How to Make a Weight Watcher Friendly Charcuterie Board

I cannot deny that I have been absolutely OBSESSED with charcuterie boards lately. They are so easy to throw together and even more amazing to enjoy. I know what you are thinking, cheese boards are so unhealthy. Well, yeah, they can be. But with these tips and tricks, I will show you how to make a Weight Watcher friendly!


Start with a SMALL board. Portion control is everything. If I build a huge board, with pounds and pounds of meat, cheese and bread, I WILL EAT IT ALL. I use a small board to resist the temptation to eat way too much. A small board limits the amount of food you can eat. After building the board, I package up all the food and put it back into the fridge.


The next step is to start off with zero point, healthy foods: fruits and vegetables! For this board, I went with apples and bell pepper slices. I love using cucumber, broccoli, celery or carrots as well. Any fruit or vegetable you love can be used in this step, just be sure to slice it up into thin pieces to easily enjoy.


Next, choose some lower-fat cheese. Shop around at different stores to find the perfect cheeses for the perfect price. Publix has a great white sharp cheddar for less than $5. Walmart has lower fat mozzarella cheeses. Kraft has some 2% milk cheeses that would work great. Try to stay away from cheeses that have a higher fat content, such as brie and mascarpone.

Cabot brand has low-fat cheeses- 1 ounce for 1 point.

Trader Joe’s has a light Brie (my fave) which is 2 points for 1 ounce.

Belgioioso Fresh Mozzarella is 1 ounce for 2 points.


Next, opt for reduced-fat meats. Publix has some amazing reduced-fat salami and pepperoni that I love (8 slices for 3 points). I usually go for those two. Opt for more naturally lower fat meats, such as prosciutto or Canadian bacon, and try to stay away from higher fat meats, such as pancetta.


Choose a good, low point cracker. My absolute favorite is Good Thins. I went with Good Thing sea salt for this board. They are gluten-free and only 3 points for 41 pieces!!! The Parmesan and garlic version is amazing too; 4 points for 17 pieces.


Finally, top off your charcuterie board with more zero points items such as cranberries, grapes or olives.

Add some herbs for color if you wish!

Worcestershire Onion Burgers

Love the taste of beef burgers but don't love all the points that come with them? Well, I have you covered with my Worcestershire Onion Burgers! Spice up ground chicken with my recipe to make a burger that tastes like beef. Best burger you have ever had and I guarantee it!

Worcestershire Onion Burgers

Ingredients
 

  • 16 ounces ground chicken breast
  • ⅛ cup fresh minced diced onion
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ cup Worcestershire sauce
  • ½ tablespoon panko breadcrumbs

Instructions

  • In a large bowl, combine all ingredients and mix very well with your hands
  • Divide meat into four equal pieces and form each into a patty shape, slightly larger than the size of your bun
  • Heat a large pan over medium/high heat, greased with cooking spray
  • Place all the patties on the heated pan and cook for 10-15 minutes, until fully cooked, flipping every 2-4 minutes
  • Can also grill the burgers!

Instapot Crispy Chicken Carnitas

Wishing Taco Tuesday was everyday with my crispy chicken carnitas! They are made in the Instapot which is my favorite thing because all you need to do is dump the ingredients and press go! Your whole house will fill with the smell of these DELICIOUS and IRRESISTIBLE carnitas. The meat is amazing in tacos, on its own or as a rice bowl. Plus it makes great leftovers or a meal prep. Which would you choose! I added cilantro and diced red onions over mine and made a bowl.

A quick hack too: Use a hand mixer to shred the chicken after cooking. Bring all the chicken to a mixing bowl, as to not scratch the instapot, then easily shred the chicken with the hand mixer. I use my Oster hand mixer that has heat soft technology. I love the heat soft for tons of different recipes. I highly recommend this one. I will link that below.

