Shredded Taco Chicken with Rice and Carrots

This weeks meal prep was some shredded taco chicken, minus the taco. I served that with some rice and carrots instead. This delicious shredded chicken taco meal is exactly what I needed!!! I added all my ingredients to the pressure cooker and I cannot even describe how amazing the smell was! Then the taste was better than I could have ever imagined, better than any restaurant dish you have tried! Super easy and delicious, a must try!!

Then I made some of my candied carrot chips to go along with it. I wanted something sweet this week on the side and that is why I picked this recipe. These carrots are so addicting and amazing, perfect to each each day as a meal prep. I doubled this recipe to serve 4.

Finally, I served that with some rice that I made in the instapot. Rice made in the Instapot is superior to any other rice. It is SO easy and turns out perfect. Plus, you do not have to sit there babysitting it so it does not boil over.

I used Publix extra long grain rice

Just add 1 cup of rice and 1.25 cups of water to the bottom of the Instapot. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it. Once done, let it set for 5 minutes, then depressurize.

Crema

This is the perfect sauce for anything taco related! Great for dipping, topping off tacos or rice bowls. Use mild, medium or hot salsa depending on what you like.

Target

Oh Target, what can I possibly not say about Target. There is literally no better place on the entire planet than a Target. Prove me wrong, try it. They have always been top notch but lately they have STEPPED UP their game!! We will only talk about food here but they have the best clothes, home decor, random stuff. ALL IN ONE PLACE.

If you know me, you know I do my grocery shopping at Publix. You know, your everyday meat, veggies and whatever grocery haul. I live literally right above Publix and they are much better for everyday meal essentials. But Target has some great random finds, and that is what we will be talking about here.

Also, if you have not tried Target pickup, where have you been!!! That has been the greatest invention lately and I love it. You can order anything you want, if it is in stock, and it is ready in a couple minutes!! You just drive up and the app just KNOWS you are there and someone is basically waiting outside with your stuff. Truly magical.

Dinner Essentials:

I am not really sure what to call this category. They are just some random items that I keep stocked up in my cabinet.

Banza Pasta

This is pasta made from chickpeas. I am pretty sure it is gluten free as well. It tastes just like normal pasta. I do not believe it is any 'healthier', it has the same amount of points as normal pasta, it is just made with chickpeas. It does taste really great and they have fun shapes like bowties and tiny shells. I can't get cool shapes at my Publix since it is a small and limited item store so I stocked on some here.

90 Second Rice

I usually make my own rice but I like having some of this 90 second rice on hand in case I don't want to cook. I love these packages and they come in so many varieties. I usually grab the long grain rice or a fun, flavored version.

They are 13-14 points per bag but I usually split that into 3 to 4 servings.


Mission Street Corn Tortillas

These are my absolute favorite tortillas ever! They taste really great and are pretty thick for being only one point each. I use them for tacos, quesadillas or pretty much anything. A great staple to have.

Breakfast Essentials:

Now for some breakfast essentials, just really great products to have on hand for an easy breakfast.

Kodiak Cakes

Kodiak cake has TONS of varieties. They are a protein pancake/waffle/whatever mix. Using Kodiak Cakes keeps me SO full for so long and it tastes really good. The normal flapjack mix is 5 points for a half cup. I grabbed the gluten free one.

6 points per half cup.

Fun stuff that you can pick up at Target!

Yasso Bars

There are a couple flavors of these yasso bars but I picked up the mint chip. They are made from greek yogurt but they taste like real ice cream bars! I almost got the fudge brownie! Love that one. The salted caramel one is so good too.

Archer Farms Ice Cream

This ice cream is so popular and is sold out all the time!! I scanned the ice cream freezers for so long and could not find any pints of this and then finally, behind some Talentino, I found one!! I have never tried this flavor but I am excited to give this a shot! The glazed donut is probably my favorite if you can find that. I also cannot do Halo Top ice cream because it makes me SO SICK but I love this version.

½ cup is 3 points.


Lily's Baking Chips

For some reason, my Target sells ZERO Lily's items. Which is crazy because I love them so much that I could keep them in business at my Target. I was getting my nails done and went to that Target that has literally everything and stocked up on my Lily's. I always grab a ton of these baking chips. They are great for melting and creating a chocolate treat, great inside anything you bake, great to snack on, great for anything. They are big chocolate chips and taste completely normal for being no sugar added.

26 chips are 2 points.


