Shredded Taco Chicken with Rice and Carrots

This weeks meal prep was some shredded taco chicken, minus the taco. I served that with some rice and carrots instead. This delicious shredded chicken taco meal is exactly what I needed!!! I added all my ingredients to the pressure cooker and I cannot even describe how amazing the smell was! Then the taste was better than I could have ever imagined, better than any restaurant dish you have tried! Super easy and delicious, a must try!!

Then I made some of my candied carrot chips to go along with it. I wanted something sweet this week on the side and that is why I picked this recipe. These carrots are so addicting and amazing, perfect to each each day as a meal prep. I doubled this recipe to serve 4.

Finally, I served that with some rice that I made in the instapot. Rice made in the Instapot is superior to any other rice. It is SO easy and turns out perfect. Plus, you do not have to sit there babysitting it so it does not boil over.

I used Publix extra long grain rice

Just add 1 cup of rice and 1.25 cups of water to the bottom of the Instapot. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it. Once done, let it set for 5 minutes, then depressurize.
