Teriyaki Bowls

Teriyaki bowls are the perfect meal prep or dinner! They are low in points but high in flavor! Serve over rice or cauliflower rice.

I typically make this with lean ground turkey breast but you can do ground chicken breast as well. You can also sub for lean ground beef which will add some points.

Then, I always top it off with lots of fresh greens!

Onion Rings

Warning: these onion rings are EXTREMELY addicting. But for real, these things are too good! It was hard not to devour every single one before taking this photo. (I definitely had a few though let’s be honest). They have the perfect amount of crunch with the perfect fried onion taste. UGH SO GOOD!!

I dipped them in my zero point healthy homemade ranch sauce but I also love them with my copycat bloomin onion sauce to give them a restaurant style feel. (Those recipes linked below)

Air Fryer General Tso Chicken

One of my specialties is takeout dishes and one of my favorite dishes is this air fryer general tso chicken made with a delicious, gluten free sauce.

General Tso Chicken is probably one of my most popular recipes. There’s no excuse to get takeout when we have AMAZING dishes like this one! I have been making this dish SO SO much recently and I don’t care! It’s insanely delicious, low on points and tastes just like the real thing! And don't worry, I always build in some extra sauce if you want to serve it over rice or veggies.

One of my specialties is takeout dishes and one of my favorite dishes is this air fryer general tso chicken made with a delicious, gluten free sauce.

Takeout is my absolute favorite cuisine (yes, it is totally a cuisine). Nothing even compares. But when your favorite dishes are a million points (not an over exaggeration), what do you do!? Well, I made my own. And lemme tell you, I haven't had takeout in years and I don't even miss it. My General Tso chicken is in my top two favorite recipes of mine (right behind sweet and sour). It is a fan favorite and probably better than takeout!

The recipe can be easily doubled, tripled, quadrupled, etc. It also makes great lunch leftovers! And don’t worry, I always build in extra sauce in my recipes to pour over your rice!

FAQs -

Do I have to make this recipe gluten free? I made my air fryer General Tso chicken with a gluten free sauce; however, you do not have to. Just swap out the gluten free item - soy sauce - for gluten filled alternatives.

Can I make this recipe another way? If you do not have an air fryer, you can make this chicken in the oven. It will not be as crispy; however, it will still be really good!

What You Need for General Tso Chicken

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. If you do not have an air fryer, you can bake the General Tso chicken nuggets in the oven; however, it does not come out as crispy.

For the ingredients, it kind of seems like a lot of things, but it really is quite simple to make. I will give you all the tips and tricks how to make the gluten free General Tso chicken sauce to make this recipe a breeze.

Gluten free general tso sauce ingredients
for the battered chicken:
  • Chicken
  • Corn Starch
  • Seasonings
Chicken Tenderloins

I  typically use chicken tenderloins when I need nuggets sized chicken, but you can use other cuts of chicken. Chicken tenderloins are already thin, so minimal cutting is required, which is why I like them. However, chicken breasts or chicken thighs can work well too. But, you can use beef, pork or even tofu if you are vegetarian. Any kind of protein will work great in this recipe. Remember to cut the chicken, or your preferable substitution, in the same size, so they are all cooked simultaneously.

Corn Starch

Corn starch is really great in this recipe, but there are other ways to coat chicken. If you have flour, that works great here as well. Alternatively, a mixture of flour and breadcrumbs can work as well. If you do not want to make battered General Tso chicken, you can skip coating the chicken and just cook it to your preference.

for the yummy sauce
  • Chicken broth
  • Sugar free BBQ sauce
  • Rice vinegar
  • Soy sauce
  • Brown sugar replacement
  • Cornstarch
brown sugar

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use the Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

Soy Sauce

For the soy sauce, this is a gluten free General Tso chicken sauce; therefore, I use the gluten free substitutes. I also use the low sodium version as well. However, you are welcome to use whatever kind that you like.

BBQ Sauce

My favorite BBQ sauce is the G Hughes sugar free version. That is what I typically use; however, you can use your favorite brand of sauce.

for the slurry

What is a slurry? It is a liquid-y mixture that makes the sauce thick! It just combines corn starch with some water. Add that into the sauce, after it is made, until you reach your desired thickness.

how to make General Tso chicken

Add sauce, slurry and coating ingredients to three separate bowls. Stir each to combine.

how to make Air fryer General Tso chicken nuggets

Preheat your air fryer to 400 degrees and grease it with cooking spray. Cut chicken tenderloins up into bite size pieces, about 1 inch by 1 inch. One by one, add chicken pieces to the cornstarch mixture and roll chicken nuggets around the corn starch until evenly coated.

step 1: cut chicken nuggets

Once all the chicken nuggets are coated, place in the greased air fryer and air fry for 1 minute. Spray chicken with cooking spray (this will emulate actual frying, while keeping this orange chicken healthy) then air fry for another 3 minutes. Flip/shake the chicken and spray with cooking spray again. Air fry for another 4-6 minutes, or until thoroughly cooked.

step 3: nuggets on air fryer rack
how to make the gluten free General Tso chicken sauce

Then, let's go over how to make the gluten free General Tso chicken sauce. As mentioned, it does seem like a lot of ingredients but I promise it is so easy to make, and most importantly, so worth it.

