Mini Fried Quesadillas

My mini fried quesadillas will take your taco night to a whole new level! The delicious fried quesadilla, dipped into my absolutely amazing cream: can you say game-changer. My mouth is watering just thinking about it! These are absolutely adorable and very kid friendly. They make a great appetizer for family gatherings or game days as well. You can top them off with some jalapeños to make them spicier and I always suggest a squeeze of lime juice or fresh cilantro.

Mini Fried Quesadillas

this dish makes 18 quesadillas, for 3 quesadillas per serving

Ingredients
 

Quesadillas

  • 1 pound 99% fat free ground turkey breast (can sub ground chicken breast)
  • 2 teaspoons low sodium taco seasonings
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons taco sauce (Taco Bell brand)
  • 1 cup reduced fat, 2% milk cheddar cheese shredded
  • 18 shells missions corn tortillas small
  • 18 sprays butter spray ICBINB

Crema

  • ½ cup plain, nonfat Greek yogurt
  • ¼ cup zero point salsa
  • 1 teaspoon low sodium taco seasoning

Instructions

Quesadillas

  • Heat a medium greased pan over medium heat. Add turkey, breaking up while cooking. Add in the taco seasonings, salt, pepper, garlic powder and onion powder
  • Once almost cooked, add Taco Bell sauce. Cook competely then set aside
  • Lay out your tortillas and spray each with a spray of butter spray. Evenly place turkey mixture onto one half of each tortilla. Sprinkle cheese evenly onto the turkey of each tortilla
  • Once ready to cook, fold tortilla in half and lightly press down. (If cooking the tortillas in batches, do not fold tortilas over until ready to cook as they will break)
  • Heat air fryer up to 300 degrees. Place folded tortillas in the air fryer then spray them with cooking spray. Cook for 2 minutes
  • Flip quesadillas, spray with cooking spray again, then cook another 4 minutes
  • Flip quesadillas again, then cook for 3-5 minutes, depending on how crispy you want them. Do not over cook as they get a bit crisper once removed from the air fryer

Crema

  • Combine all ingredients in a small bowl and stir together. Store in the fridge while cooking the quesadillas to allow the flavors to form together.

Zero Point Marinara

This is the best low calorie recipe for a weight watchers zero point tomato or marinara sauce, perfect to add to any of your dishes.

One of my most useful dishes is my homemade tomato sauce. It's an amazing replacement for sauce on pizza, in pasta or as a dipping sauce! Why do I love it so much? It tastes fantastic and is zero points. It's the best way to reduce your daily points while still enjoying all the foods you love.

This is the best low calorie recipe for a weight watchers zero point tomato or marinara sauce, perfect to add to any of your dishes.

What You Need for a Zero Point Marinara

You basically just need garlic, a can of tomatoes, seasonings and a couple secret weapons.

Crushed Tomatoes

You can certainly use fresh tomatoes; however, I do not have time for that and I am sure you do not either. I use a can of crushed tomatoes as they are ready to go in my sauce. My favorite brand is Muir Glen no salt added. However, you can use any brand you would like.

If you are using diced tomatoes or actual real tomatoes, you will need to blend them if you want a smoother sauce. However, you can also keep the diced tomatoes and do a chunkier sauce.

Seasonings for a Zero Point Marinara

Some people say this seems like a lot of seasonings but who doesn't want a well seasoned dish? I use your classic Italian seasonings, plus, some secret weapons.

  • oregano
  • Italian seasonings
  • garlic powder
  • onion powder
  • salt
  • black pepper

You are more than welcome to switch up the seasonings or add some in, such as ground red pepper to make it spicy.

Plus, my secret weapons!
  • granular sugar replacement
  • lemon juice

Yes, sugar is definitely needed in this and I use a sugar replacement. I prefer something like Splenda or Swerve; however, you can use whatever you like. The sugar cuts the acidity of the tomatoes and you definitely need it.

Lemon juice brings out the flavor of the tomato sauce, just like salt does; however, lemon juice does not have the acidity of salt.

How to Make a Zero Point Marinara Sauce:

Heat a pot over low heat. Once heated, spray with cooking spray and add garlic. Cook for 1-2 minutes, until fragrant. However, you can also add some finely diced onion in here too!

Add tomatoes and the remaining ingredients to the pot and stir to combine. Bring to a slight boil and allow the sauce to simmer fo 30-45 minutes, stirring occasionally. However, if you are low on time, you can just bring to a boil then remove from the heat and use the sauce.

