Healthy Tomato Soup

HAPPY FALL!

Let's preface this by saying I have NEVER found a soup I liked until now. I worked HARD on this recipe because I have really been craving some fall soups. I am not even kidding when I say I eat this for breakfast, lunch, dinner, dessert. It's that amazing. If you know me, you're probably so sick of me talking about how obsessed I am with my soup (haha). Seriously, this is the ULTIMATE fall soup and you need it in your life right now!


I like my soup pretty thick. If you like it thinner, you can always add more broth.

About half cup servings

Works amazing as a pasta sauce too! Has some penne alla vodka vibes.

Ingredients
 

  • ⅛ cup light margarine ICBINB
  • 4 cloves garlic minced
  • ¼ onion chopped
  • 14.5 ounces diced tomates 1 can
  • ⅓ cup chicken broth fat free
  • 2 teaspoons granular sugar replacement Lanakto or Swerve
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 ounces ⅓ less fat cream cheese
  • 1 tablespoon plain, unsweetened almond milk

Instructions

  • add margarine to a medium pot over medium/high heat and melt
  • add minced garlic and diced onion and cook until soft, about 5 minutes
  • add the can of tomatoes, with the juice, along with the chicken broth, sugar, salt and pepper (use veggie broth to make this dish vegetarian friendly)
  • mix everything together and bring to a boil then reduce the heat to low/medium
  • cover and simmer for 30 minutes, stirring every 5 minutes
  • after the 30 minutes, transfer to a blender (or use an immersion blender) and blend until smooth. It is best to use a blender that has a removable opening. Be sure to blend slowly at first and remove the lid every few seconds or the blender will explode
  • place cream cheese in the pot and begin melting it. Add the almond milk to help the cream cheese to completely melt
  • add the blended tomatoes back in and bring everything to a slight boil again for 2-3 minutes to allow the flavors to form together

September 21, 2020 Breakfast

Donuts

Serious question: are donuts considered a breakfast food or dessert. I am ALL about eating these for breakfast, especially since they are only TWO POINTS each. If anyone said you can’t have donuts on WW, they are SO WRONG! I always top them off with my zero point glazing and make a delicious and filling TWO POINT dessert.  You can add cocoa powder, pumpkin spice or apple pie spice in the mix for a flavored donut too. These donuts are one of my most recreated dishes and you all have absolutely loved them.

Donut Ingredients

  • ½ cup self-rising flour
  • ½ cup plain, nonfat Greek yogurt
  • 1.5 tablespoon granular sugar replacement (Swerve or Monkfruit)

Glazing Ingredients

  • 10 teaspoons confectioners sugar replacement (Swerve brand)
  • 1 tablespoon plain, unsweetened almond milk

Instructions

Donuts

  • Preheat oven to 425 degrees
  • Place yogurt and flour in a large bowl. Use a spoon to mix it all together. Once all the flour is sticking to the yogurt, dump out on a clean surface. Knead together for about 3-5 minutes until dough like
  • Split dough into thirds and place each piece in one donut hole of a greased donut tray
  • Bake for 12 minutes, until starting to brown

Glazing

  • Combine ingredients for glazing together in a small bowl. Pour glazing over donuts after removing them from the oven if you want the glazing to melt into the donuts. Or, allow donuts to cool and spoon glazing over the donuts if you want the glazing to sit on top (my preference)

  • 1 sweet red apple
  • ½ teaspoon cinnamon
  • 1 teaspoon brown sugar replacement (Swerve brand)

Instructions

  • Preheat oven to 400 degrees. Grease a baking tray with cooking spray
  • Slice apple very thin, about ⅛ inch thick. Place apples on the greased baking tray and then spray them with cooking spray
  • Sprinkle evenly with half of the cinnamon sugar mixture. Flip apples over then spray again with cooking spray and sprinkle the other side with cinnamon and sugar
  • Bake for 30-35 minutes, (flipping every ten minutes) until almost dry and edges are curled - Do not over cook!! Apples will burn easily!!

Carrot Bacon

HELLO CARROT BACON! Okay everyone stop what you are doing and make this!! Carrot bacon has been a huge trend lately but I think I completely nailed it!! This is the perfect way to get your veggies in. And honestly, doesn’t carrot bacon just sound SO good?? I use a mandoline to cut up the carrots which makes it really easy! Carrot bacon is amazing as leftovers too. And of course I have a recipe for the best dipping sauce to go with the carrots!