Instapot Crispy Chicken Carnitas

Ingredients
 

  • 2 teaspoons olive oil
  • 16 ounces chicken breast two pieces
  • ⅛ red onion
  • 4 cloves minced garlic
  • ½ cup chicken broth fat-free, low sodium
  • ⅛ cup lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ¼ teaspoon black pepper
  • ½ teaspoon oregano

Instructions

  • Dice red onion and set aside
  • Add half the oil (one teaspoon) to your Instapot and turn it to the saute setting. When the oil heats up, add the chicken breasts (whole) to the pot and sear both sides for about a minute
  • Remove chicken and set aside on a clean plate
  • With the Instapot still on the saute setting, add diced red onion and garlic. Saute for one minute
  • Turn the Instapot off
  • In the instapot, add the remaining ingredients and seasonings and stir together. Add chicken breasts back in to the Instapot with all the ingredients
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 20 minutes and start it
  • Once completely cooked, vent and de-pressurize the instapot then open the lid. Place the chicken in a bowl with ¼ cup of the sauce from the Instapot. Shred with two forks or the hand mixer
  • Add shredded chicken to a greased baking tray with the remaining (one teaspoon) oil. Toss to coat
  • Broil on high for 5 minutes, or until desired crispyness
  • Return chicken to the sauce from the Instapot and store/serve with the juices

Mexican Stuffed Peppers

What’s your go-to easy dinner? Mine has to be stuffed peppers; they’re a necessity in my house! My current favorite version is these MEXICAN STUFFED PEPPERS. I love how quick I can whip them up and the amazing flavor they provide. Plus they’re super healthy because they’re packed with veggies! The perfect easy dinner + meal prep + lunch leftovers!

Mexican Stuffed Peppers

makes 3 whole peppers; 1 whole pepper (two halves) per serving

Ingredients
 

  • 3 bell peppers
  • ½ cup dry rice about one cup cooked
  • ¼ white onion
  • 3 cloves minced garlic
  • 16 ounces ground chicken breast one package
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ cup Taco Bell Sauce mild or hot
  • ¼ cup cooked riced cauliflower

Instructions

  • preheat oven to 425 degrees
  • slice and de-seed/core peppers. Place on a greased baking tray, cut side up, and bake for 20-25 minutes, until desired wellness
  • cook rice according to package directions and set aside
  • heat a large pan over medium/high heat. Grease with cooking spray
  • dice onion then place onion and minced garlic on the heated pan. Saute until slightly soft, about 3 minutes
  • add ground chicken, as a whole piece, to the pan and cook for 2 minutes to allow it to brown. Do not begin to break up yet. Flip over and brown the other side for 1 minute
  • Once browned on both sides, begin to break up. Add all the seasonings and continue to break up while cooking
  • Once almost cooked, add the Taco Bell sauce and bring to a simmer until chicken is completely cooked, all the pink is gone
  • Once chicken is completely cooked, add the rice and cauliflower and toss to combine
  • Stuff chicken into the peppers and enjoy!
  • Optional to add cheese to the tops and broil. Can also top with salsa and/or sour cream/nonfat greek yogurt

Balsamic-Glazed Salmon

HAPPY NEW YEAR! What are your New Year’s Day traditions? We usually make some type of seafood, usually crab legs or shrimp. Today we decided on BALSAMIC GLAZED SALMON. You know I rarely post seafood on here, so when I do, it has to be GOOD. My dish makes the most perfect, flaky salmon with the perfect, slightly sweet glazing on top.

Balsamic-Glazed Salmon

Ingredients
 

  • 8 ounces salmon fillets
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 cloves minced garlic
  • ⅛ cup balsamic vinegar
  • 1 teaspoon honey mustard Skinny Girl
  • ½ teaspoon honey

Instructions

  • Preheat oven to 400 degrees
  • Heat a small pan over medium heat. Spray with cooking spray
  • Add minced garlic and saute for one minute, until fragrant. Add the balsamic vinegar, honey mustard and honey and stir together
  • Bring to a slight simmer and simmer for about 3 minutes, until thickened
  • Remove skin from the salmon fillets and sprinkle evenly with the salt and pepper
  • Place salmon on a baking tray greased with cooking spray. Brush the salmon fillets with half the thickened balsamic. Bake for about 10 minutes, until flakey
  • Once cooked, brush the remaining glaze on the salmon fillets

Air Fried Chicken Tenders

The most basic (however, so extremely delicious) air fryer recipe: CHICKEN TENDERS! Who agrees that chicken tenders are an adult food 🙋🏼‍♀️ I could eat these everyday; they are so moist but crunchy on the outside. Easy to make and great to enjoy!

