Therefore, I am introducing you to FRENCH ONION CHICKEN MEATBALLS! Everything you love about the classic, in cute little meatball form!

French Onion Chicken Meatballs
makes 12 meatballs; 3 meatballs per serving
Ingredients
Chicken Meatball Ingredients
- 16 ounces ground chicken breast
- 1 tablespoon panko breadcrumbs
- 1 teaspoon oregano
- 1 teaspoon Italian seasonings
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
Sauce Ingredients
- 1 teaspoon light margarine ICBINB
- ½ sweet white onion sliced
- 2 cloves garlic minced
- 2 tablespoons brown sugar replacement (Swerve brand)
- ¼ cup chicken broth fat-free
- ⅛ teaspoon salt and pepper
- ⅓ cup reduced fat, part skim shredded mozzarella cheese
Instructions
- Preheat oven to 450 degrees
- Combine all chicken ingredients in a bowl and mix together well. Divide into 12 equal-sized pieces. Roll each piece into a ball and place on a greased baking tray
- Bake for 15-17 minutes, until fully cooked
- Meanwhile, melt margarine in a small pan. Add sliced onion and cook until starting to soften, about 5-7 minutes
- Add garlic and cook for another minute, until fragrant. Add the sugar, broth and salt/pepper, stirring to melt the sugar. Bring to a slight boil and simmer until thickened
- Once meatballs are cooked, remove from the oven and add to the pan with the sauce, tossing to coat
- Top with the cheese and broil until cheese is melted