Lily's Peanut Butter Cups

These are so good!! I have to make sure I get one before I get home because my husband will just eat all of them. We are not huge peanut butter fans but when we find something peanut butter that we like, we go hard core. These are no exception, they are so good and the perfect chocolate to peanut butter ratio. They come in milk and dark chocolate, I like both pretty equally but my husband likes the milk chocolate better so I grab those.

6 points for 2 cups.


Lily's Chocolate Covered Caramels

I had never seen these before!! Are they actually new, it says new, but who knows what that means. Caramel is one of my favorite flavors so I was very excited to try this out. They were the first thing I grabbed when I got home and OMG they are good!!! Sticky, but hey, it's caramel. They are very rich and filling too, I could only eat two. Super good and I will definitely be grabbing more.

Lily's Chocolate Bars

These are good, I have had them before. I am just not really a chocolate bar person. I would much rather have the peanut butter cups or the caramels but I know lots of people like chocolate bars. They have a ton of varieties. This is the sea salt dark chocolate. They have salted almond milk chocolate, salted caramel milk chocolate and creamy milk chocolate at my Target.

6 points for an ounce


Skinny Dipped

I had these such a long time ago and completely forgot about them! They are almonds that are 'skinny' dipped in chocolate, meaning that they are not just full on chocolate with a little bit of almond inside. You still get all that chocolate taste, just not inches of it on your almond.

As I said, we are not crazy peanut butter fanatics but this peanut butter dark chocolate skinny dipped almond is AMAZING! These things are so freaking good, the flavor is phenomenal and you need to check them out.

They have other flavors, I like them all. These are great too, but the peanut butter is the best!!

6 points per ounce


Smash Mallow

I had heard of these from scrolling through TikTok and Instagram but my Target doesn't have them so I never tried them. When I was over by another Target I stopped in to see if they had them. They had so man flavors, I was so overwhelmed and didn't know which one to get! These was a toasted vanilla version, 4 points for 4 marshmallows. I did not go with these.

I went with these because they are chocolate covered. I actually had to go grab one while typing this because I was craving it so much. Let me show you what it looks like!

Not completely covered in chocolate, which is what I was expecting. More like ⅓ covered in chocolate. Even without all the chocolate, this was SO GOOD!! Love the flavors and the texture. They are not bad in size either. I usually just eat one at a time if I am craving something sweet.

6 points for 4 marshmallows.


Snack Essentials:

Boom Chicka Pop

You know it, you love it, it's Boom Chicka Pop. They have so many varieties and flavors but I picked up this light kettle corn. It is 50% less fat and 15% less calories than regular kettle corn. I love kettle corn, one of my favorite popcorn flavors. But honestly, I just love popcorn, period. This one tasted slightly burnt, not sure if I had a bad bag or if that is how it is. I clearly did not care too much as I devoured a good portion of it!

4 points for 3.25 cups


Adult Essentials

Sorry kids, this section is for people aged 21 and up. Please do not continue if you do not qualify.

California Roots

I could talk about this wine like I am in the California Roots CULT. This is Target's brand of wine and just like everything Target makes, it is amazing. My aunt used to make fun of me for drinking it, calling it "a headache in a bottle" but it is NOT. It is cheap, but good and does not give you a headache. I have tried other cheap store brands (sorry TJ) that do give me a headache and this one does not!

It tastes SO AMAZING. I seriously do not know how they do it. It is typically $5 but if you buy 5 of them, you get a discount making them $4.50 per bottle!!! How insane is that. Plus, the alcohol content is right up my alley. My favorite, Sauvignon Blanc is at a 13.5%!! If I am using my points on wine, it better have a good alcohol content. The Pinot Grigio is my second favorite. I always keep some Moscato stocked up too. I even like their sweet red blend and I am not a red girl. They also have a pink, tons of reds and now sangria!!

I could go on and on and on and on about this wine. I tell everyone and anyone about it. You need to check it out!

Chicken Veggie Rice Meal Prep

I have been doing so well with my meal prep that my husband really wanted to join in! Today we made some easy chicken, veggie, rice bowls with sauces of our choice. We already ate a serving for dinner tonight. It was so good and I love that I can switch up the sauces as to not eat the same meal everyday. We made 12 meals in an hour, which is insane and such a burden off my shoulders for lunch this week. Low point and delicious!! Cannot get much better than that!

Besides how easy this was to make SO many meals, my favorite part about this dish is that I left the flavors pretty standard when cooking so that I could add a different sauce every day to keep changing it up! Then I do not get bored eating the same meal each day.