I served mine with some french fries, that I made in the other side of my double basket air fryer, the best invention!!!

Fun fact: my nickname growing up was curly fry, so I have a special place in my heart (and stomach) for curly fries!

I also dipped my tenders, and fries, in G Hughes sugar free ketchup. It is the best ketchup on the market! Zero points and 10 calories for two tablespoons. I order a three-pack of amazon and I always have tons in stock.

Air Fried Chicken Tenders

Ingredients
 

  • 16 ounces chicken tenderloins about 6 pieces
  • ¼ cup flour
  • ⅛ cup panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon paprika
  • ¼ cup liquid egg whites or two eggs whisked

Instructions

  • grease air fryer with cooking spray and preheat to 400 degrees
  • in one a small bowl, combine flour, panko and seasonings. In another bowl, pour the eggs
  • one by one, dip chicken in the eggs then toss in the flour mixture, to completely coat
  • place in the greased air fryer, in a single layer trying not to let the chicken pieces touch, as best as possible. You may need to cook in batches if you have a smaller air fryer. If cooking in batches, do not bread chicken until ready to cook as the flour will just melt into the chicken
  • air fry for 2 minutes Pull tray out and spray chicken with cooking spray (I love using Pam butter spray). Air fry for another 3 minutes. Remove chicken and flip over, spray with cooking spray then air fry for another 4-5 minutes, or until thoroughly cooked
  • (Skip the air fryer and bake in the oven for 15 minutes, flipping halfway, until thoroughly cooked)

Jello Candied Grapes

I love having really good healthy alternatives to snack on. It makes it even better when the snack looks this pretty. Total holiday, snowball vibes, am I right!? These jello candied grapes are so good, especially frozen. We used them in our charcuterie board and they made the perfect addition!

Jello Candied Grapes

Ingredients
 

  • 48 grapes
  • 1 package Jell-O Sugar-Free Instant Pudding Mix I used cheesecake flavor
  • toothpicks

Instructions

  • rinse grapes and do not dry. They will need to be slightly damp
  • dump Jell-O mix out in a small bowl
  • set out a large/wide freezer safe container
  • one by one, toothpick a grape and roll it out in the Jell-O mix. Use the flat end of another toothpick to remove the grape from the toothpick into the container
  • repeat the previous step for each grape, until all of them are covered in Jell-O. Be sure the grapes are in a single layer in the container or use a second container
  • freeze for one hour then enjoy!

Instapot Rotisserie Chicken

I love making a whole chicken! The first dinner eating it, it’s so warm, moist and absolutely amazing! You just want to devour it all. But it doesn’t just end there, the rest of the chicken makes the most perfect lunches! Use it for wraps, rice bowls, sandwiches, whatever! I typically just eat the white meat without the skin and my husband will eat the rest of it so I save points. With the holidays a little smaller this year, making this roast chicken in the Instapot has been amazing. The perfect size for just the two of us!

I linked the video I always play when I have to gut the chicken (well let’s be honest, I make the husband do it haha!)


Instapot Rotisserie Chicken

Ingredients
 

  • 1 whole chicken
  • 1 teaspoon rosemary
  • 1 teaspoon seasoned salt
  • ¼ teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1.5 cups chicken broth fat-free, low sodium
  • 1 tablespoon lemon juice

Instructions

  • Clean and gut the chicken. Perdue has a great option that is already gutted
  • Season the outside of the chicken with all of the seasonings
  • Place chicken broth and lemon juice in the instapot
  • Place the wire roasting rack into the Instapot then place the chicken on the rack, sternum side up
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 6 minutes PER POUND and start it. We usually do a 5-6 pound chicken
  • When the time is up let the pot sit for 10-20 minutes and then move the valve to venting. Remove the lid and serve
there are no points for any ingredients besides the chicken. points will depend on which part and how much of the chicken you eat. estimate or use a food scale. remember, dark meat has points/more points!
great for lunch leftovers!!

