Copycat Alice Springs Chicken

You all know my favorite restaurant app is a Bloomin onion. But what do you pair that with... Alice Springs Chicken!! I love how rich and delicious this meal is!! Of course I made it with my bloomin onion and my favorite sides for the full restaurant experience.

Ingredients
 

  • 4 ounces chicken cutlet one piece
  • 2 tablespoons lite honey mustard
  • 2 pieces fully cooked turkey bacon
  • ¼ cup reduced fat, 2% milk cheddar cheese
  • ⅛ teaspoon salt and black pepper

Instructions

  • Preheat oven to 400 degrees
  • Line a baking tray with aluminum foil and spray with cooking spray
  • Season chicken with the salt and pepper and place on the foil. Drizzle 1 tablespoon of honey mustard
  • Bake for 10 minutes
  • Flip chicken over then top with bacon and cheese. I do not heat up my bacon before putting it on the chicken as I like more squishy bacon. If you like your bacon more well done, crisp it up before placing on the chicken
  • Bake for another 5-8 minutes, until chicken is fully cooked and cheese is melted
  • Top with the remaining honey mustard

Stuffed Peppers

When I first started WW, I made these stuffed peppers literally EVERY single night! They are insanely delicious and zero-points, so why not! They are packed full of veggies and protein which means a filling meal. You can also add rice or top it off with some cheese to add some points and flavor.

Ingredients
 

  • 3 bell peppers
  • 4 cloves minced garlic
  • ¼ white onion
  • 16 ounces ground chicken breast 1 package
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 teaspoon oregano
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ cup riced cauliflower cooked

Instructions

  • Preheat oven to 450 degrees. Slice and de-seed/core the peppers. Bake, cut side up, for 20 minutes, until desired wellness
  • Dice the onion and cook the riced cauliflower
  • Heat a large pan over medium/high heat and spray with cooking spray
  • Add garlic and cook for one minute, until fragrant. Add the diced onion and cook for 3 minutes, until slightly soft
  • Add ground chicken to the pan and break up a bit. Add the seasonings and continue to break up the chicken and mix in the seasonings as it cooks
  • Once the chicken finishes cooking, add in the cooked riced cauliflower and toss to combine
  • Stuff the chicken into the peppers and enjoy!

No bread garlic bread is the easiest thing to make and as you can tell, there’s no bread! Just take a smart bun, spray with ICBINB then top with minced garlic and cheese! I usually only eat one side at a time and it just really hits the spot!!!

Easy Orange Chicken

Easy orange chicken! You all know I LOVE my fakeout takeout! The sauce is just three ingredients and zero points! It’s so easy to make when you want to whip up a delicious meal but don’t have time.

Easy Orange Chicken

Ingredients
 

  • 16 ounces chicken tenderloins about 9 pieces
  • 3.5 tablespoons sugar free orange marmalade
  • 2 tablespoons sugar free BBQ sauce G Hughes
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt and black pepper
  • 1 teaspoon garlic powder and onion powder

Instructions

  • Cut chicken tenderloins up into bite-sized pieces, about 6 pieces per tender
  • Heat a pan over medium/high heat and grease with cooking spray
  • Sprinkle chicken with the seasonings then add to the heated pan
  • Cook chicken until completely cooked, about 4 minutes per side
  • Meanwhile, mix together orange marmalade and BBQ sauce in a small bowl. In another bowl, combine cornstarch with 1 teaspoon of cold water
  • Once chicken is cooked, add orange sauce to the pan and toss to coat. Add the cornstarch mixture and toss to coat
  • Bring to a slight boil and allow sauce to thicken for a few minutes
  • Add a squeeze of an orange for an extra zest!

I absolutely love making chicken parm. It’s on my menu all the time! It’s easy to make and always tastes extremely delicious. And look at that cheese! Perfection!!