I chose zero point sauces to keep this dish low point. As I said, this made 12 servings, so I had 6. Two of my servings were 2 tablespoons of G Hughes sugar free BBQ sauce, two were 2 tablespoons of G Hughes sweet chili sauce, and two were a mix of 1 tablespoon of teriyaki sauce over the chicken with 1 tablespoon soy sauce over the rice. So we have one all American version, and two takeout versions.

I think my husband is going to do a blackened seasoning some days, I’m not a huge fan and I liked the sauces I picked. Other days he will do a broccoli cheddar with ranch dressing. He will be using ⅛ cup reduced fat shredded cheddar for 2 points and 2T bolthouse ranch for two points. Too many points for me and I do not really care for it. While he is not on WW, I included the points in case you are interested in his version. Either way, just a great way to show you that you can cook the same meal for everyone in your house (even those not on WW) and they can adapt the recipe to their liking!! No need for extra cooking.

So so simple!!

I made the rice in the Instapot, an easy route but not completely necessary. You can grab an Instapot here and the non-stick bowl insert here. Rice comes out so perfect in an Instapot and I highly recommend.

You will just need an oven, which you probably have, and two baking trays.

The ingredients list is so simple...

  • Veggies
  • Chicken breast
  • Rice
  • Seasoned salt
  • Garlic powder

I used broccoli and carrots in my bowls with just a little bit of white onion. Use whatever veggies you love!! You do not need to use these just because I did, use veggies you know you will love. If you want to spice up your broccoli and carrots, you need to check out these recipes below!! The best veggies ever.

As I said, I put some sauces on mine after, G Hughes BBQ and sweet chili, along with some teriyaki and soy sauce. These are not included in the recipe, although zero points, because I want you to be able to customize your bowls the way you want to!

I used Trader Joe's basmati rice. Not my favorite. Just going to throw that out there. I had to go to Trader's for my beloved maple chicken sausages so I just decided to pick up the ingredients for this meal prep while I was there. The bags of rice are so small compared to Publix and I just prefer Publix's extra long grain rice. Obviously, if you are on purple, pick up some brown rice for zero points.

I kept the seasonings very simple because I was going to use different sauces on top. Feel free to use any seasonings you wish!

What To Do:

Preheat your oven to 400 degrees.

Start with the veggies or chicken, does not matter, they need to cook for the same amount of time.

I chopped by broccoli up into bite sized pieces and then I diced the quarter onion up, just for some added flavor because I love onions. The carrots were already cut and peeled.

Just place those on a greased baking tray (or a greased piece of aluminum foil on a baking tray). Spray them with some cooking spray, I, of course, used the Publix butter spray, sprinkle with the salt and toss to coat.

You can either set that aside or place them in the oven, but remember, the chicken will need to cook for the same amount of time so I just set that aside until the chicken was ready for the oven as well.

Grab another greased baking tray (or a greased piece of aluminum foil on a baking tray). Place your chicken on the tray, not overlapping, and sprinkle both sides evenly with the salt and garlic powder.

Place everything in the oven for about 40 minutes, flipping halfway. I removed the broccoli and onion about halfway because I like them a little crunchy still and I did not want them to burn. You will need to make sure your chicken is fully cooked before removing it from the oven.

When the chicken is fully cooked, chop it up into bite sized pieces.

While that cooks, we will work on the rice! To the Instapot, add the rice and water. I use this non-stick bowl insert so my food does not stick to the bottom. I use the 8-quart, 7-in-1 Instapot to make my meals. I absolutely love it! You can order one here. Set the Instapot to the pressure cook setting, on high, and pressure cook for 5 minutes. Once done, let set for 5-6 minutes before depressurizing.

I also HIGHLY recommend that you add some cooked riced cauliflower into the rice after you make it. You seriously cannot notice the cauliflower and it just adds more filling/veggies into this dish. I completely forgot and I'm so upset!!

Then just divide everything evenly into 12 bowls. My husband does not like me to separate his, so I divided everything in half and then I divided my half into 6 servings. It was about a heaping ½ cup of rice and ¼ cup of diced chicken per bowl.

I chose zero point sauces to keep this dish low point. Two of my servings were 2 tablespoons of G Hughes sugar free BBQ sauce, two were 2 tablespoons of G Hughes sweet chili sauce, and two were a mix of 1 tablespoon of teriyaki sauce over the chicken with 1 tablespoon soy sauce over the rice. So we have one all American version, and two takeout versions.

Instructions

  • Preheat oven to 400 degrees

Veggies

  • Chop broccoli into bite sized pieces and dice up the quarter onion.
  • Place all veggies on a greased baking tray and spray them with cooking spray. Toss to coat. Sprinkole with the seasoned salt, toss to coat.

