My French onion chicken is still one of my favorite dishes to make. It’s such an easy recipe but it really packs a punch! The tastes and textures just come together perfectly (I’m getting hungry again just thinking about it!!) It’s truly a great meal that the whole family can enjoy. I pair it with some extra long grain rice (for additional points) and some veggies.

French Onion Chicken
Ingredients
- 4 ounces chicken cutlet one piece
- ⅓ white onion sliced
- 1 teaspoon brown sugar replacement Swerve
- 2 tablespoons chicken broth fat-free, low sodium
- ⅛ cup reduced fat, part skim shredded mozzarella cheese
- 1 pinch salt
- 1 pinch black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Spray a small pan with cooking spray and heat up on the stove over medium/low heat
- Add sliced onion and cook until lightly browned and soft (5 to 8 minutes)
- Add sugar, stir until softened
- Stir in stock, cooking until sauce has a jam like consistency (add a splash of water if too dry)
- Transfer onion mixture to a plate
- Season chicken with the seasonings then cook throughly in the leftover sauce on the pan. About 5 minutes per side
- Once chicken is cooked, top with onion mix and cheese
- Cover until cheese is melted (2 minutes)
