Greek Skewers with Tzatziki Sauce

Ingredients
 

Tzatziki Sauce

  • ¼ cup plain, nonfat Greek yogurt
  • ½ teaspoon dill weed
  • ½ teaspoon dill pickle juice sub olive juice
  • 1 teaspoon lemon juice
  • ¼ teaspoon garlic powder
  • 1 pinch salt to taste

Greek Chicken

  • 12 ounces chicken cutlets three pieces
  • 2 cloves minced garlic
  • ¼ teaspoon salt
  • teaspoon black pepper
  • teaspoon paprika
  • ½ teaspoon dill weed
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dill pickle juice sub olive juice
  • ½ teaspoon lemon juice

Vegetables

  • ¼ white onion
  • 1 zucchini or your choice of vegetables

Skewers

  • 3 skewers

Instructions

Tzatziki Sauce

  • Combine all ingredients for the Tzatziki sauce in a small bowl and store in the fridge for at least 15-20 minutes to allow the flavors to form together

Greek Chicken

  • Cut each chicken cutlet into five pieces. Season the chicken evenly with the seasonings
  • Heat a medium pan over medium heat. Spray with cooking spray
  • Add garlic and cook for one minute, until fragrant. Add chicken and cook for about 5 minutes, flipping halfway
  • Add the pickle and lemon juice and continue to saute the chicken until completely cooked, about another five minutes
  • Remove chicken onto a clean plate

Vegetables

  • Slice vegetables and add to the heated pan, on medium heat, with the chicken juices
  • Saute the vegetables for about 3-4 minutes
  • Add ⅛ cup of water and cover the pan. Cover the pan and allow the vegetables to steam for about five minutes, until desired softness

Skewers

  • Add the chicken and vegetables evenly onto three skewers then drizzle with the tzatziki sauce