Chicken

  • Place chicken on a second greased baking tray. Seasoned both sides evenly with the seaoned salt and garlic powder. Add any additional seasonings of your choice.
  • Place chicken and veggies in the oven. Bake for 40-45 minutes, flipping halfway, until fully cooked. I take the onion and broccoli out about halfway.
  • Once chicken is cooked, dice into bite sized pieces.

Rice

  • Combine the rice and water in the pressure cooker. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.
  • Once the timer goes off, let the pressure cooker stand for 5-6 minutes then depressurize.

Meal Prep Bowls

  • Divide everything evenly into 12 containers. About a heaping ½ cup of rice and a ¼ cup of chicken.
  • Add any sauces of your choice!

Low Point Chocolate Cupcakes

I used some sugar free cake mix and swapped out some of the ingredients to make these moist and delicious. You can't even tell that they are made with sugar free mix and some secret ingredients!!

I used Pillsbury sugar free devil's food cake mix; however, you can use any brand, just swap some applesauce for the oil. You can also swap in some pumpkin for the oil if you want that taste instead, really good for fall! Just the same measurement of the applesauce as the recipes calls for oil. I also use liquid egg whites instead of eggs.

The frosting is super easy! Just lite cool whip. I dyed mine green, which took a lot of dye!!!

Instructions

  • Preheat oven to 325 degrees.
  • Add cake mix, water, applesauce and liquid egg whites in a large bowl. Whisk together with the hand mixer until all the lumps are gone and the mix is completely combined.
  • Line a 12-hole cupcake pan with liners or spray with cooking spray.
  • Fill up each hole evenly with the cake mix then bake accoridng to package instructions, about 18 minutes. Remove from oven once a toothpick comes out clean.
  • Frost each cupcake with ⅛ cup of lite cool whip topping.

For Easter, I decorated these into little bird's nests with a chick popping out and some eggs still in the nest.

There is still cool whip under there, just hard to tell. Then I used some 'Galeria Easter Edible Green Grass' that I got from Target. It was green apple flavored and I only used about ¼ package, at the most.

Then I used my Easter peanut butter cup recipe for a fun topping.

Zero Point Vanilla Sweet Cream Cold Foam

I make this many mornings when I am feeling like a sweet cream vanilla coffee! Super simple to put together and I honestly like this more than the Starbucks version, it is not as thick. I love the burst of sweet vanilla in my coffee, for no additional points.

Try my copycat Starbucks sweet cream as well!


You can certainly use vanilla almond milk, just make sure it is unsweetened. I use plain unsweetened almond milk because I use almond milk in a ton of recipes (that would taste bad with vanilla milk) and I do not need two containers of almond milk in my fridge.

You can also use a skinny syrup, I love Jordan's, instead of vanilla extract but I like doing this.

I use about an ⅛ cup of almond milk and 1 tablespoon creamer. I know it doesn't appear like a lot but my frother works SO WELL and this mixture will about triple in size! So don't be temped to add more liquids, you will have plenty of sweet cream with this recipe.

I use these super cute straws too! They’re the perfect size and in the shape of a heart. I order them off amazon here. I love them because they are individually wrapped so I can toss a few in my purse, because here, in Orlando, a lot of places don’t give you straws anymore so I like to have one on hand. But also, they are just so freaking cute!!!

Also if you want my coffee recipe.... I add ice in my cup, about halfway up, then I fill my glass up about ⅔ to ¾ of the way with Stok un-sweet cold brew. I add a few pumps of Jordan's Skinny Syrups and a packet of Splenda. Then I pour my cold foam on top.

Instapot Chicken Parm

One of my favorites meals, now made easier. INSTAPOT CHICKEN PARM! All of the best flavors are combined in one pot and all you have to do is press go. And there you'll have it, the best meal ever!

This version is not breaded and I do not even miss those breadcrumbs. It tastes just as good as a fried chicken parm, with less points, calories and less carbs!

Why is chicken parm just the best meal, at any time. There is literally never a time when I couldn't want chicken parm. Plus, it is one of the easiest meals to make! There's just something about a perfectly cooked chicken, covered in sauce and cheese. So simple, yet completely amazing.

Chicken parm is my husband's absolute favorite meal ever. We make this dish all the time in so many varieties. It never gets old.

Funny story, he actually made himself some fried chicken parm for dinner last night (since I didn't feel well). He double breaded him chicken and fried it in oil. UGH. But he said this one was even better! So skip the restaurant takeout and make mine.