Carrot Bacon Ingredients

  • 3 whole california carrots large
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon light olive oil
  • 1 teaspoon brown sugar replacement (Swerve brand)
  • 1/16 teaspoon salt
  • 1/16 teaspoon garlic powder
  • 1/16 teaspoon paprika

Sauce Ingredients

  • ⅛ cup plain, nonfat Greek yogurt
  • ⅛ teaspoon dill weed
  • ⅛ teaspoon lemon juice
  • 1/16 teaspoon salt
  • 1/16 teaspoon garlic powder

Instructions

  • wash, peel and chop the ends off all of the carrots. Slice each of the carrots up completely with a peeler or mandolin. The strips should be about an ⅛ inch thick for them to not burn
  • add the remaining carrot bacon ingredients to a large bowl and stir together to dissolve the sugar. Add in peeled carrots and toss to evenly coat. Do not throw out remaining sauce, if any
  • place carrots in a greased air fryer and bake at 325 degrees for 10 minutes. Place carrots back into the bowl and coat with the remaining sauce. Air fry again, at 400 degrees for 5 minutes
  • while the carrots cook, combine all the ingredients for the sauce in a small bowl. Store in the fridge to allow the flavors to form together

Chicken Ingredients

  • 16 ounces chicken breast boneless, skinless
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¾ cup flour

Cabbage Slaw Ingredients

  • 2 cups green cabbage thinly sliced
  • ½ cup plain, nonfat Greek yogurt
  • 1 tablespoon rice vinegar
  • ½ teaspoon salt

Katsu Sauce Ingredients

  • 2 tablespoons sugar free ketchup (G Hughes brand)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon brown sugar replacement (Swerve brand)

Instructions

  • Slice chicken up into thin slices. In a bowl, stir together chicken seasonings and flour. Coat each chicken piece in the flour. Place in a greased air fryer and fry at 400 degrees for 1 minute. Spray chicken with cooking spray then fry for another 3 minutes. Flip chicken over, spray with cooking spray and cook for another 4 minutes, until fully cooked (or bake at 450 degrees for 10 minutes, flipping halfway)
  • In a large bowl, combine slaw ingredients. In another bowl, combine sauce ingredients
  • Divide ingredients up evenly into four servings

Air Fryer Orange Chicken

Making your own orange chicken at home is very simple, plus, it comes out so crispy in the air fryer and I pair it with my gluten free sauce.

Takeout is my absolute favorite cuisine (yes, it is totally a cuisine). Nothing even compares. But when your favorite dishes are a million points (not an over exaggeration), what do you do!? Well, I made my own. And lemme tell you, I haven't had takeout in years and I don't even miss it. My orange chicken is in my top two favorite recipes of mine (right behind sweet and sour). It is a fan favorite and probably better than takeout!

What You Need for Healthy Takeout Fakeout Dish!

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. If you do not have an air fryer, you can bake the orange chicken nuggets in the oven; however, it does not come out as crispy.

For the ingredients, it kind of seems like a lot of things, but it really is quite simple to make. I will give you all the tips and tricks how to make the orange chicken sauce to make this recipe a breeze.

For the battered Chicken:
  • Chicken
  • Corn starch
  • Seasonings

I typically use chicken tenderloins when I need nuggets sized chicken, but you can use other cuts of chicken. Chicken tenderloins are already thin, so minimal cutting is required, which is why I like them. However, chicken breasts or chicken thighs can work well too. But, you can use beef, pork or even tofu if you are vegetarian. Any kind of protein will work great in this recipe. Remember to cut the chicken, or your preferable substitution, in the same size, so they are all cooked simultaneously.

Corn starch is really great in this recipe, but there are other ways to coat chicken. If you have flour, that works great here as well. Alternatively, a mixture of flour and breadcrumbs can work as well. If you do not want to make battered orange chicken, you can skip coating the chicken and just cook it to your preference.

Gluten free orange chicken sauce
For the Yummy Sauce
  • Minced garlic
  • Ground or minced ginger
  • Sesame oil
  • Teriyaki sauce
  • Soy sauce
  • Water
  • White vinegar
  • An orange
  • Splenda

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion depending on how small you want the pieces.

