Do I need to leave the skin on? No, you do not need to leave the skin on. I typically prefer mine without skin; however, I decided to switch it up for once.

All you need is a pot big enough to boil your potatoes and a stovetop.

- Greek Yogurt
- Almond Milk
- Margarine
- Seasonings
Potatoes
These are your classic, russet potatoes. In general, for every pound of potatoes, you will need:
- ¼ cup yogurt
- 3 tablespoons milk
- 1 tablespoon margarine
- 1 teaspoon salt
- 2 tablespoons of seasoning
Greek Yogurt
These are made with yogurt; however, I promise you do not taste the greek yogurt in these mashed potatoes. We will be seasoning the potatoes and making them taste great. My friends and family have all tried this and would never know. But, I guess now they will.
But, if you are really against the Greek yogurt, try swapping in some light sour cream.
Almond Milk

Margarine
Yes, I love margarine. I have always been a tried and true I Can't Believe It's Not Butter Fan. I specifically like this light olive oil one; however, you can substitute a different margarine or a butter.
Seasonings
Can I do different flavor combinations? Of course you can! I prefer either an Italian-ish style, rosemary flavor or a green onion flavor with lots of garlic. However, if there is another flavor you love, go ahead and try that!

How to Make Greek Yogurt Mashed Potatoes
Be sure to thoroughly wash your potatoes before beginning. Peel the potatoes, if desired. Then, cut the potatoes into one-inch cubes.
Bring a pot of water, big enough for the potatoes, to a boil on the stove top. Once boiling, add in the potatoes and cook until done. It should take about 20 minutes and they should come out fork tender.
Drain the potatoes then, add then back into the empty pot. Add the remaining ingredients, yogurt, milk, margarine, salt and seasonings.
Continue to stir and mash the potatoes until everything is combined and creamy. I used this meat chopper.

- 2 pounds russet potato
- ½ cup plain, nonfat Greek yogurt
- ⅜ cup plain, unsweetened almond milk more if desired
- 2 tablespoons light margarine ICBINB
- 2 teaspoons salt
- 1 tablespoon green onions sliced
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon black pepper
Instructions