Just a fair warning, the pasta is not included in this recipe. I wanted to create just a classic chicken recipe in the Instapot and then you will be able to add anything you want to it. I also don't particularly like spaghetti in the Instapot, I prefer it more on the stove so it was separate anyways.

As I said, we make chicken parm all the time so I have a couple different varieties, if you prefer another.

Chicken Parm Dippers

Thin chicken nuggets that taste like chicken parm then dipped in tomato sauce.

Classic Chicken Parm

The classic air fried, crispy chicken breast. Covered in sauce and cheese then served over spaghetti.

Chicken Parm Pizza

This is a good one!! Bread-less pizza basically. The crust is made from ground chicken and then it is covered with sauce and cheese. Seriously so good!

Chicken Parm Nuggets

Mini chicken parms, in nugget shapes, covered in parmesan and dipped into tomato sauce.


What You Need:

Well, obviously, this is an Instapot recipe so we will be needing an Instapot. I love my ninja, you can pick that up here. I also use a non-stick bowl insert as it is way easier to clean and the chicken will not stick to the bottom. You can pick that up here.

Then you will just need all of your ingredients.

  • Chicken breasts
  • Olive oil
  • Minced garlic
  • Tomato sauce
  • Mozzarella cheese
  • Parmesan
  • Seasonings

I used one really big chicken breast and cut it into two. My chicken breast was 12 ounces, I cut it in half, so each was 6 ounces. This was a little more chicken than I usually eat but I almost ate it all! It was so good, I wanted it all.

99.9% of the time I make my own tomato sauce. It is pretty easy to do, zero points and I love the taste. It will stay good in the fridge for a little while too. That is what I used for this recipe. I won't explain how to make it in this recipe but you can go to my tomato sauce recipe where I completely explain everything.

Homemade Tomato Sauce Recipe

Then grab your cheeses. I use reduced fat, part skim, shredded mozzarella cheese from Publix. For the parmesan, I used reduced-fat parmesan from Kraft.


What To Do:

You can either use two smaller chicken breasts (or cutlets) or one large chicken breast. We had some leftover chicken breasts that were huge so we just cut one in half. Each half was 6 ounces which was a little more food than I needed but it was fine.

Season both sides of each piece with the seasonings then set aside.

Be sure to grab all your ingredients before you get started with the Instapot. Cooking with the Instapot is QUICK and you need to work fast as to not let the food burn.

Once you have everything gathered, plug in the Instapot and set to the saute mode. Drizzle with the oil and let it heat up.

Add in the minced garlic and saute for about a minute. It is best to use a wooden spatula as a plastic one can melt, the Instapot gets hot. I have learned the hard way.

Add in the seasoned chicken breasts. Yes, mine look very weird and are in a very weird shape but all the same. They tastes great.

Just brown each side for about two minutes and then turn the Instapot off. The chicken breasts should look like this.

Turn the Instapot off.

Top each chicken breast with equal amounts of tomato sauce, being sure to cover each one completely.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 4 minutes and start it.

Once the Instapot goes off, you have to work quick!!

Move the valve to venting and vent out all the steam. Quickly cover the chicken breasts with both the cheese and close the Instapot again. But do not start it. Just leave it on warm.

Let it all set like that for about 4 minutes to allow the cheese to melt. Top with fresh herbs, if desired.

And there you have it, easy chicken parm!

  • 2 chicken breasts 6 ounces each
  • 1 teaspoon light olive oil
  • 4 cloves minced garlic
  • ⅔ cup Allie Carte homemade tomato sauce
  • ½ cup reduced fat, part skim shredded mozzarella cheese
  • 1 tablespoon reduced fat parmesan cheese
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon paprika
  • ⅛ teaspoon black pepper

Instructions

  • Season both sides of eat chicken breast evenly with the seasonings
  • Set the Instapot to the saute setting. Drizzle with olive oil and allow that to heat up
  • Add the minced garlic and saute for about one minute
  • Add the chicken breasts and brown each side for about two minutes
  • Turn the Instapot off
  • Top each chicken breast with ⅓ cup of tomato sauce, being sure to completely coat the chicken
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 4 minutes and start it
  • When the time is up, move the valve to venting. Remove the lid and quickly top the chicken with both of the cheeses
  • Place the lid back on the Instapot and close it. Do not turn the Instapot back on, just leave it on warm (or off, it does not matter), to allow the cheese to melt. Leave the lid on for about 4 minutes

March 30, 2021 Chicken Breast

Copycat Chipotle Bowls

I have been absolutely obsessed with Chipotle this past week (I have been there 4 times in 7 days whoops) so I decided I would meal prep some COPYCAT CHIPOTLE BOWLS for the week and wow are these amazing. The chicken is so juicy and tender and the flavors all just combine for the perfect meal.

