Who doesn't love a good one pan me!? Especially when it is this easy to throw together, contains tons of veggies and is seriously so delicious! That is why I love making my sheet pan chicken caprese. Is the balsamic glaze for the caprese chicken your favorite, because it is mine! So tasty, so delicious and so EASY!

What You Need to Make Sheet Pan Caprese Chicken
Make this dish in your oven with no fancy tools required. As mentioned, make this chicken caprese on a single sheet pan with nothing else required. However, you can make it in a casserole dish or in a shallow, oven safe, pot.

Chicken
For my sheet pan chicken caprese recipe, I use very thin chicken cutlets. I buy them from the store, already very thin. I think that having a very thin chicken is key here as you do not want to over bake and burn the cheese. You can thinly slice your own chicken, or use another cut of chicken. Just be mindful of the cheese or put it in a little later in the cooking process.
Seasonings
I use the classic Italian seasonings for this dish such as Italian seasonings, basil, garlic powder, onion powder, salt. You know the drill. Season with your favorite seasonings and add some spice if you love a spicy meal. Crushed red pepper would be amazing with this if you love some spice.
Spinach
You will want to use fresh spinach for this recipe as frozen spinach will be too watery and ruin the dish. In addition, add any of your favorite greens to the spinach. I love adding some arugula to the dish.
Basil
Use fresh basil if you can, I love how it really elevates the flavor and makes it feel so fancy. However, if you kill any basil plant like I do, you can use the dried kind, just like I do. Welcome!
Tomatoes
A classic chicken caprese has tomatoes and my sheet pan version is no different. Any type of tomatoes will work well here. Pick your favorite tomato; however, I just prefer the tiny ones. I get some sweet cherry tomatoes from Publix and they are amazing in this dish as I like a little sweetness to mine.
Mozzarella
I use just your normal sliced mozzarella. In fact, I even bought it pre-sliced for an easier dish. However, you can use shredded mozzarella or any other cheese that you prefer. Substitute with a fat-free or reduced fat mozzarella as well.
Balsamic Glaze
Balsamic glaze on this chicken caprese is the best thing ever!! I absolutely love it; however, you can skip it or use something else. But, it is so much better with it on top!
How to Make Sheet Pan Chicken Caprese
Preheat your oven to 350 degrees. Line a baking tray with foil and spray with cooking spray, it is easier for clean up. If the sheet pan is quite large, use the foil to create a smaller working space by folding up the edges.
Season both sides the chicken cutlets with the seasonings. Slice the tomatoes and mozzarella cheese into thin slices, then, set aside.
On the sheet pan, add the spinach. You want to make the spinach just about the same size as the chicken. Layer the chicken on top of the spinach, trying not to overlap the pieces too much.
Layer the chicken with the tomatoes, then the basil, and finally, the mozzarella slices. Drizzle the balsamic glaze on top.
Place in the oven for about 30 minutes, until the chicken is fully cooked, and the cheese is bubbly.
What I Love About This Recipe
What I love about sheet pan chicken caprese is mostly that it is so easy to make and only requires me to clean on pan. Well, really none if you line with aluminum foil. But, also, what I love about this dish is that it is so easy to make one serving or 20! This dish goes great with so many different sides and veggies, the combinations are endless. Plus, this really allows you to get in so many vegetables in such a yummy way.

- 1 tablespoon Italian seasonings
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 2 cups baby spinach fresh
- ½ pint cherry tomatoes
- 4 ounces mozzarella cheese
- 1 tablespoon basil dried
- 2 tablespoons balsamic glaze
Instructions