While the chicken cooks, heat a medium sized pan over medium heat on the stove. Add the sauce and stir until it comes to a boil. Turn down the heat to low/medium and let the sauce simmer for about 5-6 minutes, until thickening. Slowly stir the slurry into the sauce until desired thickness is reached.

Once the chicken is cooked and the sauce is thickened, toss it all together!

air fryer general tso chicken

There will be enough sauce to have some rice, you can either make my instant pot rice or my stovetop rice.

other ways to cook the chicken

If you do not have an air fryer, you can still make General Tso Chicken. Just bake these in the oven at 425 degrees for 10-12 minutes. Be sure to follow the same instructions for spraying and flipping the chicken.

Low carb ideas

If you want to make this recipe lower carb, you can skip the breading part. This air fryer General Tso chicken is amazing without breading too! Also, instead of rice, try some riced cauliflower. It is delicious with this sauce.

homemade bang bang sauce recipe with chicken and shrimp

Bang Bang Sauce

My homemade bang bang sauce recipe is the best way to spice up some chicken or shrimp. It only takes a few ingredients and a few minutes to create. The sauce is spicy, yet slightly sweet, and super creamy.

homemade bang bang sauce recipe with chicken and shrimp

What is Bang Bang Sauce

I was first introduced to this sauce at one of my favorite restaurants - The Cheesecake Factory. They have a bang bang chicken and rice bowl that is absolutely amazing. I would get that every time. Bonefish grill also has a bang bang shrimp dish that is really good too!

But, bang bang sauce is basically a creamy sauce that is spicy, yet a little sweet. This is from the sweet Thai chili sauce. My homemade sauce recipe subs out the typical mayo for a healthier alternative - plain, non-fat Greek yogurt.

The word 'bang' comes from the sound of deep frying the chicken or shrimp!

Ingredients

You only need a few ingredients to make this homemade bang bang sauce recipe.

  • Plain, Non-fat Greek Yogurt
  • Sweet Chili Sauce
  • Sriracha Sauce
  • Rice Vinegar
  • Splenda (optional)
ingredients

A typical sauce is made with mayo; however, I am substituting that with a healthier alternative: plain, non-fat greek yogurt. You can still use the mayo; however, Greek yogurt provides some protein to the sauce.

I typically use G Hughes sweet chili sauce; however, you can use any brand that you like. I do not find the G Hughes to be too sweet; therefore, I add some Splenda, or sugar, in as well.

How to Make Bang Bang Sauce

The recipe is very easy and only requires minutes of prep time; but, you will need some extra resting time.

All you need to do is mix together the ingredients in a bowl or Tupperware container; but, you can really use whatever vessel you have.

You should store the sauce in the fridge, for at least 30 minutes, to allow the flavors to form together. However, if you are low on time, you may skip this step.

What Dishes Should I Serve with Bang Bang Sauce

My favorite dish to serve this sauce is over some grilled chicken or shrimp. That is what you would typically see at a restaurant; however, there are so many great options for a protein here. Plus, you can also bread and air fry the shrimp for a crispy meal.

For a side, I love doing either rice or rice noodles; but, you can choose your favorite protein.

How to Store Bang Bang Sauce

Be mindful of when you opened your yogurt. A Greek yogurt is typically only good, opened, for 5 days in the fridge. To store the actual sauce, place it in an air tight container in the fridge. You can keep the sauce for up to 5 days from when the yogurt was opened.

I will only sauce the protein and sides that I am eating and then store everything separately in the fridge. I do not find that the meal holds up well in the fridge being pre-sauced.

Expert Tips

After mixing together all the ingredients, store in the fridge for at least 30 minutes to allow all of the flavors to mend together.

Serve cold with grilled chicken or shrimp for the best results.

Add more of less sriracha sauce depending on how spicy you like things! Plus, you can always add some Splenda or sugar to sweeten up the sauce.

Make sure you pair it with my copycat sauce.

