Ingredients

Sweet Potato Casserole

  • 3 pounds sweet potatoes 5 potatoes
  • ¼ cup brown sugar replacement
  • ¼ cup milk whole
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon garlic salt
  • 2 cups mini marshmallows

Crumble Topping

  • ¼ cup butter softened
  • ¼ cup brown sugar replacement
  • ¼ cup flour
  • ½ teaspoon cinnamon
  • teaspoon salt

Instructions

  • Set butter out to soften and preheat oven to 375 degrees.
  • Wash, peel then cut potatoes into one-inch cubes.
  • Bring a pot of water, big enough for the potatoes, to a boil on the stove top. Once boiling, add in the potatoes and cook until done. It should take about 20 minutes and they should come out fork tender.
  • While potatoes are cooking, combine all of the ingredients together for the crumble in a small bowl and set aside.
  • Drain the potatoes then, add then back into the empty pot. Add the remaining ingredients for the potatoes. Continue to stir and mash the potatoes until everything is combined and creamy.
  • Grease a casserole dish. Add the potatoes to the bottom of the dish and spread to even out. Top with the marshmallows, in a single layer. Then, sprinkle in the crumble in small pieces.
  • Bake in the oven for about 30 minutes, until the marshmallows are golden. You can also broil the casserole if you like it more well done. Just keep an eye on it as it can burn quickly.
