excuse the language but... HOLY FREAKIN CRAP look at this salad!! I have not been THIS excited about a recipe in a long time... and it’s a salad!!! This is my cheeseburger salad and it’ll be the best thing you have ever made. I cannot stop craving it!! All the flavors just come together for an extremely delicious, but low point meal. You could also sub extra lean ground beef.
Cheeseburger Salad
Ingredients
Dressing
- ¼ cup plain, nonfat Greek yogurt
- 1 tablespoon mustard
- 1 tablespoon sugar free ketchup
- 1 teaspoon Splenda
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dill pickle juice from a jar of pickles
- 1 teaspoon water
- 1 pinch salt
- 1 pinch black pepper
Meat
- 4 cloves minced garlic
- 16 ounces ground chicken breast
- ¼ teaspoon salt
- 1 teaspoon minced onion
- ⅛ teaspoon dill weed
- ¼ teaspoon black pepper
Toppings
- 12 pickles
- ½ tomato cut up
- ½ red onion sliced
- ¼ cup reduced fat, 2% milk cheddar cheese
- 2 green onions sliced
- 12 ounces lettuce spring mix
Instructions
Dressing
- combine all ingredients for the dressing in a small bowl and store in the fridge to allow the flavors to form together
Meat
- heat a large greased pan over medium/high heat. Spray with cooking spray
- add minced garlic and cook for about one minute, until fragrant
- add the ground meat and break apart a bit. Season with the seasonings and continue to break apart and mix together while cooking
- completely cook the chicken and set aside
- (makes about 2 cups of ground meat, about ½ cup per serving)
Toppings
- be sure the tomatoes and onions are chopped up. I even like to chop up my lettuce
- divide everything evenly into four bowls and top evenly with the meat and dressing