The same thing goes for the ginger. Sometimes I just use ground ginger if I forgot to buy the actual piece of ginger.

Just your typical sesame oil. However, if you are trying to cut back some oil, you can skip this ingredient and use cooking spray.

For the teriyaki and soy sauces, this is a gluten free orange chicken sauce; therefore, I use the gluten free substitutes. I also use the low sodium version as well. However, you are welcome to use whatever kind that you like.

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use the Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

For this recipe, grab your white vinegar; however, if you have apple cider vinegar, you may substitute that.

An orange, well, is an orange! Just your normal orange. Not a clementine or anything, we just squeeze a normal orange. I have never tried this with orange juice or anything, just as a heads up.

Finally, Splenda! I love Splenda for these types of dishes. It dissolves so perfectly into the sauces. However, if you do not want to use a sugar replacement, you can try real sugar. Make sure to use something that will dissolve.

For the Slurry

What is a slurry? It is a liquid-y mixture that makes the sauce thick! It just combines corn starch with some water. Add that into the sauce, after it is made, until you reach your desired thickness.

How to Make Orange Chicken

Add sauce, slurry and coating ingredients to three separate bowls. Stir each to combine.

How to Make Battered Orange Chicken Nuggets

Preheat your air fryer to 400 degrees and grease it with cooking spray. Cut chicken tenderloins up into bite size pieces, about 1 inch by 1 inch. One by one, add chicken pieces to the cornstarch mixture and roll chicken nuggets around the corn starch until evenly coated.

Once all the chicken nuggets are coated, place in the greased air fryer and air fry for 1 minute. Spray chicken with cooking spray (this will emulate actual frying, while keeping this orange chicken healthy) then air fry for another 3 minutes. Flip/shake the chicken and spray with cooking spray again. Air fry for another 4-6 minutes, or until thoroughly cooked.

How to Make the Gluten Free Orange Chicken Sauce

Then, let's go over how to make the gluten free orange chicken sauce. As mentioned, it does seem like a lot of ingredients but I promise it is so easy to make, and most importantly, so worth it.

While the chicken cooks, heat a medium sized pan over medium heat on the stove. Spray with cooking spray then add minced garlic and ginger and cook for one minute, until fragrant.

Add the sauce and stir until it comes to a boil. Turn down the heat to low/medium and let the sauce simmer for about 5-6 minutes, until thickening. Slowly stir the slurry into the sauce until desired thickness is reached.

There will be enough sauce to have some rice, you can either make my instant pot rice or my stovetop rice.

Other Ways to Cook Orange Chicken

If you do not have an air fryer, you can bake these in the oven at 425 degrees for 10-12 minutes. Be sure to follow the same instructions for spraying and flipping the chicken.

  • 8 ounces chicken tenderloins about 6 pieces

Instructions

  • Add sauce, slurry and coating ingredients to three separate bowls. Stir each to combine
  • Cut chicken tenderloins up into bite sized pieces. Coat each piece in the coating mix and set aside.
  • Heat air fryer to 400 degrees, spray with cooking and then place coated chicken in the air fryer.
  • Air fry for one minute, remove chicken and spray with cooking spray. Cook for another three minutes. Remove chicken and flip over. Spray with cooking spay again then air fry for another 4-6 minutes, until fully cooked
  • While the chicken cooks, heat a medium sized pan over medium heat on the stove. Spray with cooking spray then add minced garlic and ginger and cook for one minute, until fragrant.

  • ½ cup extra long grain rice dry
  • 1 cup water
  • 1 teaspoon light olive oil
  • ⅛ teaspoon salt

  • once water begins to boil, stir well and bring down to low heat (about a 2 or 3)

  • 1 tablespoon panko breadcrumbs
  • 1 teaspoon oregano
  • 1 teaspoon Italian seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Sauce Ingredients

