Instapot Shredded Taco Chicken

Happy Taco Tuesday! This delicious shredded chicken taco meal is exactly what I needed!!! I added all my ingredients to the pressure cooker and I cannot even describe how amazing the smell was! Then the taste was better than I could have ever imagined, better than any restaurant dish you have tried! Super easy and delicious, a must try!!

BTW this dish makes the most amazing leftovers or meal prep!

Equipment

  • Instapot
  • Instapot Non-Stick Bowl Insert

Ingredients
 

  • 1 teaspoon olive oil
  • 16 ounces chicken breast about 2 pieces
  • ½ can diced tomatoes half a 15 oz can, about ½ cup
  • ½ cup chicken broth fat free, low sodium
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ¼ teaspoon black pepper
  • ½ teaspoon oregano

Instructions

  • Add oil to your instapot and turn it to the saute setting. When the oil heats up, add the chicken breasts (whole) to the pot and sear both sides for about a minute
  • Turn the instapot off
  • In the instapot, add the crushed tomatoes, chicken broth, lime juice and seasonings. Stir to combine.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it
  • Once completely cooked, vent and de-pressurize the instapot then open the lid. Shred the chicken with two forks or a hand mixer
  • Add the chicken back into the pot with the juices. Stir occasionally as the chicken absorbs the juices. Store the chicken in the fridge with the remaining juices or serve with the juices.

Instapot Chicken Alfredo

Instapot chicken alfredo is HEAVEN!!!! Holy cow this dish is absolutely incredible! I cannot believe how quick and easy it is to cook in a pressure cooker! I modified my classic alfredo dish (that you all have been LOVING lately) and turned it into a pressure cooker version! This was voted my new top dish so you need to try it!

Instant Pot Chicken Alfredo

Ingredients
 

  • 1 tablespoon light margarine ICBINB
  • 2 cloves minced garlic
  • 16 ounces chicken breast skinless, boneless
  • 1 teaspoon lemon juice
  • 6 ounces penne pasta dry
  • 1.25 cups chicken broth low sodium, fat-free
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon italian seasonings
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 ounces ⅓ less fat cream cheese
  • ⅜ cup plain, unsweetened almond milk
  • ½ cup reduced fat, part skim shredded mozzarella cheese
  • 1 teaspoon oregano
  • 1 teaspoon parsley

Instructions

  • Cut chicken up into bite sized pieces, about one inch by one inch
  • Turn the Instant Pot to the saute setting. When the pot heats up, add the margarine and allow it to melt.
  • Add in the garlic and saute for about 20-30 seconds. Add in the cut up chicken and about half the seasonings. Mix up the chicken into the seasonings. Lightly saute the chicken for about 2-3 minutes then turn the Instant Pot off.
  • Add the pasta noodles (dry). Pour the broth around the pasta.
  • Add the seasonings to the broth and stir to combine. Try not to disturb the pasta.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.
  • When the timer goes off, let the pot sit for 3 minutes. Move the valve to venting then remove the lid.
  • Turn the pot back to the saute setting. Add the milk and cream cheese. Stir until melted. Stir in the shredded cheese until melted.
  • Top with oregano and parsley.

Creamy Chicken Alfredo

I love a good, creamy sauce over my pasta so I made a healthier one. My creamy chicken Alfredo is so rich, so creamy, and so delicious!! This dish will be devoured by everyone!

Creamy Chicken Alfredo

Ingredients
 

  • 6 ounces penne pasta dry
  • 2 cloves minced garlic
  • 16 ounces chicken cutlets breasts
  • 1 teaspoon lemon juice
  • 2 ounces ⅓ less fat cream cheese
  • ⅜ cup plain, unsweetened almond milk
  • ½ cup chicken broth fat free, low sodium
  • ½ cup reduced fat, part skim shredded mozzarella cheese
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasonings
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  • Cook pasta according to box, drain well and set aside
  • Slice chicken up into bite-sized pieces, about 1 inch by 1 inch
  • Heat a large pan, greased with cooking spray, over medium heat, add garlic and cook for one minute
  • Add chicken to the pan and season with half the seasonings. Add in the lemon juice. Cook about 3-4 minutes per side, until fully cooked. Set the chicken aside on a clean plate
  • Re-spray the pan and add in cream cheese. Allow it to melt halfway then add milk and broth. Stir until all the cream cheese is melted then add the second half of the seasonings
  • Allow sauce to come to a slight boil and stir while it thickens
  • Add shredded mozzarella cheese to pan and stir until completely melted
  • Add in chicken and pasta and toss to completely coat. Top with more fresh herbs if desired

I bought a microwave popcorn maker off Amazon... No oil required, all you do it put some kernels in the maker and microwave! Super easy! Great late night, low-point snack to kick those cravings!!

