Egg-Roll in a Bowl

Takeout Tuesday never ends on Allie Carte! This recipe is all over the internet but I put my little spin on it and I was highly impressed! I also added a slightly spicy sauce drizzle to the top that really made the meal!! It was the perfect meal prep for the week πŸ˜‹


Egg-Roll in a Bowl

Ingredients
 

  • 1 teaspoon sesame oil
  • 4 cloves minced garlic
  • 3 green onions sliced
  • 1/4 red onion diced
  • 1 pound ground chicken breast
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon sweet chili sauce G Hughes
  • 1/4 cup soy sauce low sodium
  • 12 ounces coleslaw package about 3 cups

Sauce

  • 1/8 cup plain, nonfat Greek yogurt
  • 1/2 tablespoon Sriracha sauce
  • 1/2 tablespoon sweet chili sauce G Hughes

Instructions

  • heat sesame oil in a large pan over medium/high heat
  • add minced garlic and cook for about one minute, until fragrant
  • add sliced green onions and diced red onion and cook for about 3-4 minutes, until slightly soft
  • add the ground chicken and begin to break up while cooking. Add the seasonings and continue to break up and mix while cooking
  • once almost cooked (once almost all the pink is gone), add the sriracha, sweet chili and soy sauce and bring to a slight simmer while the chicken finishes cooking
  • once chicken is completely cooked, add the coleslaw package and mix together
  • bring the heat down to medium/low and cook for another 5 minutes, for coleslaw to soften
  • meanwhile, add all the sauce ingredients together and drizzle evenly over each serving

  1. So yummy! I didn’t have the ginger but it was still great. I made it with rice but would be great on its own. My husband has already requested this again!
