Chicken roll-ups are a classic dish of mine! Easy to make and full of flavor and protein. I made these RICOTTA BACON STUFFED CHICKEN roll-ups and the flavor profile was AMAZING. The ricotta and bacon come together so well to create a spectacular dish.

Ricotta Bacon Stuffed Chicken
Ingredients
- 16 ounces chicken cutlets 4 pieces
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon Italian seasonings
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ½ cup part skim milk ricotta cheese
- ½ cup reduced fat, part skim shredded mozzarella cheese
- 8 slices fully cooked bacon Oscar Mayer
Instructions
- Preheat oven to 450 degrees
- Pound of chicken cutlets with the back of a spoon or roll them out until thin
- Season both sides of each chicken cutlet evenly with the seasonings
- Spread ⅛ cup of ricotta cheese on each chicken cutlet. Top each with two slices of bacon and 1 tablespoon of shredded cheese
- Roll the chicken cutlets up and place on a greased baking tray with the end down so it stays together
- Add 1 tablespoon of shredded cheese on top of each piece of chicken
- Bake for 15 minutes or until completely cooked