  • 4 ounces chicken cutlet one piece
  • ⅛ cup panko breadcrumbs Italian style
  • 2 teaspoons grated parmesan cheese
  • ⅛ cup Allie Carte homemade tomato sauce
  • ⅛ cup reduced fat, part skim shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon Italian seasonings
  • 1/16 teaspoon salt
  • 1 pinch black pepper

Instructions

  • Stir together breadcrumbs, Parmesan and seasonings on a small plate
  • Press chicken onto the mixture, being sure to coat all of the sides
  • Preheat air fryer to 400 degrees and grease with cooking spray
  • Air fry for 2 minutes, then spray the chicken with cooking spray. Air fry for 3 more minutes. Flip chicken over and spray again. Cook for another 3 minutes (Or bake in the oven at 450 degrees for 15 minutes, flipping halfway)
  • Top with tomato sauce then cheese then cook for another 2-4 minutes, until fully cooked and cheese is melted

Nashville Hot Chicken Nuggets

According to everyone who has tried this, I have seriously perfected the Nashville hot chicken recipe. I put a little spin on it and made Nashville hot chicken NUGGETS. Because who doesn’t love a good nugget!? Plates are licked CLEAN when this dish is made. It gives that instant sweet feeling then you get that spice taste at the end. Oh, and don’t forget the pickles!

Chicken Ingredients

  • 12 ounces chicken tenderloins about 8-9 pieces
  • ⅛ cup flour
  • ⅛ cup panko breadcrumbs

  • ⅛ teaspoon cinnamon
  • ¼ teaspoon ground red pepper
  • ⅛ teaspoon salt
  • ⅛ teaspoon garlic powder

Sauce Ingredients

  • 1 tablespoon light margarine ICBINB
  • ¼ teaspoon paprika
  • ¼ teaspoon ground red pepper
  • ⅛ teaspoon salt
  • ⅛ teaspoon garlic powder
  • 2 teaspoons brown sugar replacement Swerve
  • ½ teaspoon honey
  • 2 teaspoons water

Instructions

  • In a small bowl, combine flour, breadcrumbs and chicken seasonings
  • Grease air fryer with cooking spray and preheat to 400 degrees
  • Gently roll cut up chicken pieces in the flour mixture, to coat, then place in the greased air fryer, in a single layer without chicken pieces touching
  • Air fry for 1 minute then spray with cooking spray. Cook for another 3 minutes
  • Flip chicken over, spray with cooking spray again and cook for another 4-6 minutes, until fully cooked (Or bake at 450 for about 10 minutes, flipping halfway)
  • Meanwhile, melt margarine in a small pan over low heat. Add in the rest of the sauce ingredients and mix until it comes to a slight boil. Remove from heat
  • Brush sauce onto the cooked chicken pieces

French Onion Chicken

My French onion chicken is still one of my favorite dishes to make. It’s such an easy recipe but it really packs a punch! The tastes and textures just come together perfectly (I’m getting hungry again just thinking about it!!) It’s truly a great meal that the whole family can enjoy. I pair it with some extra long grain rice (for additional points) and some veggies.

French Onion Chicken

  • 4 ounces chicken cutlet one piece
  • ⅓ white onion sliced
  • 1 teaspoon brown sugar replacement Swerve
  • 2 tablespoons chicken broth fat-free, low sodium
  • ⅛ cup reduced fat, part skim shredded mozzarella cheese
  • 1 pinch salt
  • 1 pinch black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  • Spray a small pan with cooking spray and heat up on the stove over medium/low heat
  • Add sliced onion and cook until lightly browned and soft (5 to 8 minutes)
  • Add sugar, stir until softened
  • Stir in stock, cooking until sauce has a jam like consistency (add a splash of water if too dry)
  • Transfer onion mixture to a plate
  • Season chicken with the seasonings then cook throughly in the leftover sauce on the pan. About 5 minutes per side
  • Once chicken is cooked, top with onion mix and cheese
  • Cover until cheese is melted (2 minutes)

Chocolate Chip Mousse

Need a chocolate fix?! Whip up some of my chocolate chip mousse! Only two points for a big portion size. Eat it alone or use it as a dip. I keep mine stored in the fridge for a week.

