General Tso Chicken

General Two Chicken is probably one of my most popular recipes. There’s no excuse to get takeout when we have AMAZING dishes like this one! I have been making this dish SO SO much recently and I don’t care! It’s insanely delicious, low on points and tastes just like the real thing! And don’t worry, I always build in some extra sauce if you want to serve it over rice or veggies.

Chicken Ingredients

  • 8 ounces chicken tenderloins about 5-6 pieces
  • 2 egg whites egg beaters
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon black pepper

Sauce Ingredients

  • 1/4 cup chicken broth fat-free
  • 3 tablespoon sugar free BBQ sauce G Hughes
  • 1 tablespoon rice vinegar
  • 1/8 cup soy sauce low sodium
  • 2 tablespoons brown sugar replacement Swerve
  • 1/2 teaspoon cornstarch

  • cut chicken tenderloins into bite sized pieces
  • in a small bowl, combine the flour and seasonings, mixing well. In another small bowl, pour your egg whites (can use whisked eggs, I just do not prefer the egg yolks)
  • preheat air fryer to 400 degrees, spray with cooking spray
  • take one chicken piece and dip into the egg whites, then into the flour mixture, completely coating it. Set aside on a clean plate and repeat for each chicken piece
  • place all the chicken in the air fryer and air fry for 1 minute. Spray chicken with cooking spray then air fry for another 3 minutes. Flip chicken and spray again. Air fry for another 4-6 minutes, until fully cooked
  • OVEN: or bake in the oven at 400 degrees for about 10 minutes, until fully cooked. Spray with cooking spray and flip over halfway through

  • meanwhile, heat a small pan over low/medium heat
  • add the chicken broth, BBQ sauce, rice vinegar and soy sauce into the pan, stirring together
  • bring to a slight boil and add the sugar, stirring to dissolve
  • simmer for 5-10 minutes, until thickened
  • if sauce is too thin, combine cornstarch with 1 teaspoon of water. Slowly add mixture to sauce until desired thickness is reached
  • once chicken is cooked, add to the pan with sauce and toss to evenly coat
