket around.
Now, for the ingredients, we will just need some potatoes, oil and seasonings.
- Baby potatoes
- Oil
- Seasonings
- Cooking spray
Use less oil if you are being conscious about weight watchers points, calories, or just the amount of oil you use in general.
Baby Potatoes
Honey gold potatoes are key here. I mean, not really, you can use any potato. But I absolutely love honey gold potatoes. They are also called 'Nibbles' at my grocery store. What are honey gold potatoes? They are a buttery flavored, bite-sized potato that has a semi-sweet taste to them. I love butter and I love sweet so I love these potatoes.
Honey gold potatoes can be big or small. This recipe is for baby potatoes; however, they do have normal or larger sized honey potatoes. You can certainly use those but make sure to be cutting them up smaller. The baby ones are typically in a bag already.
We will be adding some more butter flavor to these potatoes, which is why I love the honey gold ones, they already provide a nice base butter flavor. However, you can use any potatoes you want for this recipe. The actual potato does not matter too much. Try this with fingerling or red potatoes.
Seasonings
Adjust the seasonings to your likeness. I will provide a good solid base for you, but, like anything, adjust them how you like them. Are you not a crazy garlic fanatic like I am? No worries, add less! Also, minced garlic tends to burn, especially in the air fryer. So just be mindful of that when using minced garlic as I do. Do you need a low salt recipe? Great! Add less or no salt.
If you are looking for something spicy, try adding in some ground red pepper and paprika. Then, drizzle with some Mike's hot honey after they go in the air fryer. It is truly perfection.
For my seasonings, I like to do a classic garlic and onion with some Italian flavoring in there. I typically do the following:
- Minced garlic
- Garlic powder
- Onion powder
- Seasoned salt
- Italian seasonings
- Basil
- Rosemary
- Thyme
However, use your favorite seasonings or adjust mine to your liking.
How to Make Air Fryer Baby Potatoes
First things first will be grabbing an air fryer. You can use a rack type air fryer but I prefer a basket type air fryer for this recipe. Preheat the air fryer to 400 degrees and then begin the prep work, don't worry, it is not much.
Begin by cutting up the potatoes into bite-size pieces. You will need to wash them first, if not already. Make sure you are cutting the potatoes into equal sizes so they air fry evenly. You do not want half burnt potatoes and half raw potatoes, ya know. You will be cutting some of the potatoes in half, into third and into fourths and so on. The potatoes do not come out the same size, that is why we are cutting them up into equal pieces.
Next, place all the potatoes in a bowl and drizzle with oil, tossing to coat. Sprinkle with the seasonings and toss to coat.
Open the air fryer and grease with cooking spray. I prefer a butter flavor cooking spray. Place the potatoes in the air fryer, trying to get them into a single layer. Air fry for 12 to 13 minutes, or until your liking.
Halfway through, toss/shake up the potatoes and spray with butter spray. Alternatively, you can just grease them again with cooking spray. These will be the most delicious air fryer diced potatoes! Air fried baby potatoes have like a French fry crisp but are not fried in oil.
