Air fryer easy enchiladas. I have been keeping this recipe in my vault for months. Mostly because the photo came out horribly and the tortillas cracked a bit. This was one of the best meals I have had in a long time so I thought I would just post it! Sometimes things do not look as good or work out as perfectly as I may think. But these tasted AMAZING and were so fun to make.

For the chicken, I grabbed a rotisserie chicken and shredded up all the white meat, without the skin or fat. This made the recipe very easy. You can also cook your own chicken or use any other type of shredded chicken. You can use any taco sauce you prefer as well.
As mentioned, these did break apart pretty easy so please be as gentle as possible. They will break but they will taste amazing.
Air Fryer Easy Enchiladas

- 2 cups shredded chicken
- ¼ cup Taco Bell sauce
- ¼ cup salsa con queso
- 8 street corn tortillas
Instructions
- In a bowl, combine shredded chicken, Taco Bell sauce and salsa con queso.
- Evenly divide the chicken mixture into the tortillas, placing the chicken in the middle area of the tortilla, in a long thin strip.
- Roll up the tortillas tightly. Then place in a greased air fryer.
- Spray with cooking spray and air fry at 400 degrees for 10 minutes.