  • 1 teaspoon light margarine ICBINB
  • ½ sweet white onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons brown sugar replacement (Swerve brand)
  • ¼ cup chicken broth fat-free
  • ⅛ teaspoon salt and pepper
  • ⅓ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • Preheat oven to 450 degrees
  • Combine all chicken ingredients in a bowl and mix together well. Divide into 12 equal-sized pieces. Roll each piece into a ball and place on a greased baking tray
  • Bake for 15-17 minutes, until fully cooked
  • Meanwhile, melt margarine in a small pan. Add sliced onion and cook until starting to soften, about 5-7 minutes
  • Add garlic and cook for another minute, until fragrant. Add the sugar, broth and salt/pepper, stirring to melt the sugar. Bring to a slight boil and simmer until thickened
  • Once meatballs are cooked, remove from the oven and add to the pan with the sauce, tossing to coat
  • Top with the cheese and broil until cheese is melted

Lightened Up Pesto Sauce

My mom and I came up with this recipe when we first started doing Weight Watchers. Pesto Sauce was always a staple in our home but, as you know, it is not very healthy. So, we decided to lighten it up! My mom always has fresh basil in her garden so we experimented until we found the perfect recipe. I use this for a ton of different dishes. It is great on pasta, on mac and cheese, to dip veggies or bread into and my favorite way, drizzled over chicken with some balsamic, it's like a chicken caprese!

Hamburger Mac and Cheese

You know it, and boy do you LOVE IT, it’s my HAMBURGER MAC AND CHEESE!! This has become one of my most popular recipes and it’s clear why. It is basically a healthy version of a homemade hamburger helper recipe. You know, a Mac and cheese burger recipe. It’s packed with protein, rich, creamy and insanely delicious. Bowls, forks and pots are licked CLEAN when this is made! Worth EVERY point. (Oh, and try stopping at just one serving!) It is not your typical chicken and Mac and cheese. Obviously, that is why it is called hamburger Mac and cheese. It combines all the flavors you love about a hamburger, like ketchup, with a creamy Mac and cheese sauce. Could you think of a better combo.

If I could pick the first dish of mine for anyone to make, it would be this one. I have tons of favorite recipes of mine, sweet and sour chicken, sweet asian taco meat or a bloomin onion (click the links for those recipes), but hamburger Mac and cheese, specifically this chicken and Mac and cheese version, is the ultimate recipe. It is everything you love about not being "on a diet" while also being "on a diet", except WW is far from a diet.

Substitutions in This Hamburger Helper Recipe

I make this dish with ground chicken. That is my preference, I love chicken and Mac and cheese together. I have tried it out with ground beef, and while it is amazing, I much prefer the chicken with this recipe. But with that being said, I do lean more towards liking chicken, while the beef version is amazing, I am a chicken gal.

I also have a pretty similar recipe called pizza Mac and cheese. Similar to this one but has some more pepperoni pizza flavors in it. In addition, I have a bacon burger Mac and cheese, this one is made with beef and has bacon in it. Highly recommend that one as well. You can also try some similar Mac and cheese burger recipes such as my Big Mac and cheese, taco Mac and cheese or just my normal Mac and cheese recipe.

Here Is What You Need for a Homemade Hamburger Helper

For this hamburger helper recipe, here is what you will need. Okay, it kinda seems like there are a lot of ingredients for this dish but I promise it is not that bad and totally worth it. I like to create most of my recipes with things I (and you) would typically have in your pantry. While I obviously need to pick up some fresh chicken, you get the point.

Reduced fat cream cheese and chicken broth are staples in my pantry! Definitely stock up on those.

  • Pasta
  • Minced garlic
  • Ground chicken breast
  • Onion
  • Tomato sauce
  • Chicken broth
  • Sugar-free ketchup
  • ⅓ less fat cream cheese
  • Shredded cheddar cheese
  • Seasonings

Ingredient Suggestions

For the pasta, I use elbow shaped noodles. You can use any shape but I like the elbow, it gives a classic Mac and cheese look. There are many times when I randomly crave this homemade hamburger helper style mean and grab any pasta I have in the cabinet. It all tastes the same, here's a rotini version. The elbows look better, and more like Mac and cheese, but it really does not matter.

I use ground chicken breast because it is essentially fat free. That is my preference, I love chicken and Mac and cheese together. This is a healthy hamburger helper recipe after all. However, you are more than welcome to use a different percentage of chicken.

99.9999% of the time I will make my homemade tomato sauce. But you can substitute with a bottled sauce or just crushed tomatoes if you do not want to make a whole homemade sauce.