Instapot Cheesy Chicken Rice and Broccoli

I have been absolutely loving my Instapot lately! It is so easy to throw everything into the pot, UNCOOKED, and it all comes out perfect in just a few short minutes. I whipped up a classic, easy dish, instapot cheesy chicken, rice and broccoli casserole and it was amazing. A perfect holiday dinner or meal prep idea!

Instapot Cheesy Chicken Rice and Broccoli

  • ½ cup dry rice extra long grain
  • 1 cup chicken broth fat-free, low sodium
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 9 ounces chicken breast
  • 1 head of broccoli
  • ½ cup reduced fat, 2% milk cheddar cheese shredded

Instructions

  • Cut up chicken and broccoli into bite-sized pieces, about 1 inch by 1 inch
  • Grease your instapot with cooking spray or use the nonstick insert
  • Add, rice, chicken broth and seasonings into the Instapot, stir together
  • Add chicken and broccoli on top. Do not stir together
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When the time is up let the pot sit for 5 minutes and then move the valve to venting. Remove the lid when depressurized
  • Add the shredded cheddar cheese then stir together until melted

Healthy Peppermint Bark

What food screams the holiday season to you? For me it’s peppermint bark. You know that giant box from Costco they put out every year, yeah I could totally eat the whole thing. This year I won’t be tempted because I created the most delicious attentive. It’s filled with protein from the yogurt but still gives you the sweet taste with the chocolate chips and candy cane. It’s so low in points, you can enjoy way more than one piece!!

Healthy Peppermint Bark

Ingredients
 

  • 2 cups plain, nonfat Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 tablespoons confectioners sugar replacement Swerve
  • ⅛ cup mini semisweet chocolate chips
  • 2 candy canes normal-sized

Instructions

  • Place yogurt, sugar and vanilla in a blender and blend until smooth. You can also vigorously stir together
  • Line a 9x13 pan or casserole dish with parchment paper then pour the yogurt out onto it. Spread until smooth and even
  • Crush candy canes up in a sealed plastic baggie
  • Sprinkle crushed candy canes and chocolate chips over the yogurt mixture
  • Freeze for 6-8 hours, or overnight
  • Once compeltely frozen, remove from freezer and let thaw for 5 minutes. Cut/ break into 16 pieces and enjoy!

Instant Pot Penne alla Vodka

Instant pot penne alla vodka and sausage is made with my skinny, weight watchers’ approved creamy vodka sauce. Fun fact: my family is OBSESSED with penne alla vodka. When I tell you obsessed, I mean ridiculously beyond crazy obsessed. We can go to an Italian restaurant every night for a good penne vodka dish. But that can get very very high in points. So, as I usually do, I said, why don’t I put my Allie Carte spin on it and make something extremely delicious that’s low in points! How good does this super creamy, tasteful sauce look! I pair it with sausage because that goes perfectly with this dish!

This skinny vodka sauce is so rich and creamy. Trust me, when I say I know penne alla vodka, I KNOW penne alla vodka. I am a penne alla vodka snob, there is a very limited amount of restaurants that stand a chance when I am around. I am telling you, I was BRED to know a really good vodka sauce. That is why I know for a fact mine is amazing. You will not be disappointed. Plus, can you believe this is a Weight Watchers' friendly penne alla vodka that is made in the Instant Pot! Cannot get much more simple, healthy, or delicious than that.

  • Use any sausage, or don't use any at all
  • A non-stick bowl insert makes for an easy clean up

What You Need for Instant Pot Penne alla Vodka and Sausage

You will, of course, want to grab your Instant Pot and your non-stick bowl insert. I love using a non-stick bowl insert as it helps the food not stick and makes for an easier clean up. However, you can use a regular insert, just be mindful of everything sticking. If you do not have an instant pot, try out my stovetop light vodka sauce.

Additionally, you need to use a wooden spatula / spoon with the Instant Pot as a plastic one will melt right off and a metal one will scratch the bowl.

