Buffalo Chicken Meatballs

Since sports are back in full swing, I thought I would make a perfect game-day appetizer for you all to enjoy! The flavor in these is incredible and everyone enjoys eating them! I love topping it off with my zero-point healthy homemade ranch and green onion. You can also drizzle some extra wing sauce over them for some super spice!

Buffalo Chicken Meatballs

makes 16 meatballs; 4 meatballs per serving

Ingredients
 

  • 1 pound ground chicken breast
  • 1/8 cup panko breadcrumbs
  • 1/8 cup egg beaters 1 egg
  • 1 tablespoon Ranch seasoning dry mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 cup wing sauce Frank's RedHot

Instructions

  • preheat oven to 400 degrees
  • in a large bowl, combine ground chicken, panko and egg
  • add seasonings and wing sauce and mix to compltely combine
  • grease a baking tray with cooking tray and scoop out 16 equal sized mounds onto it
  • spray them with cooking spray (it makes them easier to work with) then roll into balls
  • bake for 18-20 minutes, until fully cooked, flipping halfway
  • drizzle with more wing sauce for a spicy meal