My favorite sugar free ketchup is G Hughes, but I ran out and so did Publix. So I grabbed some sugar free Heinz. It is higher in calories, if you are counting that, but is zero-points as well, if you go that direction. I recommend stocking up on some G Hughes from amazon. You can order that here.

Ingredients for this dish

To make this homemade hamburger helper recipe, you will need a medium sized pot, for the pasta, and a large pan with tall sides for the chicken and sauce. Lastly, and my favorite little utensil, is this meat masher. It breaks up ground meat perfectly and makes cooking a breeze. Grab that here!

Here is What to Do:

The first step for this hamburger Mac and cheese is to measure to 6 ounces of pasta, for the Mac and cheese part. Six ounces of pasta is 'technically' 3 servings and this dish serves 4. But I find that with all the added protein and sauce, this dish works great at 4 servings. Just measure out 6 ounces of the pasta, dry.

The pasta I use for this hamburger helper recipe

I get my pot filled with water and place it on the stove over high heat, then lease that there to start boiling while I begin other steps. First, I dice my onion and grab all my ingredients while the water boils.

Chop and dice up your onions for a smooth and delicious hamburger Mac and cheese

Once the water starts boiling, add in the pasta and cook that according to the package instructions, once that is finished, drain it well and set aside.

Cooking:

Meanwhile we will begin on the chicken/sauce. It is a creamy and delicious sauce, you will not believe this recipe is a healthy hamburger helper recipe once you try it!

Heat you pan over medium/high heat. Chop the onion up fine as to not have huge chunks of onion in your hamburger Mac and cheese. Add the minced garlic and diced onion and cook for about 3-4 minutes, until soft and fragrant.

Add ground chicken, breaking it apart while cooking. Once slightly broken up, season with the seasonings. Cook almost through, until almost all the pink is gone. It will look like this.

Mix in the tomato sauce, broth, ketchup and stir to combine. Allow chicken to cook completely.

Stir in cream cheese and stir in until melted. Add in cheddar cheese and stir until melted. It will look a look soupy, but we want that. It will provide a great sauce base for the pasta we are about to add in.

Berry bark is the perfect summer treat (which is all year long in Florida). Perfect for breakfast, snacking or dessert! Berry bark is completely customizable. You can use any fruit you would like! I also suggest topping it with chocolate chips, coconut flakes or crushed up graham crackers.

Air Fryer Sweet and Sour Chicken

I could easily label most of my recipes as my favorite but I think this healthy, air fryer sweet and sour chicken would truly be my absolute favorite. Sweet and sour chicken nuggets were always my favorite dish before beginning weight watchers. You know those delicious battered chicken nuggets with that amazing sweet and sour sauce, yeah, I used to get it every Sunday (ugh regrets). When I first started my new lifestyle, this was one of the first dishes I reinvented. My philosophy has always been to not give up the things you love, but to reinvent them into something you can eat everyday! The sauce tastes exactly like your local takeout place, but probably better! And don’t worry, I always build in extra sauce in my recipes to pour over your rice! This is how to make THE BEST sweet and sour chicken sauce!

Air fryer sweet and sour chicken nuggets are battered, yet healthy, this is how to make the best sweet and sour chicken sauce

This photo shows three servings. The recipe can be easily doubled, tripled, quadrupled, etc. It also makes great lunch leftovers!

What You Need for Healthy Air Fryer Sweet and Sour Chicken

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. If you do not have an air fryer, you can bake the sweet and sour chicken nuggets in the oven; however, it does not come out as crispy.

For the ingredients, it kind of seems like a lot of things, but it really is quite simple to make. I will give you all the tips and tricks how to make the sweet and sour chicken sauce to make this recipe a breeze.

For the battered Sweet and Sour Chicken:
  • Chicken
  • Corn starch
  • Seasonings

I typically use chicken tenderloins when I need nuggets sized chicken, but you can use other cuts of chicken. Chicken tenderloins are already thin, so minimal cutting is required, which is why I like them. However, chicken breasts or chicken thighs can work well too. But, you can use beef, pork or even tofu if you are vegetarian. Any kind of protein will work great in this recipe. Remember to cut the chicken, or your preferable substitution, in the same size, so they are all cooked simultaneously.

