What are your favorite vegetables? Mine are broccoli and carrots, but, I am pretty basic. I always have a bag of carrots in my fridge. They last long and can taste really good if you spice them up.
Carrots are one of the staple vegetables, but that is my opinion. Lots of people like them and they can be used in so many ways.
These garlic and honey glazed roasted carrots take only minutes to prepare and will certainly wow a crowd. I also make a huge batch of them to have my dinner vegetable prepped for the week. However, they can also be fancied up, which is perfect for a dinner party or a holiday gathering.
Ingredients for Honey Roasted Carrots
This recipe requires just a couple of ingredients that you probably already have in your cabinet. However, if you are missing any, we can go over some substitutions.
- Olive oil
- Honey
- Minced garlic
- Carrots
- Garlic salt
And that is it! But, I can also let you in on some substitutions.
Olive Oil
I use olive oil because it is the easiest. However, you can substitute any type of oil or use melted butter (which tastes even better)
Honey
These are honey roasted carrots after all. Maple syrup is a great substitute for honey. However, you can also substitute brown sugar or a brown sugar replacement such as Swerve.
Minced Garlic
You can buy pre-minced garlic; however, I love mincing my own with this mini food processor.
Garlic Salt
Yes, garlic and garlic salt. Trust me, one cannot have too much garlic.
Carrots
You can really use any type of carrot, you will just have to adjust the cooking time. I love using the big carrots for a holiday gathering as they look fancier. However, I typically just do baby carrots as they are easier. When it is just me eating them, this is what I prefer.
Tips for Honey Garlic Carrots
Baking times depend on how big the carrots are and how soft you want them to be. I use baby carrots, which take about 30-40 minutes. However, smaller carrots will take less time while larger carrots take more time.
How to Make Honey Glazed Roasted Carrots
There are really just five very simple instructions: preheat oven, toss with oil, mix in sauce/seasonings, bake and flip.
Step 1
Preheat your oven to 450 degrees and line a baking tray with aluminum foil. I like to spray it with a little cooking spray; however, you might not need to.
Step 2
Add the carrots to a bowl. Drizzle olive oil over the carrots and toss to evenly coat.
Step 3
Add the remaining ingredients (garlic, garlic salt and honey) and toss to evenly coat.
Step 4
Add the carrots to the baking tray, in a single layer. Bake in the oven for 30 to 40 minutes, flipping halfway. But, if you are using a different carrot, adjust your cooking time.
I like mine sweet. Therefore, I drizzle another tablespoon or two of honey on top, when they are done cooking. However, if you do not want the extra sweetness, skip this step.
Variations of Roasted Glazed Carrots
For a sweeter dish, add more honey. But, you can also combine the carrots with some brown sugar or a brown sugar replacement such as Swerve.
This dish is pretty sweet; however, if you like things spicier, try Mike's Hot Honey or adding some spice to the seasonings mix. But, you can also try some pumpkin pie spice or cinnamon.
For my garlic lovers, add more garlic! Come on, you can never have too much.
Try making this recipe with other vegetables like broccoli.

- 5 cloves minced garlic