Then, the ingredients may seem like a lot, but I promise it is very simple. We will not be using any vodka, as that is just all sugar, and we will not be using any heavy whipping cream. It is also not spicy, as some vodka sauces can be; however, we can make it spicy.

  • Crushed tomatoes
  • Minced garlic
  • White onion
  • Penne pasta
  • Chicken broth
  • Cream cheese
  • Parmesan cheese
  • Sausage

Substitutions and Suggestions for Instant Pot Penne alla Vodka

We can go over my suggestions and any substitutions.

Crushed Tomatoes

This is just a normal, 14.5/15 ounce can of diced tomatoes. Make sure you are being conscious of the ingredients as we do not want any added sugar or anything as this is a skinny vodka sauce. Alternatively, grab some diced tomatoes and make sure to blend them into a liquid.

Penne Pasta

Penne alla vodka does call for penne pasta, that is a given. In all seriousness, the shape of pasta does not matter too much. Rigatoni and bowtie will cook the same, and I like using those shapes as well. However, be mindful of smaller shapes such as elbow as they will cook too quickly and turn into mush, that is gross.

Chicken Broth

Typically, I use chicken broth as that is what I always have on hand. Plus, I am using chicken sausage, so it complements the flavor. However, you can use another type of broth but be mindful as I use low sodium. Alternatively, use water but I do like using broth for added flavor.

Cream Cheese and Parmesan Cheese

This recipe will call for ⅓ less fat cream cheese and reduced fat parmesan cheese, as this is a skinny vodka sauce. In order to maximize the amount of penne alla vodka I am going to eat on weight watchers, I am saving some points on the cheeses. However, if you are not being conscious about all of that, or just do not want reduced fat, use a regular cream cheese and parmesan, it will be okay. I use the grated fake parmesan that comes in a jar in the pizza sauce aisle of the grocery store. Whoops, don't tell at me. Yes, I am Italian, seriously, like a quarter Italian, but I am using the fake parmesan cheese.

Sausage

Instant Pot penne and sausage needs some sausage. I am using a semi-healthy sausage, Boar's Head robust Italian sausage. See, Italian, people! This is a chicken sausage, I love chicken. Plus, we are trying to keep it low point here. This is a barely slightly spicy sausage but it has such a good flavor that pairs very well with this recipe. However, you can use any sausage that you want, just be sure that it is not raw as we will not be cooking it in the Instant Pot. It needs to come already done. I have made this with pork sausage and it is delicious.

How to Make Instant Pot Penne alla Vodka

Prepping

The instant pot goes quick, and I mean QUICK. You will want to make sure you have everything ready and prepared before you even think about turning on that Instant Pot.

Start by prepping the sausage and vegetables. Begin by slicing the sausage and dicing the onion. You may also want to prepare the seasonings to easily dump them in when the time is right.

Cooking Instant Pot Penne alla Vodka

Turn the Instant Pot to the sauté setting and grease the bottom with some cooking spray. You can alternatively use oil or butter to grease the bowl as well.

When the pot heats up, add in the minced garlic and the diced onion. Sauté for about a minute or two, until the onion is slightly soft. You need to use a wooden spatula / spoon with the Instant Pot as a plastic one will melt right off and a metal one will scratch the bowl.

Turn the Instant Pot off, yes off.

Pour the broth into the bottom of the dish. The broth allows the Instant Pot to pressurize. Add in the pasta and press down slightly to make sure all, or most, of the pasta is covered in the broth. Pour the crushed tomatoes on top of the pasta. Add the seasonings and stir just a little, trying not to disturb, mess with, the pasta at the bottom. Then top with the sliced sausage. You can skip the sausage, if you prefer; however, this is an Instant Pot penne and sausage recipe and I love a sausage with some vodka sauce.

You can add in the cream cheese, cut up into pieces, and parmesan at this point. However, I just put it in after.

Cover the pot and secure the lid, make sure that the valve is set to sealing. Click the pressure cook button and pressure cook on normal for 5 minutes. Yes, 5 minutes is all it takes. Remember, the sausage does not need to cook, just the pasta.