Corn starch is really great in this recipe, but there are other ways to coat chicken. If you have flour, that works great here as well. Alternatively, a mixture of flour and breadcrumbs can work as well. If you do not want to make battered sweet and sour chicken, you can skip coating the chicken and just cook it to your preference.

For the Sweet and Sour Chicken Sauce
  • Brown sugar replacement
  • Apple cider vinegar
  • Soy sauce
  • Ketchup 

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use the Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

For this recipe, grab your apple cider vinegar; however, if you have white vinegar, you may substitute that. This recipe calls for low sodium soy sauce, but if you have regular soy sauce, just adjust the amount of additional salt added to the sauce. Finally, the sauce calls for sugar free ketchup, which is why we add some brown sugar back in. If you have and want to use regular ketchup, be mindful about how much brown sugar you put in.

For the Slurry

What is a slurry? It is a liquid-y mixture that makes the sauce thick! It just combines corn starch with some water. Add that into the sauce, after it is made, until you reach your desired thickness.

Vegetables

Finally, for the vegetables. I mean it is a healthy sweet and sour chicken recipe. I love bell pepper, onion and carrots in mine; however, use any vegetables that you prefer. I know a lot of takeout places have pineapple in theirs, but I just really do not like that.

This recipe is for the sweet and sour chicken nuggets and the vegetables, if you want to add some rice, you will have to cook that separately.

How to Make Air Fryer Sweet and Sour Chicken

First, let's go over how to make the sweet and sour chicken sauce. As mentioned, it does seem like a lot of ingredients but I promise it is so easy to make, and most importantly, so worth it.

How to Make the Sweet and Sour Chicken Sauce

Add all sauce ingredients (brown sugar, vinegar, soy sauce, ketchup, garlic powder, salt) to a small pan over medium/low heat. Stir together and bring to a slight boil. Allow it to simmer for 5-10 minutes. As that gets going, start on the chicken nuggets.

How to Make Battered Sweet and Sour Chicken Nuggets

As the sauce thickens, preheat your air fryer to 400 degrees and grease it with cooking spray. Cut chicken tenderloins up into bite size pieces, about 1 inch by 1 inch. Place cornstarch on a plate and season with the chicken seasonings (salt, pepper, garlic powder, onion powder and one very small pinch of cinnamon), stir together. One by one, add chicken pieces to the plate and roll chicken nuggets around the corn starch until evenly coated.

Once all the chicken nuggets are coated, place in the greased air fryer and air fry for 1 minute. Spray chicken with cooking spray (this will emulate actual frying, while keeping this sweet and sour chicken healthy) then air fry for another 3 minutes. Flip/shake the chicken and spray with cooking spray again. Air fry for another 4-6 minutes, or until thoroughly cooked.

Vegetables

While the chicken is cooking, work on the vegetables, remember, the sauce is still thickening. Chop up the vegetables into bite sized pieces. Grease a small pan with cooking spray and heat up over medium/high heat. Add vegetables and sauté until slightly soft.

Meanwhile, combine slurry ingredients (corn starch and water) in a small bowl, stirring to remove any clumps. Once sauce has finished simmering, slowly pour in slurry until desired thickness is reached. After everything is cooked, add chicken and vegetables to the pan with the sauce and toss to evenly coat.

There will be enough sauce to have some rice, you can either make my instant pot rice or my stovetop rice.

Other Ways to Cook Air Fryer Sweet and Sour Chicken

If you do not have an air fryer, you can bake these in the oven at 425 degrees for 10-12 minutes. Be sure to follow the same instructions for spraying and flipping the chicken.

I also make sweet and sour chicken in my instant pot, it is not battered but is still amazing.

Cheeseburger Sloppy Joes

Warning: contents are extremely messy but extremely delicious. You know and love my hamburger mac and cheese.. so I took it up a notch… CHEESEBURGER SLOPPY JOES! The same rich, creamy and delicious flavor, now in a sandwich! Serve with pickles, tomatoes and fresh herbs!