It smelled SO good that the assistant, for the first time EVER, ate our food while we were not looking!!! If anyone needs a malshi, let me know. Just kidding!! She is my baby!

Let's stop to admire this beauty!!!

My husband wanted to meal prep with me this week so I made 8 servings of this. It was super easy and did not really require any excess work to double the amount I would normally make.

Here is What You Need:

We made the rice in the Instapot, an easy route but not completely necessary. You can grab an Instapot here and the non-stick bowl insert here. Rice comes out so perfect in an Instapot and I highly recommend.

Other than that, if you choose that route, you will just need a large pan to cook everything in.

The ingredients seem like a lot, but it is a lot of food with a lot of different variety. You can, of course, choose whatever toppings you like, I will just be showing you what I did. I will break out all the point values below as well.

  • Red wine vinegar
  • Honey
  • Oil
  • Rice
  • Cilantro
  • Lime Juice
  • Red bell pepper
  • Green bell pepper
  • Red onion
  • Chicken breast
  • Plain, nonfat greek yogurt
  • Salsa
  • Lite shredded mexican cheese
  • Corn kernels
  • Shredded lettuce

And then for the seasonings you will need:

  • Garlic powder
  • Oregano
  • Black pepper
  • Ground chipotle powder
  • Chili powder
  • Salt
  • Black pepper

I promise, it really is not that complicated and was actually super fun to make. Even my husband said he really enjoyed making this dish!

Here is What You Do:

You will need to start marinating the chicken ahead of time. Try to marinate the chicken for at least an hour or all day. I know it gets tricking with counting marinades, but I just counted the chicken as an extra point per bowl because this was a very high point marinade. But you do you!! Whatever works for you.

We combined all the ingredients for the marinade in a small Tupperware because I made three times the amount needed so my husband can use it as a 'dressing' on his bowl during the week. I am not interested in doing that and this recipe will only include the amount we actually used (the third) for this dish.

  • Red wine vinegar
  • Honey
  • Oil
  • Garlic powder
  • Oregano
  • Black pepper
  • Ground chipotle
  • Chili powder

It would be way easier just to make the marinade in the baggie, but if you want extras, do this. It was not too spicy, kind of sweet and sour. The sweet honey hit you first and then the spice got you later. Super good though!

Take the chicken breasts and stab them a few times, carefully, with a fork or knife. This will allow the marinade to penetrate the chicken so it comes out very flavorful and juicy. Place the marinade and chicken in a baggie and store in the fridge for at least an hour, or all day.

Once you are ready to cook, we will begin on everything else! Starting with the rice.

Rice:

To the Instapot, add the rice and water. I use this non-stick bowl insert so my food does not stick to the bottom. The 'rule' is a 1:1 ratio of rice and water.

I use the 8-quart, 7-in-1 Instapot to make my meals. I absolutely love it! You can order one here.

Set the Instapot to the pressure cook setting, on high, and pressure cook for 5 minutes. Once done, let set for 5-6 minutes before depressurizing.

Then, add in as much cilantro, lime juice and salt as you prefer and give it all a really good stir. Set that aside until everything else is ready.

The rice was 4 points per serving, I am on blue. It would be the same points on green and purple. If you used brown rice, the points would be zero on purple.

I also HIGHLY recommend that you add some cooked riced cauliflower into the rice after you make it. You seriously cannot notice the cauliflower and it just adds more filling/veggies into this dish. I wish I had some but I couldn’t find any.

Next we will work on the fajita veggies.

Veggies:

Slice up the peppers and onion, we only used about a half of an onion, we have large onions here! You can make the strips as thick or thin as you desire, this is what we did.

Heat some oil over medium/high heat then add in the veggies. Sprinkle with salt and black pepper to taste. Saute until your desired wellness, this is what we like.

I used 1 tablespoon of oil to cook the veggies, this is 4 points, split over 8 bowls. Set those aside and we will begin on the chicken.

Chicken:

Start by carefully cleaning off the seasonings from the pan, or grab a new one. If you leave all the seasonings from the veggies on the pan, they will just immediately burn and cause a burn tasting chicken.

Heat the pan back up over medium to medium/high heat. Grab your marinated chicken from the fridge. Shaking off any excess liquid, add the chicken to the heated pan. Saute the chicken on the pan, flipping every few minutes. You want a nice crisp to the exterior of the chicken.