Post Cooking

When the timer is up, let the pot stand for 3 minutes before touching it. Once the three minutes are up, move the valve to venting. When the pot is de-pressurized, remove the lid.

Turn the Instant Pot back to the sauté setting. Add in the cream cheese and parmesan cheese, mixing until everything is melted and combined.

Alternative Recipes

Gluten Free or Vegetarian?

Looking to make this a gluten free penne alla vodka or a vegetarian penne alla vodka. Well, there is technically no meat in the sauce, just the sausage that is placed on top. You can easily skip that step and just have extra sauce for the pasta.

As for a gluten free dish, substitute gluten free penne (I like Barilla) and cook it for an extra minute. Gluten free pasta takes a little longer to cook so set the pot to 6 minutes.

Leftovers

If you have leftovers, they will be good in the fridge for a couple days. Check the label of your sausage to see what they recommend. You can make the skinny vodka sauce and pour it over chicken as well, it makes a great meal prep.

Sausage Spinach Pasta

  • 6 ounces pasta dry
  • 2 cloves minced garlic

  • 16 ounces ground sausage
  • ½ teaspoon salt

  • 3 cups baby spinach
  • ¼ cup reduced fat parmesan cheese

Instructions

  • Cook pasta according to the instruction. Reserve ¼ cup of pasta water then drain well and set aside
  • Heat a large pan over medium/high heat. Spray with cooking spray
  • Add garlic and saute for 30 seconds
  • Add diced onion and saute for 1-2 minutes, until soft
  • Add the ground sausage and begin breaking it up. Season with the seasonings and continue to break up while cooking
  • Once almost cooked, add spinach (yes, it looks like a lot but it wilts) and stir up just a bit. Cover the pan until spinach is wilted and sausage is completely cooked
  • Remove the lid then add the parmesan cheese and cream cheese. Stir until completely melted
  • If needed, add a splash of pasta water until desired thickness is reached

Pressure cooker meaty marinara is the perfect recipe. I usually make mine with 99% lean ground turkey but it can be made with pretty much any meat you love! Just press go and your meal is ready! This dish makes a ton of sauce so it’s perfect for the whole family or meal prep.

Instructions

  • Tip: measure out all seasonings in a bowl before getting started. This recipe goes quick!
  • Blend tomatoes completely then set aside
  • Turn your Instapot to the saute setting. When the display says HOT add in the oil and allow it to heat up
  • Add in the garlic and saute for 30 seconds
  • Add in the ground chicken and the seasonings. Break up the chicken while mixing in the seasonings. Brown chicken for about 3 minutes then turn off the saute on the Instapot
  • Add in the pasta noodles (dry). Pour the broth and blended tomatoes around the pasta
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 6 minutes and start it
  • When the time is up let the pot sit for 3 minutes and then move the valve to venting. Remove the lid and serve with fresh herbs

Instapot Pulled BBQ Chicken

There is nothing like a good pulled BBQ chicken sandwich. The pressure cooker makes everything so simple and so easy. Everything just goes straight into the pot and somehow magically, everything is done in just a few minutes. I used mine this weekend to make some pulled BBQ chicken. It turned out absolutely amazing and there is plenty for leftovers, because I will be needing a lot more of this!!! I paired it with a Smart Baking Company bun for 1 point, some coleslaw and red onion. Really good!! It is also amazing on its own or with some mashed potatoes.

Instapot Pulled BBQ Chicken

Ingredients
 

  • ½ cup chicken broth fat-free, low sodium
  • ¾ cup sugar free BBQ sauce G Hughes
  • 2 cloves minced garlic
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons brown sugar replacement Swerve
  • 2 teaspoons paprika
  • 1 teaspoon red pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons honey
  • 1 tablespoon dill pickle juice from a jar of pickles
  • 1.5 pounds chicken breast skinless, boneless