Ingredients
 

  • 2 cloves garlic minced
  • 1 pound 99% fat free ground turkey breast or ground chicken breast
  • ¼ white onion diced
  • 3 tablespoons sugar free ketchup (G Hughes brand)
  • 1 tablespoon chicken broth low sodium, fat-free
  • 2 tablespoons ⅓ less fat cream cheese
  • ¼ cup reduced fat, 2% milk cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 hamburger buns of your choice; not included in points or calories

Instructions

  • Heat a large pan on the stove over medium heat. Spray with cooking spray
  • Add minced garlic and cook for one minute, until fragrant. Add diced up onion and cook until slightly soft and translucent
  • Add ground turkey and start breaking it apart. Once slightly broken apart, add seasonings and continue to break up and mix. Cook almost thoroughly, until almost all the pink is gone
  • Add ketchup and broth and stir to combine. Allow meat to completely cook. Add in cream cheese and stir in until melted. Add in cheddar cheese and stir to combine
  • Assemble your sloppy joes and enjoy!

Carrot Fries

Did you know you can make carrots in the air fryer and the fries come out like a real fried French fry! Just add my dipping sauce and you have the real deal.

These may look like just your average fries but guess what, they’re healthier and even more delicious! My air fried carrots are seriously so good that you’ll forgot about normal fries! And my secret sauce will leave you wanting even more!

These are my Wing Stop flavor inspired fries, and wow so so good! But, you can use another combination of seasonings that you love.

Ingredients

There are carrot fries ingredients and sauce ingredients; however, we also can go over some substitution suggestions.

  • Whole carrots
  • Sugar
  • Seasoned Salt

Sauce Ingredients

  • Yogurt
  • Honey Mustard
  • Ketchup
  • Salt

But, let's go over some suggestions as well.

For the carrots, I want to make these look like fries as much as possible; therefore, I use whole carrots. These can be made with other shapes of carrots; however, you will need to be mindful of cooking times.

I season my fries with sugar and seasoned salt, kinda like Wing Stop does; however, you can choose any flavor combination.

Finally, for the sauce. I usually use plain, non-fat Greek yogurt, for a healthier option. However, you can use mayo or even try sour cream.

How to Make Carrot Fries

Wash, peel and chop off the ends of all carrots. Cut each in half and then cut the big half into six sticks and the small half into four sticks (depending on the size of your carrot, this may need to be changed).

Place all the sticks in a large bowl and cover with cooking spray. Add seasonings and toss to evenly combine.

Cook in the air fryer for 15 to 25 minutes, shaking every five minutes. However, keep an eye on the fries as they may burn easily.

I do prefer to make these in the air fryer; however, you may not have one. Skip the air fryer and cook on the oven at 450 degrees for 35 minutes, flipping halfway.

Are Carrot Fries Healthy?

I would say these are definitely a healthier version of your favorite French fry snack! They are just carrots, made in the air fryer. You do not even need to add oil to them!

Plus, make the dipping sauce with yogurt, to keep it healthy and packed with protein. I would say that is a better alternative to a mayo-based dip.

How do I Make Carrot Fries Crispy?

To make your fries extra crispy, air fry them for as long as possible, without burning them. However, you will want to keep an eye on them as they can burn pretty quickly.

What to Serve with Carrot Fries

The seasonings I use remind me of Wing Stop's French fries; therefore, I love serving these with my crispy cornstarch wings. You can also try my air fryer crispy corn, it is a copycat to the Wing Stop corn as well.

If you are looking for something healthier, I have tons of lean chicken dishes to serve these carrot fries with.

Storage Instructions

Store these fries in an airtight container, in the fridge, for up to three days. To reheat them, I like to pop them back into the air fryer.

Be mindful of when you opened your yogurt. A Greek yogurt is typically only good, opened, for 5 days in the fridge. To store the actual sauce, place it in an air tight container in the fridge. You can keep the sauce for up to 5 days from when the yogurt was opened.

Expert Tips

I like to get a little burntness on my fries to keep them a little crispy! Air fry them for as long as possible, without over burning them.

  • 1 teaspoon granular sugar replacement (Swerve or Monkfruit)
  • 2 teaspoons seasoned salt

Sauce

  • ¼ cup plain, nonfat Greek yogurt
  • 1 tablespoon honey dijon mustard
  • 1 tablespoon sugar free ketchup
  • sprinkle salt

Instructions

Carrots

  • Wash, peel and chop off the ends of all carrots. Cut each in half and then cut the big half into six sticks and the small half into four sticks (depending on the size of your carrot, this may need to be changed)
  • Place all the sticks in a large bowl and cover with cooking spray. Add seasonings and toss to evenly combine
  • Cook in the air fryer for 15 to 25 minutes, shaking every five minutes. Be sure to watch the fries as they do burn easily, depending on how big they are. (Skip the air fryer and cook on the oven at 450 degrees for 35 minutes, flipping halfway)

Sauce

  • Combine all the ingredients for the sauce in a small bowl. Store in the fridge while the carrots cook to allow the flavors to form together.

