Fun fact about me: I am Greek! I dug into my heritage a little and created some amazing GREEK SKEWERS. The tzatziki sauce on top really pulls the whole dish together and is so great. I put some veggies on the skewer too since they’re zero points.
An easy way to skewer your chicken is to soak them in water so the food goes on easily and the stick does not splinter.

Greek Skewers with Tzatziki Sauce
one skewer per serving
Ingredients
Tzatziki Sauce
- ¼ cup plain, nonfat Greek yogurt
- ½ teaspoon dill weed
- ½ teaspoon dill pickle juice sub olive juice
- 1 teaspoon lemon juice
- ¼ teaspoon garlic powder
- 1 pinch salt to taste
Greek Chicken
- 12 ounces chicken cutlets three pieces
- 2 cloves minced garlic
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon paprika
- ½ teaspoon dill weed
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dill pickle juice sub olive juice
- ½ teaspoon lemon juice
Vegetables
- ¼ white onion
- 1 zucchini or your choice of vegetables
Skewers
- 3 skewers
Instructions
Tzatziki Sauce
- Combine all ingredients for the Tzatziki sauce in a small bowl and store in the fridge for at least 15-20 minutes to allow the flavors to form together
Greek Chicken
- Cut each chicken cutlet into five pieces. Season the chicken evenly with the seasonings
- Heat a medium pan over medium heat. Spray with cooking spray
- Add garlic and cook for one minute, until fragrant. Add chicken and cook for about 5 minutes, flipping halfway
- Add the pickle and lemon juice and continue to saute the chicken until completely cooked, about another five minutes
- Remove chicken onto a clean plate
Vegetables
- Slice vegetables and add to the heated pan, on medium heat, with the chicken juices
- Saute the vegetables for about 3-4 minutes
- Add ⅛ cup of water and cover the pan. Cover the pan and allow the vegetables to steam for about five minutes, until desired softness
Skewers
- Add the chicken and vegetables evenly onto three skewers then drizzle with the tzatziki sauce