  • 3 tablespoons popcorn kernels measured before popping
  • 20 sprays butter spray ICBINB
  • 1 teaspoon seasoned salt
  • 1 tablespoon confectioners sugar replacement Swerve

Instructions

  • Pop kernels according to package instructions. After popcorn is done popping, place about a quarter of the popcorn in a separate bowl. Spray with 5 sprays of butter then sprinkle with ¼ teaspoon seasoned salt then mix. For a sweeter kettle corn flavor, add ¼ tablespoon confectioners sugar. Repeat this step for all of the popcorn
  • I also recommend using KernelSeasons instead of the salt and sugar. I will link those below!

  • 8 baby red potatoes about 8 ounces total
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepepr
  • 1 teaspoon rosemary
  • 2 cloves minced garlic

Instructions

  • Preheat oven to 425 degrees
  • Cut potatoes up into bite sized pieces
  • Spray a cooking tray with the cooking spray
  • In a large bowl, coat potatoes with more cooking spray
  • Sprinkle with all the seasonings and garlic and toss to coat
  • Place potatoes on the greased baking tray and for 25-30 minutes, until they begin to brown. Flip the potatoes every 10 minutes

Fried Pork Chops

How do you feel about pork? I used to be the biggest fan but I haven’t made it in forever!! I’m back on the pork chop train because this was fantastic. Just look at the crunch on these things! Irresistible and amazing!

Ingredients
 

  • 8 ounces lean pork chops 2 pieces
  • 1 pinch salt
  • ¼ cup panko breadcrumbs
  • ⅛ cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon salt
  • 1 pinch black pepepr

Instructions

  • Sprinkle each pork chop with the pinch of salt, on both sides
  • Combine panko, flour and the remaining seasonings in a small, shallow bowl
  • Press each pork chop into the flour mixture, being sure to coat all sies
  • Preheat air fryer to 400 degrees
  • Air fry for 4 minutes then spray with cooking spray
  • Air fry for 4 more minutes then flip the pork chop over
  • Spray again with cooking spray then air fry for another 4-6 minutes, until fully cooked
  • Or bake in the oven at 425 for 17-22 minutes, flipping halfway

Can we just stare at this photo all day!? How amazing does this look!? It’s rich, creamy and delicious. The perfect comfort food. If you have tried (and loved) my hamburger mac and cheese, this is a step up!! I made it with ground chicken here but it’s also great with ground beef, if you prefer.

  • 6 ounces elbow pasta dry (half box)
  • 2 cloves minced garlic
  • 16 ounces ground chicken breast sub 99% fat free ground turkey breast
  • ¼ white onion diced
  • ¼ cup Allie Carte homemade tomato sauce
  • 2 tablespoons sugar free ketchup G Hughes
  • ¼ cup chicken broth fat free, low sodium
  • 2 ounces ⅓ less fat cream cheese
  • ½ cup reduced fat, 2% milk cheddar cheese
  • 16 pieces turkey pepperoni low fat
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon oregano

Instructions

  • Cook pasta according to the package directions, drain well and set aside
  • Heat a large pan on the stove over medium heat. Spray with cooking spray
  • Add minced garlic and cook for one minute. Add diced onion and cook until soft and translucent, about 3-4 minutes
  • Add ground chicken, breaking it apart while cooking. Once slightly broken up, season with the seasonings. Cook almost through, until almost all the pink is gone
  • Add tomato sauce, broth, ketchup and stir to combine. Allow chicken to cook completely
  • Add in cream cheese and stir in until melted. Add in shredded cheddar cheese and stir until melted
  • Add in the pasta and stir to combine in the sauce
  • Cut each pepperoni into 6 pieces and add to the pasta. Toss to mix up
  • Divide evenly into four bowls

Just look at this thing and tell me how amazing this would be!!! Onion rings! On a fried chicken sandwich!? I have been so into sandwiches lately and bringing them to the next level so what did I do? I combined about half my onion ring recipe with my fried chicken sandwich recipe and I am IN LOVE! This was amazing and really hits the spot!