Breakfast Bagels

A two point bagel in the morning!? Count me in! I have been living off these bagels in the morning. I make mine a bit smaller than most people. Which just allows me more points for the rest of my day! The bagels really fill me up and satisfy my bagel cravings. Some of my favorite toppings are minced onions and cinnamon sugar!

Breakfast Bagels

Ingredients
 

  • 1 cup self-rising flour
  • 1 cup plain, nonfat Greek yogurt
  • 1 eggs worth of egg beaters optional
  • bagel toppings optional

Instructions

  • Preheat oven to 350 degrees. Grease a baking tray with cooking spray or line with parchment paper
  • Place yogurt and flour in a large bowl. Use a spoon to mix it all together. Once all the flour is sticking to the yogurt, dump out on a clean surface. Knead together for about 3-5 minutes until dough like
  • Split the dough into 6 even pieces and roll each piece out into a worm shape (about 5-6 inches)
  • Place each worm onto baking tray, bringing the ends together and pinching one end over the other
  • Optional: Brush egg beaters over each bagel then top with bagel seasonings (everything but the bagel, minced onion, sesame seeds, cinnamon sugar)
  • Bake for 18-20 minutes or until desired crispness

Fruit Dip

Fruit dip is the perfect sweet treat! It tastes like a cream cheese/icing dip and the flavor can be tweaked depending on your choice of Jell-O mix. I love using the cheesecake or white chocolate ones. Strawberries are my favorite fruit with this and I also love enjoying it with pretzel sticks.

  • 3 ounces rum (2 shots)
  • ⅛ cup Jordan's Skinny Syrups blueberry lavender mix
  • 1 tablespoon lime juice
  • 1 cup diet club soda (use Sprite zero for a sweeter drink)
  • blueberries and limes for garnish
  • mint fresh

Instructions

  • Combine skinny syrup, lime juice, rum and club soda in a tall glass. Stir to combine. Fill two whiskey glasses up with ice and pour drink evenly over each one. Squeeze fresh lime juice and add blueberries into each one.
  • Add mint on top or muddle it into the drink, if you wish!

Cinnamon Rolls

Are you a breakfast person? I have been very into breakfast lately and these cinnamon rolls are my newest obsession. They are made with sweetened two ingredient dough, which adds some protein into your morning routine. Then they are drizzled with my zero point icing. A truly amazing experience for a lot less points and calories than a store bought cinnamon roll!

Ingredients
 

Cinnamon Rolls

  • 1 cup self-rising flour

  • 1 tablespoon light margarine (ICBINB)
  • 20 sprays butter spray
  • 2 tablespoons brown sugar replacement (Swerve)
  • 2 teaspoons cinnamon

Icing

  • 6 teaspoons confectioners sugar replacement (Swerve)
  • ½ tablespoons plain, unsweetened almond milk

Instructions

Cinnamon Rolls

  • Preheat oven to 350 degrees. Spray a baking tray with cooking spray or line with parchment paper.
  • In a large bowl, combine flour, yogurt and granular sugar. Use a spoon to mix it all together. Once all the flour is sticking to the yogurt, dump out on a clean surface. Knead together for about 3-5 minutes until dough like.
  • Split dough into two pieces and roll out each piece into a worm like shape, about 12-14 inches long. Press down each piece until they are about 2 inches wide.
  • Coat each piece with the margarine and butter spray then evenly sprinkle with brown sugar, cinnamon and pumpkin pie spice. Carefully roll up each piece then slice in half with a sharp knife, creating 4 cinnamon rolls.
  • Place cinnamon rolls on your baking tray and bake for 20-25 minutes.

Icing

  • Combine all ingredients in a small bowl. Add more confectioners sugar to make a thicker icing or more almond milk to make a thinner icing. After cinnamon rolls are cooked, drizzle icing onto them.
