Bulgogi beef has been all the rage! It is a deliciously flavorful dish that can be anywhere from sweet to spicy. I absolutely love it with ground beef and served with rice and broccoli.

I make this more of a neutral to slightly sweet dish; however, you can spice it up. I use ground beef for this recipe; however, you can also use this sauce to marinate steak strips. But, you can also substitute ground chicken to keep this leaner. Don't forget to serve your bulgogi over rice or noodles and add a vegetable.

Let's go over some suggestions and substitutions
Soy Sauce
I use a low sodium soy sauce so keep that in mind when adding your salt. However, you can use a regular soy sauce, or even a gluten free one, just make sure to be mindful of the other ingredients.
Rice Wine Vinegar
Rice wine vinegar is used in this recipe; however, you can substitute white vinegar.
Brown Sugar
I always, typically, use brown sugar replacement and bulgogi ground beef is no exception. It is easy grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.
Honey can be common in a bulgogi recipe and you can also substitute that for the brown sugar.
Sesame Oil
Just your typical sesame oil. However, if you are trying to cut back some oil, you can skip this ingredient.
Garlic and Ginger
You can used minced garlic and ginger but you can also use the powder/ground version if you do not have the other.
Onion
I prefer a white or sweet onion in this recipe. Use a sweet onion if you want to keep things sweeter or just the white onion for a neutral flavor.
Ground Beef
I use ground beef for this bulgogi recipe; however, you can also use this sauce to marinate steak strips. But, you can also substitute ground chicken to keep this leaner.
I like to get as lean as a meat as possible. I typically do a 96% fat-free ground beef; however, you can also do any percentage that you like.
Corn Starch
The corn starch is used if you need to thicken up the sauce. You will combine the corn starch with water to make a slurry and slowly stir that into the dish once done. But, if the sauce if thick enough for you, you can skip the slurry.
Making This Spicier
If you want to make this bulgogi ground beef dish spicy, add some chili flakes into the seasonings. You can also reduce the amount of brown sugar if you do not want it to be that sweet.
How to Make Bulgogi Ground Beef
Start by mixing all the ingredients for the bulgogi sauce together in a small bowl and set that aside.
Dice the onion.
Heat a medium sized pan over medium high heat. Grease with cooking spray.
Once heated, add the onion and let that cook for 2-3 minutes. Add the ground beef and start breaking that up, a meat chopper works great for this. Sprinkle with all the seasonings and continue to break up while cooking.
Once fully cooked, add the bulgogi sauce in and bring to a simmer. Simmer for 5 minutes to allow the sauce to thicken and the flavors form together.
If needed, combine the corn starch with water and slowly stir into the mixture until desired thickness is reached.

- ¼ cup soy sauce
- 3 tablespoons brown sugar replacement
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon garlic powder
- ½ teaspoon ginger ground
Ground Beef
- 3 tablespoons diced white onion
- 1 pound extra lean ground beef 96%
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon seasoned salt
- ½ teaspoon ginger ground
- ½ teaspoon paprika
Slurry
- 1 teaspoon cornstarch
- 1 teaspoon water