Flip every few minutes until the chicken is fully cooked. It will really depends on how big/thick the chicken breasts are for how long it will cook. You want the chicken to be fully cooked and reach an internal temperature of 165 degrees F.

Once the chicken is fully cooked, and has a nice crispy coating, it will look something like this. That is when we will begin slicing it. Grab my knife set here!

Cut the chicken into bite-sized pieces, about one inch by one inch. Something like this.

As I mentioned, it gets tricking with counting marinades, but I just counted the chicken as an extra point because this was a very high point marinade. But you do you!! Whatever works for you.Set the chicken aside and we will prepare our toppings.

Toppings:

I love corn salsa on my bowls so I combined sweet kernels with some diced red onion and cilantro.

Instead of the typical sour cream, I am using plain, non-fat greek yogurt.

I used green mountain gringo medium salsa. I have been obsessed with both their medium and mild salsas.

I used Trader Joe's lite shredded Mexican blend.

And finally, some shredded iceberg lettuce.

All together, the toppings were one point, per bowl.

Setting Up The Bowls:

My husband wanted to create his chipotle bowl everyday, so I put half of everything in a Tupperware for him to do that. I divided my half into four equal servings, leaving out the lettuce and yogurt. I did not want that heated up or getting soggy.

Evenly divide the rice, veggies and chicken into eight bowls. It will be about ½ cup of rice and ¼ cup of chicken. Top with a tablespoon of corn salsa, a tablespoon of yogurt, a tablespoon of shredded cheese, along with salsa and shredded lettuce.

Then we were ready for a week of homemade chipotle bowls!!!

Instructions

Marinade

  • Stab the chicken, carefully, with a fork or knife to allow the marinade to penetrate the chicken. This will create a juicy and flavorful dish. Combine all the ingredients for the marinade, including the chicken, in a large baggie. Store in the fridge for at least an hour, or all day.

  • Once the timer goes off, let the pressure cooker stand for 5-6 minutes then depressurize.
  • Add the diced cilantro, lime juice and salt then stir everything together. Set aside in a clean bowl.

Fajita Veggies

  • Slice peppers and onion up into thin strips.
  • Heat oil in a large pan over medium/high heat. Once heated, add in the sliced veggies and sprinkle with the salt and pepper. Saute until desired wellness.
  • Set veggies aside on a clean plate then carefully whipe down the pan.

Chicken

  • Heat the pan back up over medium to medium/high heat.
  • Shaking off any excess liquid, add the chicken to the heated pan. Saute the chicken on the pan, flipping every few minutes.
  • Flip every few minutes until the chicken is fully cooked. It will really depends on how big/thick the chicken breasts are for how long it will cook. You want the chicken to be fully cooked and reach an internal temperature of 165 degrees F.

Chocolate Peanut Butter Protein Waffles

What a stack!! Chocolate Peanut Butter Protein Waffles are the perfect breakfast or breakfast meal prep! At four points each, these will keep you full and focused for a long time. They are so fluffy and the hint of peanut butter is amazing. Plus, topped with chocolate chips for a little sugar kick. Loving these waffles!!

These are super easy to whip up, I made them at 8:30 before the assistant's dog park date at 9:00!

What You Need:

Obviously you will need a waffle maker. I used this dash one that I picked up from Amazon here.

Then just a couple of ingredients:

  • Kodiak flapjack and waffle mix
  • PB2 powder
  • Plain unsweetened almond milk
  • Lily's no sugar added chocolate chips
  • Cooking spray

I used the gluten free Kodiak mix because that is what we had on hand and I do like eating gluten free, if I can and want. I usually get this stuff at Target. You can use the normal one if you want.

I used the normal peanut butter flavored PB2 powder; however, if you want the waffles more chocolatey, use the chocolate peanut butter flavor.

These Lily's chips have been so hard to find but I finally grabbed some at a Target near me! I love these, you cannot tell that there is no sugar added.

Of course, feel free to use a different type of milk, just be cautious of the points and consistency.

What To Do:

Start off by adding the waffle mix, peanut butter powder and milk in a bowl.

Stir together, just until all of the lumps are gone. Do not over stir.

Set that aside and then start heating the waffle maker. This will allow the mixture to rise and create light and fluffy waffles.

Be sure to grease the waffle maker very well then pour in the waffle mixture. Flatten it out just a bit and top with the chocolate chips, evenly.

Press down the lid of the waffle maker and cook until desired wellness.

Top with ICBINB spray and sugar free syrup!

These also last really well in the fridge. I’ll just put them in a Tupperware container and pop one in the air fryer each morning for an amazing meal prep!