  • 4 ounces chicken cutlet 1 piece
  • ¼ cup flour
  • 1 tablespoon egg beaters or whisked egg
  • 1 pinch salt

Instructions

  • on a small plate, combine flour and seasonings
  • in a bowl, pour out your eggs
  • dip chicken cutlet in the egg, completely coating it, then place on the plate of flour
  • press down lightly to cover the chicken, flip over and press the other side of the chicken down on the flour. Completely coat the entire chicken in flour
  • preheat your air fryer to 400 degrees and spray with cooking spray
  • place coated chicken in air fryer and fry for 2 minutes then spray with 5 sprays of butter spray. Air fry again for 3 minutes
  • flip chicken over and spray with 5 more sprays of butter spray. Air fry for another 5-7 minutes, until fully cooked

Sweet Mustard Skewers

I haven’t made these sweet mustard skewers in SO LONG. The sauce is delicious and they are quite easy to make. I typically bake them but today we cooked them on the grill! Talk about a great meal!

  • 4 tablespoons honey dijon Skinny Girl
  • 2 tablespoons brown sugar replacement Swerve
  • 8 ounces chicken breast 2 pieces
  • white onion
  • bell pepper
  • ⅛ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 skewers

Instructions

  • cut each chicken breast up into 4 pieces
  • in a small bowl, combine honey dijon and brown sugar, stirring until the brown sugar is dissolved
  • place cut up chicken in a bowl and pour half the mustard/sugar mixture on top
  • cover and marinate in the fridge for at least 30 minutes or up to all day
  • preheat oven to 350 degrees. Grease a baking tray with cooking spray
  • cut 10 pieces out of the onion and the pepper, about 1 inch by 1 inch
  • place marinated chicken, onions and peppers on the greased baking tray and season with the seasonings
  • bake for 25-30 minutes, until fully cooked, flipping halfway (or cook on the grill)
  • soak skewers in water for a few minutes, it makes them go in the chicken better
  • assemble your skewers and serve the remaining sauce on the side to dip

Smash Burgers

Oh boy do I have an AH-MAZ-ING dish for you today!! I have been VERY much into the burger food lately so I decided to go with a classic... SMASH BURGERS. At least that’s what my fiancé calls them so we go with it. They are super thin patties that you stack up together and top with cheese! Plus, if you add my special zero-point cheeseburger sauce (OH MY GOODNESS), they taste just like fast food! Give it a shot, I promise everyone will love them!!

I will also leave a link for my cheeseburger salad after the recipe. It uses the same sauce as a dressing and it is AMAZING!

Burgers

  • 16 ounces extra lean ground beef
  • 1 teaspoon garlic salt
  • 8 slices Velveeta cheese
  • 4 hamburger buns of your choice

Sauce

  • ¼ cup plain, nonfat Greek yogurt
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
  • 1 teaspoon Splenda
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dill pickle juice from a jar of pickles
  • 1 teaspoon water
  • 1 pinch salt
  • 1 pinch paprika

Instructions

Burgers

  • heat a large pan over medium/high heat. Grease with cooking spray
  • divide ground beef into 8 equal pieces and roll each into a ball
  • place 2-3 balls on your heated pan (depending how many will fit) and smash down with a spatuala
  • sprinkle each with just a pinch of the garlic salt and cook on that side for about 2-3 minutes
  • flip each burger over and cook for another 2-3 minutes, until desired wellness. Set aside
  • spray the pan again and repeat until all burgers are cooked

Sauce

  • combine all sauce ingredients in a small bowl and store in the fridge while the burgers cook to allow the flavors to form together

Assemble the Burgers

  • assemble each burger with two patties and two slices of cheese onto your bun. Top with the special cheeseburger sauce and enjoy!

Cooking for the family/people not on WW.. here's my tip!

Serve your burger on a low point bun. You could use whole wheat (2 points) or smart baking (1 point) and give everyone else their bun of choice. This was my fiances burger with a bakery bun, I used a smart baking bun. Serve your burger with carrot fries, delicata squash or veggies and serve everyone else fries!

Beef Stroganoff

Here’s my take on beef stroganoff! While there’s technically no beef, just beef stock, I made this taste amazing!! I kept it lower point and WW friendly without sacrificing any taste. Comfort food is totally my thing and this is GOOD! You can sub extra lean beef for only two additional points if you wish!

