Mississippi Chicken

My favorite crock pot recipe is Mississippi chicken! It takes four minutes to prepare and only requires four ingredients… chicken, peppers, broth, and ranch. It does not get much easier than this.

Basically, this dish is perfectly slow cooked chicken, covered in Ranch and either banana or pepperchini peppers (depending on how much spice you can handle). Then, once cooked, it is shredded and served over any side dish, preferably some mashed potatoes. It is creamy, it is moist and it is OH SO GOOD.

why do i love crock pot chicken

This dish is the most effortless dish that turns out absolutely amazing. Just place everything into a crock pot and press cook. I even use the liners for easy clean up. I typically have all these ingredients on hand. Making this the perfect dish for a weeknight when I do not know what to cook.

It makes for great leftovers. I make a big batch to not have to worry about lunch the next days. Crock pot Mississippi chicken is great recipe on a ton of different side dishes and is very kid friendly.

quick substitutions and tips for Mississippi chicken recipe

I use chicken breast; however, different cuts of chicken work very well. I suggest using something boneless, such as a bones chicken thigh, since you will shred it. However, if you want to serve it whole, you can cut around a bone while eating.

Depending on how much spice you can handle, use banana or pepperchini peppers. Banana peppers will be milder; however, if you can handle the heat, try pepperchini peppers. I also use chicken broth instead of the pepper juices; however, you can use the juices of the peppers for a spicier dish.

These are the essential ingredients to make the best crock pot chicken recipe.

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

I typically use low sodium as you can always add in more salt but you can't take it away. Again, I used broth for the juices as I am a baby when it comes to spice; however, you can skip the broth and use the pepper juices if you like the heat.

Pour the broth at the bottom of the crock. Add in the chicken and cover it with the Ranch and then the peppers.

Place the lid on the crock pot and cook on low for two hours, until chicken is fully cooked.

Once cooked, shred the chicken. You can do this right in the crock pot or in a separate bowl. Add the chicken back into the crock pot and stir to absorb all of the juices.
