my low calorie, reduced fat pesto sauce
My mom and I came up with this recipe when we first started doing Weight Watchers. Pesto Sauce was always a staple in our home but, as you know, it is not very healthy. So, we decided to lighten it up!
My mom always has fresh basil in her garden so we experimented until we found the perfect recipe. I use this for a ton of different dishes. It is great on pasta, on mac and cheese, to dip veggies or bread.
- Basil
- Chicken broth, fat-free
- Garlic, minced
- Lemon juice
- Salt
- Garlic powder
- Onion powder
- Oregano
- Black pepper
All you have to do it add all ingredients to a blender and blend until smooth.
What You Need for This Chicken
All you need is pesto and a chicken breast! You can use my low calorie, reduced fat pesto recipe or buy a jarred version (this is my favorite) of your favorite pesto. You will need 5 tablespoons on pesto, or almost a ⅓ cup.
Then, grab your favorite cut of chicken. I use chicken cutlets as they are thin and the perfect size for this recipe. However, if you use a different cut of chicken, you may need to adjust cooking times.
I also love drizzling some balsamic vinegar over the chicken; however, it is not necessary.
My favorite thing to pair this pesto chicken with is some tomato and feta pasta! You know, the TikTok trend. It makes a caprese dish!
How to Make Pesto Chicken
Start by preheating the oven to 400 degrees and lining a baking tray with cooking spray.
Spread the pesto sauce on all sides of the chicken breast cutlets, about 1 tablespoon for each piece.
Place on the greased baking tray. Bake for 15-16 minutes, flipping halfway. Be sure the chicken is fully cooked before removing it from the oven.
I also love drizzling some balsamic vinegar over the chicken; however, it is not necessary.
Pair this with the TikTok feta tomato pasta for a caprese dish. You can grab the full recipe here. But, basically all you do is add feta and tomatoes to a casserole dish. Bake that in the oven at 425 degrees, until the tomatoes are soft and the cheese is melt-y. Mush everything together and add in some cooked pasta!
Try grilling or air frying the chicken as well.
