Greek Yogurt Mashed Potatoes

Greek yogurt in mashed potatoes made with almond milk are insanely good and healthy! They come out just as creamy as your typical potato. Plus, these have some protein in them.

Ingredients
 

  • 2 pounds russet potato
  • ½ cup plain, nonfat Greek yogurt
  • cup plain, unsweetened almond milk more if desired
  • 2 tablespoons light margarine ICBINB
  • 2 teaspoons salt
  • 1 tablespoon green onions sliced
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper

Instructions

  • Be sure to thoroughly wash your potatoes before beginning. Peel the potatoes, if desired. Then, cut the potatoes into one-inch cubes. 
  • Bring a pot of water, big enough for the potatoes, to a boil on the stove top. Once boiling, add in the potatoes and cook until done. It should take about 20 minutes and they should come out fork tender. 
  • Drain the potatoes then, add then back into the empty pot. Add the remaining ingredients, yogurt, milk, margarine, salt and seasonings. Continue to stir and mash the potatoes until everything is combined and creamy.