Disclaimer: I am not the biggest chickpea fan but I love this! I think the chickpea flavor is pretty well disguised.

This recipe also works great if your self-rising flour has expired.. yes it can expire. If you are finding out that your recipes are not rising, give this a shot!

Air Fried Fries

Who needs some French Fries!? I would have to say my biggest weakness is definitely these things. What’s yours?? I haven’t had any French fries in a long time so I thought I would whip up some of my air fried version. What do you think? How amazing do these look!!? I dipped them in 2 tablespoon of G Hughes ketchup! My favorite zero point ketchup!

What You Will Need:

The ingredients are simple, just a potato, seasoned salt and some cooking spray. Super easy!

  • 1 russet potato
  • Seasoned salt
  • Cooking spray

What You Will Do:

This recipe requires a bit of prep work and some advanced prep before cooking. Nothing too crazy.

Clean and wash your potato. Place on a cutting board and cut up into French fry shaped pieces.

I like for them to be all around the same thickness and remove any fries that do not reach my requirements.

Place all these fries in a large bowl filled with ice water. Store in the fridge for approximately 30 minutes.

This helps keep the fries crispy and to allow them to cook evenly. You can do without this step; however, the fries will not cook as evenly and will not be as crisp.

Remove the fries from the bowl of water and pat dry with a paper towel.

Place the fries in the air fryer and spray with cooking spray. Toss to coat. Sprinkle with the seasoned salt and toss to coat.

Air fry for 10 minutes at 400 degrees. Open the air fryer and shake up/flip the fries. Spray with cooking spray and cook for another 10-15 minutes, until desired crispness.

Once fries are crisp, remove them and spray with cooking spray again. Toss to coat. Sprinkle with more salt as desired.

  • repeat for all the chicken pieces
  • place all the chicken in the air fryer and air fry for one minute. Spray the chicken with cooking spray and air fry for another 3 minutes. Flip chicken over and spray with cooking spray. Air fry for another 4-6 minutes, until fully cooked
  • or bake in the oven at 450 degrees for 10 minutes, flipping halfway

Chicken Bolognese

Try out my low calorie, weight watchers friendly Bolognese sauce recipe that is lightened up with ground chicken and a homemade tomato sauce.

One of my top tips is to make your own tomato sauce. You can make very low calorie, low fat, low everything by making it yourself. Then, I stepped it up a bit and made a homemade bolognese. It is lighted up with some ground chicken!

My homemade bolognese is an easy sauce to whip up for your pasta. I usually make mine with ground chicken breast; however you can also try 99% lean ground turkey. But it can be made with pretty much any meat you can find (ground chicken, ground beef or sausage, for added points).

You can also skip the meat and make my homemade zero point tomato sauce. Even better: both can be frozen! These dishes make a ton of sauce so it’s perfect for the whole family or meal prep!

What You Need for a Chicken Bolognese Recipe

There are somewhat two phases to this: the chicken and then the tomato sauce. For the chicken, you will need, obviously chicken, along with some onion, garlic, seasonings and special weapons. Then, we will add in some tomatoes to make the actual sauce.

Ground Chicken

I make these Italian stuffed peppers with ground chicken breast. I love how lean and protein packed ground chicken breast is. This makes for a very weight watchers friendly bolognese sauce. However, you can substitute regular ground chicken or a different type of meat.

Crushed Tomatoes

You can certainly use fresh tomatoes; however, I do not have time for that and I am sure you do not either. I use a can of crushed tomatoes as they are ready to go in my sauce. My favorite brand is Muir Glen no salt added. However, you can use any brand you would like.

If you are using diced tomatoes or actual real tomatoes, you will need to blend them if you want a smoother sauce. However, you can also keep the diced tomatoes and do a chunkier sauce.

Seasonings for a Chicken Bolognese

Some people say this seems like a lot of seasonings but who doesn't want a well seasoned dish? I use your classic Italian seasonings, plus, some secret weapons.