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 2 ounces ⅓ less fat cream cheese
  • ¼ cup beef stock
  • ¼ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • Cook pasta according to the package. Drain well and set aside
  • Heat a large pan over medium/high heat
  • Add margarine and allow it to melt
  • Add garlic and cook for one minute, until fragrant
  • Dice onion. Add to pan and cook until slightly soft, about 3-4 minutes
  • Add ground chicken and break apart a bit. Sprinkle on the seasonings and mix to combine, while continuing to break apart
  • Add the broth and bring the mixture to a slight simmer. Completely cook the chicken
  • Once chicken is completely cooked, add the cream cheese and mix everything together as the cream cheese melts
  • Add the shredded cheese and mix everything together as the cheese melts
  • Bring the heat up for just a few minutes to reduce the sauce
  • Add in the pasta and toss to coat

Chicken Parm Pizza

LOW CARB PIZZA!? Who knew!? Only 100 calories and 1 WW point per slice!!

I’ve been seeing chicken parm pizza all over the internet but I wanted to put my healthy Allie Carte spin on it. And hey, eating pizza on a diet? Sounds like a good day to me!! You all have been absolutely loving this recipe lately too!! (If you want it a little sweet, drizzle with some honey!)

Chicken Parm Pizza

Ingredients
 

  • 16 ounces ground chicken breast
  • 4 cloves minced garlic
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • ½ teaspoon salt
  • ⅛ cup panko breadcrumbs
  • 1 cup Allie Carte homemade tomato sauce linked below
  • ¾ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • preheat oven to 400 degrees and line a cooking tray with parchment paper
  • place the ground chicken in a large bowl then sprinkle with the minced garlic, seasonings and breadcrumbs. Use your hands to completely mix up and combine
  • transfer the chicken onto the parchment paper. Press down and form into a round “pizza” shape. It should be about ½ to ⅔ the width of your finger
  • bake for approximately 20 minutes, until completely cooked. Turn on the broil for a minute or two if an extra crisp crust is desired
  • remove the chicken crust from the oven and top with the sauce and then the cheese. Bake for another 5 minutes, until cheese is melted
  • slice into six slices

Meatballs

Meatballs are so fun and easy to make! There are so many things you can do with them, especially when they are zero points! Some of my favorite ideas are spaghetti and meatballs, a hoagie or a cute appetizer. What would you do!?

Today I paired topped my meatballs with 2 tablespoons of G Hughes Polynesian sauce for 0 points. Seriously, this stuff is SO GOOD! You can order that here. I served that with ½ cup of extra long grain rice for 4 points. Delicious meal!

Spray your hands, or the ground meat, with cooking spray to prevent sticking! You can substitute ground turkey breast as well.

  • 16 ounces ground chicken breast 1 package
  • 2 tablespoons liquid egg whites 1 egg
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Instructions

  • preheat oven to 450 degrees
  • place ground chicken in a large bowl and sprinkle with the seasonings, mix up with a spoon
  • add the egg and breadcrumbs and mix well
  • divide chicken into 16 equal pieces, about a heaping ⅛ cup
  • spray chicken with cooking spray then roll each piece into a ball. The spray helps your hands not get to sticky
  • place on a greased baking tray and bake for 18 minutes. Flip and spray with cooking spray halffway

Cheeseburger Salad

excuse the language but... HOLY FREAKIN CRAP look at this salad!! I have not been THIS excited about a recipe in a long time... and it’s a salad!!! This is my cheeseburger salad and it’ll be the best thing you have ever made. I cannot stop craving it!! All the flavors just come together for an extremely delicious, but low point meal. You could also sub extra lean ground beef.

Ingredients
 

Dressing

  • ¼ cup plain, nonfat Greek yogurt
  • 1 tablespoon mustard
  • 1 tablespoon sugar free ketchup
  • 1 teaspoon Splenda
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dill pickle juice from a jar of pickles
  • 1 teaspoon water
  • 1 pinch salt
  • 1 pinch black pepper

Meat

  • 4 cloves minced garlic
  • 16 ounces ground chicken breast
  • ¼ teaspoon salt
  • 1 teaspoon minced onion
  • ⅛ teaspoon dill weed
  • ¼ teaspoon black pepper

Toppings

  • 12 pickles
  • ½ tomato cut up
  • ½ red onion sliced
  • ¼ cup reduced fat, 2% milk cheddar cheese
  • 2 green onions sliced
  • 12 ounces lettuce spring mix

Instructions

Dressing

  • combine all ingredients for the dressing in a small bowl and store in the fridge to allow the flavors to form together

Meat

  • heat a large greased pan over medium/high heat. Spray with cooking spray
  • add minced garlic and cook for about one minute, until fragrant
  • add the ground meat and break apart a bit. Season with the seasonings and continue to break apart and mix together while cooking
  • completely cook the chicken and set aside
  • (makes about 2 cups of ground meat, about ½ cup per serving)