Instructions

  • Add chicken broth to the Instapot
  • Add the remaining ingredients (except the chicken), carefully to the center of the Instapot and stir just a little to slightly combine; you don’t want to disturb the broth on the sides too much as that is what pressurizes the Instapot
  • Carefully place the chicken into the center of the Instapot
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 10 minutes and start it
  • Once completely cooked and finished, let the Instapot set for 10 minutes. After those 10 minutes, vent and de-pressurize the instapot then open the lid
  • Shred the chicken with two forks or place in a different bowl and use a hand mixer to completely shred the chicken
  • Set the Instapot to the saute mode
  • Bring BBQ sauce to a slight simmer and simmer for about 5 minutes, until thickened, stirring every 30-60 seconds

Pizza Stuffed Peppers

I’m really about making every dish into a pizza party. Who’s with me!? These are my pizza stuffed peppers and they truly bring stuffed peppers to a whole new level. They’re the most delicious way to get that pizza flavor in while incorporating lots of protein and veggies.

Pizza Stuffed Peppers

Ingredients
 

  • 16 ounces ground chicken breast or 99% fat free ground turkey
  • 3 red bell pepper
  • 2 cloves minced garlic
  • 14.5 ounces diced tomatoes one can
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onion
  • 1 teaspoon Italian seasonings
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup reduced fat, part skim shredded mozzarella cheese
  • 12 slices turkey pepperoni

Instructions

  • Preheat oven to 450 degrees. Cut peppers in half and deseed/core. Spray a baking tray and both sides of the peppers with cooking spray.
  • Season both sides of pepper (with additional salt and pepper to taste) then place in oven, on the cooking tray, for 20-25 minutes, insides facing up (until soft and starting to brown)
  • Spray a large pan with cooking spray and heat up on the stove over medium heat. Cook garlic and cook for two minutes, until fragrant
  • Add ground chicken and season with the seasonings. Break up the chicken and stir until completely cooked
  • Add in the crushed tomatoes and allow them to simmer for 3-5 minutes
  • Stuff meat mixture into the peppers, evenly top with cheese and pepperoni then bake for another 5 minutes or until cheese is melted

Buttery Lemon Pepper Chicken

I was in the mood for something light and bright today so I whipped up my buttery lemon pepper chicken. You guys, this tastes just like Wing Stop’s lemon pepper wings which used to be a favorite of mine. My dish is only one point and let’s not even begin to talk about how many points are in wings!!

Buttery Lemon Pepper Chicken

  • 8 ounces chicken cutlet chicken breast cutlet
  • ¼ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Season both sides of each chicken with the seasonings
  • Heat a medium-sized pan over medium heat; grease with cooking spray. I prefer Pam Butter Spray for this one!
  • Ad chicken and cook almost thoroughly, about 4-5 minutes per side
  • Once almost cooked, add lemon juice and margarine, searing both sides as the margarine melts. Cook chicken in the butter until completely cooked
  • Top with fresh parsley

Broccoli Cheddar Stuffed Peppers

MEAL PREP IDEA! What are you having for lunch this week??

Ingredients
 

  • 2 bell peppers
  • 16 ounces ground chicken breast or 99% fat-free ground turkey
  • 1 head of broccoli
  • ½ cup reduced fat, 2% milk cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasonings
  • parsley for topping
  • ¼ cup chicken broth fat-free, low sodium

Instructions

  • Preheat oven to 450 degrees. Slice and deseed/core peppers. Place on a greased baking tray, cut side up, and bake for 20 minutes, until desired wellness
  • Meanwhile, grease a large, tall pan with cooking spray and heat up over medium heat
  • Add chicken and begin to break up as you cook. Once slightly broken up, sprinkle with all the seasonings and continue to cook and break up
  • Cook the chicken until almost completely cooked, until almost all the pink is gone
  • Chop broccoli head up into very small pieces
  • Add the broth to the pan with the ground chicken. Add broccoli and cover to steam broccoli for 5 minutes, until broccoli is soft and chicken is completely cooked
  • Ad cheese and mix to melt
  • Once cheese is melted, evenly divide mixture into each pepper
  • My fiance loves to add ⅛ cup of extra cheese onto each of his peppers halves then pop it back in the oven until it has melted! (1 point)