  • oregano
  • Italian seasonings
  • garlic powder
  • onion powder
  • salt
  • black pepper

You are more than welcome to switch up the seasonings or add some in, such as ground red pepper to make it spicy.

Plus, my secret weapons!
  • granular sugar replacement
  • lemon juice

Yes, we need sugar. Personally, I like a sugar replacement. I prefer something like Splenda or Swerve; however, you can use whatever you like. The sugar cuts the acidity of the tomatoes and you definitely need it.

Lemon juice brings out the flavor of the tomato sauce, just like salt does; however, lemon juice does not have the acidity of salt.

How to Make a Low Calorie Chicken Bolognese Sauce

Heat a large pan over medium/high heat. Grease with cooking spray.

Once heated, add the minced garlic and diced onion. Cook until soft and fragrant, about 3-4 minutes.

Add the ground chicken and begin breaking it up. Add the seasonings and continue to break up while cooking and mixing up the chicken.

Once the chicken is fully cooked, add the crushed tomatoes and reduce the heat to low. Let the tomatoes simmer for a few minutes.

Add tomatoes and reduce the heat to low. Bring to a slight boil and allow the sauce to simmer fo 30-45 minutes, stirring occasionally. However, if you are low on time, you can just bring to a boil then remove from the heat and use the sauce.

Tips and Tricks for Zero Point Marinara:
  • To make the sauce thinner, add water. I usually start with a ¼ cup and go from there. However, you can also use pasta water!
  • To make the sauce thicker, combine 1 tablespoon of cornstarch with 1 tablespoon of water. You can slowly add this to the sauce.
  • Makes about four, half cup servings

  • 4 cloves garlic minced
  • ⅛ cup diced white onion
  • 1 pound ground chicken breast
  • 2 tablespoons oregano
  • 2 tablespoons Italian seasonings
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon granular sugar replacement Lakanto or Swerve
  • 1 teaspoon lemon juice
  • 1 can crushed tomatoes 14.5 oz can

Instructions

  • Heat a large pot over low heat. Once heated, add garlic and diced onion. Sauté until soft and fragrant, about 3-4 minutes.
  • Add the ground chicken and start breaking it up while adding the seasonings. Continue to break up and mix together as the chicken finishes cooking.
  • Once completely cooked, add the tomatoes and stir together.
  • Allow sauce to simmer for 15-45 minutes, stirring and scraping the pot occasionally.

Sweet Asian Taco Meat (Chicken)

This is the absolute best meat you will ever try!! It is spicy, but sweet. It has all the best flavors you could ever love, combined into the most delicious dish.


One of the easiest recipes for a frozen chicken breast is to place it in a crock pot, cover with salsa, and cook it!

I usually use the meat for tacos; however, you can use it for rice bowls, salads or anything else you see fit!

Ingredients
 

  • 1 teaspoon sesame oil
  • 4 green onions
  • 4 cloves minced garlic
  • 16 ounces ground chicken breast sub 99% fat free ground turkey breast
  • 2 teaspoons garlic powder
  • 3 tablespoons Splenda 9 packets
  • 1 teaspoon Sriracha sauce more to taste
  • ½ teaspoon paprika sub ground red pepper for spice
  • ⅛ cup soy sauce low sodium
  • 1 teaspoon salt and pepper

Instructions

  • Heat sesame oil up in a large pan. Slice green onion and add to the pan with the minced garlic. Cook for about 2-3 minutes, until garlic is starting to brown.
  • Add the ground meat and break up a bit while cooking. Once broken up, add the garlic powder, paprika and 1 teaspoon of Splenda sugar. Cook completely.
  • Once cooked, reduce the heat and add the remaining ingredients and stir together. Boil for about 2-3 minutes to allow to flavors to absorb into the chicken.

This buffalo ranch chicken meatballs recipe is the best meatball recipe and then they are smothered in creamy ranch and buffalo sauce. The flavor in these is incredible and everyone enjoys eating them!

