Ingredients

  • 5 pork chops lean, thin, about 3 ounces each
  • 1 teaspoon garlic salt
  • 3 tablespoons brown sugar replacement
  • 6 cloves minced garlic
  • 1 cup chicken broth no sodium

Instructions

  • Combine all of the seasonings in a small bowl and sprinkle evenly over both sides of each pork chop, pressing the sugar in.
  • Drizzle the olive oil into the bottom of the instant pot. Set the Instant Pot to the sauté method. Add the oil and allow it to heat up.
  • Once heated, add the pork, with the garlic, and cook for about a minute or two per side. You may need to do this in batches.
  • Then, remove onto a clean plate and turn the instant pot off. I like to grab as much of the garlic as I can and add it back onto the tops of the pork.
  • Immediately pour in the chicken broth or water (to prevent the garlic from burning) and scrape up the bottom of the pot with a wooden spatula.
  • Add the pork back into the instant pot, spreading it out as much as you can.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 3 minutes and start it.
  • Once the instant pot is done cooking, let stand for 3 minutes then de-pressurize.
  • Pour some of the remaining juices and garlic back onto the pork chops when serving.