Toppings

  • be sure the tomatoes and onions are chopped up. I even like to chop up my lettuce
  • divide everything evenly into four bowls and top evenly with the meat and dressing

Ingredients
 

  • ⅔ cup self-rising flour
  • ⅔ cup plain, nonfat Greek yogurt
  • 1 tablespoon garlic powder
  • 1 tablespoon light margarine ICBINB
  • 1 tablespoon parsley
  • 2 cloves minced garlic
  • 20 sprays butter spray

Instructions

  • Preheat oven to 350 degrees
  • Combine flour and garlic powder in a large bowl. Add yogurt and mix together with a large spoon until sticking together, about 2 minutes
  • Dump out on a clean surface and knead together for 3-5 minutes, until dough like
  • Spray a muffin tin with the butter spray, to grease. (5 sprays per muffin hole)
  • Evenly press the dough mixture into four muffin tin holes
  • In a small bowl, combine margarine, parsley and garlic cloves
  • Top each muffin evenly with the butter, parsley and garlic mixture
  • Bake for 20-30 minutes, until starting to brown

Allie Carte Tips: Don't have flour? No worries! Just add 1.5 teaspoons of baking powder and a pinch of salt to your flour. Stir it all together before adding any other ingredients. Make sure your self rising flour is not expired as well. If it is, just follow the steps above to fix it!

Turkey Burgers

I am a HUGE burger fan. And there’s nothing I love more on my burger than my BBQ Onion Jam. It adds to the flavor of any type of burger you’re making; I chose a turkey burger tonight and I would have to say it’s one of the best burgers I’ve ever had! No cheese needed when the patty and topping are this good!

Burger Ingredients

  • 16 ounces 99% fat free ground turkey breast sub ground chicken breast
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Onion Jam Ingredients

  • ½ white onion sliced
  • 2 tablespoons water
  • 2 tablespoons brown sugar replacement Swerve
  • 3 tablespoons sugar free BBQ sauce G Hughes

Instructions

Burgers

  • Heat a large pan over medium/high heat. Spray with cooking spray
  • Place ground turkey in a large bowl. Sprinkle evenly with the seasonings. Use your hands to thoroughly mix the seasonings into the meat
  • Form ground meat into 4 equal sized patties. Add to the heated pan and cook until thoroughly cooked, about 5-6 minutes per side, flipping once

Onion Jam

  • Heat a small pan over medium heat. Spray with cooking spray
  • Add sliced onions and cook until browned and soft, about 5-6 minutes
  • Add water and sugar, bringing to a boil and stirring until thickened, about another 5 minutes
  • Add bbq sauce, stirring until thickened

Pumpkin Pie Cream Cheese

It’s prime pumpkin season. And it cannot be pumpkin season without my PUMPKIN PIE CREAM CHEESE. I have made this for so many people and they are completely obsessed. It can be used on bagels as a spread or used as a dip!

I have been very into soup this season so I decided to turn my favorite meal (yes, tacos) into soup! Here it is... my taco soup!! It can be smooth (my preference) or chunky. Which do you prefer?

  • 1 tablespoon light margarine ICBINB
  • 4 cloves minced garlic
  • ¼ red onion diced
  • 1 can diced tomatoes 14.5 ounces
  • 1 cup chicken broth fat-free, low sodium
  • 16 ounces ground chicken breast or turkey breast
  • ¼ teaspoon ground red pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 tablespoon garlic powder
  • ¼ teaspoon salt
  • 1 tablespoon minced onion
  • ⅛ teaspoon black pepper
  • 2 teaspoons chili powder
  • ½ teaspoon paprika
  • 2 ounces ⅓ less fat cream cheese
  • 1 tablespoon plain, unsweetened almond milk

Instructions

  • Melt margarine in a large pot over medium/high heat. Add minced garlic and sauté for 1 minute, until fragrant. Add diced red onion and cook for about 3 minutes, until soft
  • Add in entire can of tomatoes (with the juice) and reduce the heat to low/medium. Add half the seasonings and stir together. Bring to a simmer and cover. Simmer for 15-30 minutes
  • Meanwhile, heat a large pan over medium/high heat. Spray with cooking spray
  • Add ground chicken and break up a bit. Sprinkle with the other half of the seasonings and break up while cooking
  • If you want a thin soup, transfer the tomatoes to a blender and blend until desired smoothness
  • Before adding the tomatoes back in, add the cream cheese to the pot and begin melting it. Add the almond milk to help it completely melt
  • Add the tomatoes and chicken in, stirring together
  • Simmer for about 5 minutes to allow the flavors to form together