These buffalo ranch chicken meatballs are a great appetizer for a crowd, a delicious lunch meal prep or an amazing weeknight dinner recipe. These can be great on their own, in a sandwich or a lettuce wrap. These are made with chicken and flavored with ranch and buffalo sauce. I drizzle more ranch and buffalo sauce on top, because you cannot have too much of it.

What Do You Need to Make This Recipe

To make this recipe, only a few ingredients are required, and we can also go over some substitutions.

  • Ground chicken breast
  • Breadcrumbs
  • Egg beaters
  • Ranch seasoning mix
  • Wing sauce

This buffalo ranch chicken meatballs recipe calls for ground chicken breast, making sure to grab the 99% fat-free version. However, you can certainly use any other ground meat that you love. Either try this with ground turkey breast or ground beef, the choices are endless.

For the breadcrumbs, I always just have normal Panko breadcrumbs on hand. But you can use any breadcrumbs that you have or want to use.

Egg beaters are my favorite. Fun fact, I despise cracking eggs, so egg beaters it is. Plus, egg yolks have cholesterol and that can add up with heart disease in my family. However, you can use an actual egg, I have done it before.

Find Ranch seasonings mix near the dressing at your local grocery store. I typically keep the very large bottle on hand; however, you can buy small packets if you do not use it often.

I believe the wing sauce I use for this photo is Frank's; however, it truly does not matter. I use any wing sauce, buffalo sauce, hot sauce, whatever, I have on hand.

Ranch

Ranch seasonings will go into the buffalo ranch chicken meatballs; however, I always drizzle my homemade ranch on top. You can also serve it with my homemade ranch on the side. This is a healthier Greek yogurt ranch. Greek yogurt is a great substitute for many things including sour cream and actually contains protein. I honestly really love ranch made with it. You really just combine the yogurt with ranch seasonings. I make a great greek yogurt ranch that you need to try; however, you can also just use store bought.

How to Make Buffalo Ranch Chicken Meatballs

Start by preheating the oven to 400 degrees. Grease a baking tray with cooking spray.

In a large bowl, combine the chicken, egg and breadcrumbs, using your hands to mix well.

Add the seasonings, including the Ranch, and the hot wing sauce, again, using your hands to mix well.

Scoop out 16 equal sized mounds, about ⅛ cup each. Spray them with cooking spray, as it makes them easy to work with. Then, form them into round balls by rolling them against your hands.

Bake for 18-20 minutes, flipping halfway, or until fully cooked.

Drizzle with more ranch and hot wing sauce, I also love topping them with green onions. This makes 16 meatballs, with 4 meatballs per serving.



What To Do With Leftovers

These meatballs can be made up to two days in advance, just store them in the fridge, in an air tight container, until ready to serve but are best fresh.

Store the meatballs in the fridge for up to four days, for meal prep, but be sure to store in an air tight container.

  • once almost cooked (once almost all the pink is gone), add the sriracha, sweet chili and soy sauce and bring to a slight simmer while the chicken finishes cooking
  • once chicken is completely cooked, add the coleslaw package and mix together
  • bring the heat down to medium/low and cook for another 5 minutes, for coleslaw to soften
  • meanwhile, add all the sauce ingredients together and drizzle evenly over each serving

Delicata Squash

IT’S DELICATA SEASON!!! WOO HOO!!

Who else agrees that delicata squash is the greatest thing ever??? It’s literally the candy of the vegetable world. They are only available for a limited time! I buy mine at Trader Joe’s and you better pick some up too!!!


And yes, you can eat the peel! Sometimes I am not the biggest fan of the skin so I will just bite off the insides. But I eat the skin very often and I know most people usually just eat it too. That’s why I love delicata though! No need to peel!

  • 1 delicata squash
  • ½ teaspoon seasoned salt
  • cooking spray

Instructions

  • slice delicata into rings, then slice each ring in half to make half-moon shapes

  • air fry at 350 degrees for 15 minutes, flipping every 5 minutes or bake in the oven at 400 degrees for 15 minutes, flipping every 5 minutes
