Ricotta Bacon Stuffed Chicken

Chicken roll-ups are a classic dish of mine! Easy to make and full of flavor and protein. I made these RICOTTA BACON STUFFED CHICKEN roll-ups and the flavor profile was AMAZING. The ricotta and bacon come together so well to create a spectacular dish.

  • 16 ounces chicken cutlets 4 pieces
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon Italian seasonings
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup part skim milk ricotta cheese
  • 1/2 cup reduced fat, part skim shredded mozzarella cheese
  • 8 slices fully cooked bacon Oscar Mayer


  • Preheat oven to 450 degrees
  • Pound of chicken cutlets with the back of a spoon or roll them out until thin
  • Season both sides of each chicken cutlet evenly with the seasonings
  • Spread 1/8 cup of ricotta cheese on each chicken cutlet. Top each with two slices of bacon and 1 tablespoon of shredded cheese
  • Roll the chicken cutlets up and place on a greased baking tray with the end down so it stays together
  • Add 1 tablespoon of shredded cheese on top of each piece of chicken
  • Bake for 15 minutes or until completely cooked
