One Pan Roasted Chicken and Potatoes

This one sheet pan chicken, potatoes and broccoli recipe mimics a weeknight casserole dish but allows all the elements to be roasted to perfection. 

Sheet pan dinners are my favorite thing to make! They are so easy to cook and only require one sheet pan, obviously, which means an easier clean up. This is my sheet pan cheesy chicken with potatoes and broccoli. It combines a protein with a carb and a veggie, plus you are getting a little fat in there too. Everything you need, all in one dish, in one sheet pan!

What You Need for a One Pan Meal

Sheet pan roasted chicken, broccoli and potatoes only need one sheet pan. Plus, you might need a cutting board and knife to chop everything up.

As for this ingredients, they are very simple for this chicken, broccoli and potatoes casserole recipe.

Broccoli

I keep it easy by buying precut broccoli. I still have to cut it a little because some of t he pieces are uneven; but, it really does cut back on time. However, you can also buy a head of broccoli and cut the whole thing up yourself.

Shredded Cheese

Feel free to use whatever type of shredded cheese that you like on our one pan roasted chicken and potatoes recipe. However, I prefer low fat or fat-free.

Shallot

I used shallots in this recipe, because I love them. You can skip it, or use less, if you are not a fan. Additionally, if you do not want to buy shallots or cannot find any, substitute red onions. This also tastes really good with diced bell peppers if you prefer that.

Potatoes

I have been obsessed with these nibbles potatoes and they are perfect for this one pan roasted chicken recipe. They are already pretty small, therefore, just need a little extra chopping. You can use a different potato; however, be mindful of the cooking time as you will need to chop them pretty small.

Chicken

Chicken tenderloins are skinny pieces of chicken that are known to be very tender. Hence the name. I use these because they do not require as much cutting, since they are already skinny. However, you can opt to use a different cut of chicken or a different type of meat.

Garlic

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Seasonings

I keep it simple for this chicken, broccoli and potatoes casserole recipe with items you probably have in your cabinet.

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasonings
  • 1 teaspoon basil dried
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Make this one pan roasted chicken and potatoes recipe spicier by adding ground red pepper and chili powder. You can also keep it more Italian style and leave it the way I had it, I am not a huge spicy fan.

Olive Oil

This is just to coat everything in to keep it from sticking to the pan and to keep the seasonings sticking onto the items.

I cook everything, at the same time, in one sheet pan. Which is why this recipe is called the one pan roasted chicken and potatoes recipe. The cleanup is VERY minimal which makes for a perfect weeknight meal. I even line my baking tray with aluminum foil to just toss and go.

You really need to chop up the potatoes VERY small since they take a long time to cook. I like my potatoes really well done, so I chop them up really small. The smaller they are, the faster they cook, and vice-versa.

The same goes for the broccoli, if you like more well done broccoli, make the pieces smaller. If you like crunchier broccoli, make the pieces bigger.

Make sure to keep the chicken pieces larger as they cook the quickest. You want to make sure the chicken is completely cooked, but not overcooked.

I used fat-free cheese for this. Sometimes it can be more difficult to find, or sometimes you may just not want fat-free. But, you can substitute any cheese you would like or have on hand.

Chicken and broccoli casserole

Step by Step Instructions for Chicken, broccoli and potatoes casserole recipe

Preheat oven to 400 degrees. Line a baking tray with aluminum foil (for easy cleanup) and grease with cooking spray.

Chop up potatoes, broccoli, and chicken. Then, dice the shallot. The potatoes should be very small. The chicken should have the biggest pieces about an inch or so by an inch or so. 

You really need to chop up the potatoes small since they take a long time to cook. I like my potatoes really well done, so I chop them up REALLY small. The smaller they are, the faster they cook, and vice-versa.

However, you can also bake the potatoes for about 10 to 15 minutes ahead of time, if you wish for them to be larger in size.

Add cut chicken, potatoes, and broccoli, diced shallots and minced garlic to a sheet pan. Drizzle with oil and toss to coat. Sprinkle with the seasonings and toss to evenly coat. 

Bake for 15 minutes. 

Remove sheet pan from oven and flip over the ingredients, tossing to mix up. Sprinkle the cheese over everything. But, if you like the cheesy to be extra crispy, you can put it on top from the beginning.

Place the sheet pan back in oven until chicken is fully cooked and potatoes are soft. About another 15 minutes.

  • 1 head broccoli

  • 1 teaspoon basil dried
  • ½ teaspoon salt

  • ½ cup fat free cheddar cheese shredded

Instructions