  • 1 teaspoon salt
  • 1 pinch black pepper

  • Brush each petal with egg wash, being sure to carefully lift up the petals to cover each piece. Shake off the excess egg
  • Add the cornmeal to the flour bowl and stir to combine. Sprinkle this mixture over the onion, being sure to carefully lift each petal to cover all surfaces

Candied Carrot Chips

WOW. Just WOW. That is literally the only word I can think of to describe this recipe. My candied carrot chips are the greatest thing since sliced bread, but hey, I may be a little biased. I crave carrots ALL the time now, who knew that was even possible! I usually make an entire bag at a time but that gets a little dangerous because these are impossible to stop eating. Husbands love them and kids ask for more! The perfect addition to your dinner!!

  • ⅛ teaspoon cinnamon
  • 1.5 tablespoons brown sugar replacement Swerve

Instructions

  • Preheat oven to 450 degrees
  • Spray a baking sheet with cooking spray (I do not like using real oil for these carrots as it slides right off and makes the bottom very gross and oily)
  • Add carrots and spray with cooking spray then sprinkle with all the seasonings. Toss to evenly coat
  • Bake for 20-22 minutes, flipping halfway, just until a few edges start to brown

Copycat Chick-fil-A Grilled Nuggets

The only recipe you need for the best copycat Chick-fil-A grilled chicken nuggets that are the compete dupe to the restaurant ones! Now you can enjoy everything about the drive-thru at home!

The only recipe you need for the best copycat chick-fil-a grilled chicken nuggets that are the compete dupe to the restaurant ones!

Did You Know?

Did you know that Chick-fil-A actually brines their chicken in pickle juice. That is what we are going to do for our Copycat Chick fil A grilled nuggets! I get it, I am not the biggest pickle fan either; however, this step is essential. It does not have an overly pickle flavor, just really a hint, and only if you are really looking for it.

I, also, get this question a ton: where do you get pickle juice? Well, from a jar of dill pickles!! Just pour some out from your favorite jar of pickles and you have your pickle juice.

Sauce It Up!

Need a sauce for this? Try my copycat Chick-fil-A sauce, you know, the original stuff. Or, try my copycat Polynesian sauce! Only 1 points for 2 tablespoons.

Substitutions and Suggestions

I use chicken tenderloins as they are already thin; therefore, less cutting. However, you can use any cut of chicken, you might just need to do some more cutting.

I get this question a ton: where do you get pickle juice? Well, from a jar of dill pickles!! Just pour some out from your favorite jar of pickles and you have your pickle juice.

Now, this is a hot topic as well... milk. Personally, I use plain unsweetened almond milk for just about everything. However, you can use another type of milk. I love almond milk because it is light and lasts longer in the fridge. However, I know people do not prefer it or have allergies; therefore, pick your favorite milk. The specific milk does not matter too much.

More the seasonings, use what you like. I keep it simple for these copycat nuggets; however, I really think Chick-fil-A needs a spicy grilled nugget. Try some ground red pepper in these too or marinate the chicken in some hot sauce.

How to Make Grilled Nuggets

Cut each chicken tenderloin up into bite-sized pieces, I do about 1 inch by 1 inch. In a large bowl, combine pickle juice and milk. Add cut up chicken, cover and allow to marinate in fridge for at least 30 minutes or up to all day (8 hours).

marinating the nuggets

Once ready, strain chicken pieces from the marinate and pat dry, slightly, with a paper towel.

Get your grill ready and heated. Add chicken to the grill and sprinkle with the salt, garlic powder and pepper. Grill chicken pieces on both sides until thoroughly cooked. (Please note that grilling times vary widely)

cooking the chicken

This recipe is also great in the oven (at 450 degrees for about 10 minutes), in the air fryer (at 400 degrees for about 8 minutes) or on the stove top!

  • Place coated chicken in the air fryer and air fry for 1 minute. Pull the tray out and spray chicken with cooking spray (I prefer Pam butter flavor). Air fry for another 3 minutes
  • Pull the tray out and flip the chicken over. Spray again with cooking spray and air fry for another 4-5 minutes, until fully cooked
  • Or bake in the oven at 450 degrees for 8-10 minutes, flipping halfway. Or cook on the stove with 1 teaspoon of light olive oil

Sauce

  • Meanwhile, in a small pan over medium/low heat, melt the margarine
  • Once melted, add the garlic and ginger, cooking for about 1 minute, until fragrant
  • Add the soy sauce, honey and brown sugar into pan with the butter. Stir together and bring to a slight boil and simmer until thickened
  • Once chicken is cooked, add to the pan of sauce and toss to coat