Tips and Tricks for Zero Point Marinara:
  • To make the sauce thinner, add water. I usually start with a ¼ cup and go from there. However, you can also use pasta water!
  • To make the sauce thicker, combine 1 tablespoon of cornstarch with 1 tablespoon of water. Slowly stir into the sauce until desired thickness is reached.
  • Makes about four, half cup servings
  • If you love this, you have to try out my sausage bolognese.

Copycat Chick-fil-A Nuggets

Chick-fil-A at home anytime you want? Yes, PLEASE!

Of course I could eat some Chick-fil-A nuggets everyday but going to the drive-thru that much just is not realistic. That is where I decided to make a copycat version! I also recreated the classic sauce and you will not believe how much it tastes like the real thing. Oh, and it's zero points.

Equipment

  • Air Fryer

Ingredients
 

  • 8 ounces chicken cutlets (sub breasts)
  • ½ cup plain, unsweetened almond milk
  • ½ cup dill pickle juice from a jar of pickles
  • ¼ cup panko breadcrumbs
  • ¼ cup flour
  • ½ tablespoon confectioners sugar replacement (Swerve)
  • 1 eggs worth of egg beaters ⅛ cup
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

Marinate

  • Cut chicken up into bite sized pieces. Fork a few times with a fork or knife to allow the marinade to penetrate the chicken.
  • In a large bowl, combine pickle juice and milk. Add cut up chicken, cover and allow to marinate in fridge for at least 30 minutes or up to all day (8 hours)

Cook

  • Meanwhile, grab three small, shallow bowls.
  • In one bowl, add half the flour (⅛ cup), in another bowl, pour out the eggs, in the final bowl, add the remaining flour, breadcrumbs, seasonings and sugar (stirring to combine).
  • Remove chicken from fridge. Drain the liquids and pat the chicken pieces dry with a paper towel, as best as you can.
  • Add a piece to the bowl of flour and toss to coat. Add to the egg mixture and toss to coat. Add to the breadcrumb mixture and toss to coat.
  • Place chicken in a greased air fryer.
  • Repeat this step for each piece of chicken, being sure not to let them touch in the air fryer, you may need more than one batch depending on how big your air fryer is.
  • Air fry at 400 degrees for 1 minute then spray the chicken with cooking spray. Air fry for another 3 minutes. Shake/flip the chicken then spray with cooking spray again. Air fry for another 4 minutes, or until fully cooked.

Optional Oven Version

  • (Or bake at 450 degrees for 8-10 minutes, flipping and spraying with cooking spray halfway)

Copycat Chick-fil-A Sauce

You know it, you love it, but it's WAY too high in points and calories. That's okay though, because I have a recipe to recreate it for zero points! And yes, it really does taste like the real thing.

I'll link my other copycat Chick-fil-A dishes under the recipe!

  • ⅛ cup plain, nonfat Greek yogurt
  • 1.5 tablespoons honey dijon (Skinny Girl brand)
  • 1.5 tablespoons sugar free BBQ sauce (G Hughes brand)
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice
  • pinch salt

Instructions

  • Combine all ingredients in a small bowl and stir together
  • Store in the fridge for at least 10-15 minutes to allow the flavors to form together.

Sweet Asian Taco Meat

This meat has been my absolute favorite thing to make lately! I usually make the chicken version but it is amazing with extra lean ground beef too. The meat is three WW points per serving and that recipe link is below and in my bio. I served it in three Mission corn tortillas (1 point each) and then added a sprinkle of fat free cheese, cilantro and a squeeze of lime juice! Jalapeños can be added for a spicer dish.

Ingredients
 

  • 1 teaspoon sesame oil
  • 4 green onions
  • 4 clove garlic minced
  • 1 pound 96% lean ground beef
  • 2 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoon Splenda 9 packets
  • 1 teaspoon Sriracha sauce
  • ½ teaspoon paprika (use ground red pepper to make it spicier)
  • ⅛ cup soy sauce low sodium

Instructions

  • Heat sesame oil up in a large pan. Slice green onions and add to the pan with the minced garlic. Cook for about 2-3 minutes, until garlic is starting to brown. Add the ground meat and break up a bit while cooking. Once broken up, add the garlic powder, paprika and salt/pepper. Cook completely then drain slightly. Once cooked, reduce the heat and add the remaining ingredients and stir together. Boil for about 2-3 minutes to allow to flavors to absorb into the beef.
