Light Vodka Sauce

Fun fact: my family is OBSESSED with penne alla vodka. But that can get very very high in points. So, as I usually do, I said, why don’t I put my Allie Carte spin on it and make something extremely delicious that’s low in points! How good does this super creamy, tasteful sauce look! We paired it with sausage because that goes perfectly with this dish! Give it a shot!

Light Vodka Sauce

does not include pasta; best served with 6 ounces penne (measured dry); and of course some sausage

Ingredients
 

  • 1 teaspoon olive oil
  • 1/8 cup diced white onion
  • 4 cloves minced garlic
  • 1 can diced tomates 14.5 ounces
  • 1/8 cup plain, unsweetened almond milk
  • 1 ounce 1/3 less fat cream cheese
  • 1 tablespoon reduced fat parmesan cheese
  • 1/4 teaspoon parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon ground red pepper

Instructions

  • blend tomatoes until smooth then set aside
  • heat olive oil in a medium-sized pan over medium heat
  • once heated, add garlic and saute for 30 seconds. Add diced onion and saute for another 2-3 minutes, until soft
  • pour blended tomatoes into the pan with the garlic and onion and bring to a slight boil. Add seasonings and stir together. Simmer for 10 minutes
  • Add parmesan cheese and cream cheese and stir togther until melted. Simmer for another 2-3 minutes to allow the flavors to form together

  1. This sauce is the bomb. So yummy! I added a handful of fresh cherry tomatoes into the blender when I blended my diced tomatoes because I had a bunch and wanted to use them up. My five year old is chowing this down and he’s super picky! Another winner!!