  • Set aside and begin to preheat the waffle maker. The mix will rise a bit while the waffle maker preheats, creating fluffy waffles.
  • Grease the waffle maker with cooking spray and pour the waffle mix evenly around the waffle maker. Top with the chocolate chips and cook until desired wellness.

Easter Peanut Butter Cups

Back again with some peanut butter cups, this time we're using Lily's chips, so they don't melt when out of the freezer, and throwing in an Easter theme with some cute baskets and chicks!! These are one point each and have the most perfect texture and flavor to them. The outside is a perfect, thin layer of crunchy chocolate while the inside in a rich, sweet, creamy peanut butter. A fun treat for the holiday next week!

Let me preface this by saying I hate this chocolate mold. Okay, yeah, it's adorable and those chicks are so cute. But this thing had way too many teeny tiny crevasses and made this dish so much harder than it had to be. I would highly suggest just find an Easter egg mold, or maybe some bunnies. Something with less teeny tiny crevasses. Worth it though, these came out super cute!!

This mold was Wilton brand from Joann's and is called the basket chicken egg candy mold (Item #17808734). This was the only Easter mold in stock near me and I was determined to make these today and I did not want to wait until Amazon delivered something else tomorrow.

If I didn't have to work with all the crevasses, this would have taken no time at all, but it ended up taking me about an hour. Mindful, there is a 30 minute freezing/waiting period in there too where I did the dishes, but still, about an hour.

This was the second batch I made. The first batch, I did not wait long enough at the end and when I went to pop them out, they fell apart. I suggest waiting as long as you can to pop them out. I waited overnight this time and it worked out well. I am planning on making these again next weekend when we go to my sister in law's house for Easter.

Easter Guide

What You Need:

The only 'equipment' you will need is a microwave and freezer. Pretty simple, no cooking required.

Obviously, you will need the mold as well. Feel free to grab any shape you want. The silicone ones work best because you are able to pop the cups out at the end. My molds were about one inch by one inch.

This is also a very limited ingredient recipe.

  • Lily's no sugar added chocolate chips
  • Olive oil
  • PB2 powder
  • Swerve confectioners sugar
  • Plain unsweetened almond milk

I grabbed my Lily's chocolate chips at Target. That seems to be the only place I can find them.

What To Do:

Start by measuring out the chocolate chips. Use a microwave safe dish so you can just microwave the chips straight in the bowl, instead of transferring them to something else.

This recipe is calculated using 56 grams of chocolate chips (about 120 pieces); however, I recommend adding a little more, about 65 grams, because a bit of the chocolate will get picked up on the knife and won't be used, and it is very hard to scrape out every last drop of melted chocolate. I always make a little more because not all is used.

Add the oil to the dish and mix it up with the chocolate chips to evenly coat. This will melt them melt and stay smooth.

Microwave the chips for about 45 seconds, until melted. You will want to stir them every 10 seconds. Do not over melt and burn the chocolate. It will look like this.

Grab your mold and put just enough chocolate to cover the bottoms and the sides a little. Spread that out evenly with your knife. Pop those in the freezer for about 10 minutes.

While those set, make the peanut butter.

Place the peanut butter powder, sugar and almond milk in another small dish and stir that together. You can add more or less almond milk, depending on your desired peanut butter consistency, but I like this ratio.

Once the chocolate has set, grad the mold from the freezer. Evenly divide the peanut butter mixture over the chocolates. You should fill up the molds about ⅔ to ¾ of the way full. The set that in the freezer for about 20 minutes.

Once the peanut butter is a little hardened, microwave the chocolate chips again so they are nice and liquid-y again. Just about another 10 seconds in the microwave. Place the remaining chocolate over the mold and flatten out with the knife.

It got a little messy at the end but they still taste great!!

I finished this around 5:30 and we went out to dinner and drinks and didn't get home until 10:00 so I left them in the freezer until the morning. I think that was the safest bet as the peanut butter really needed to harden with these molds since they were so fragile.

In the morning, I just popped them out of the molds and set them in the fridge to eat later that day. I got a little impatient and two of them broke, as I mentioned, this mold was terrible and had so many crevasses, but the broken ones still tasted great.

I cannot wait to make these again next weekend for Easter! Any ideas on what I should do with them? Maybe I'll put them on cupcakes!!

  • ½ teaspoon olive oil
  • 2 tablespoons PB2 powder
  • 2 teaspoons confectioners sugar replacement Swerve
  • 1 tablespoon plain unsweetened almond milk

Instructions

  • Measure out 56 grams of Lily's no sugar added chocolate chips, it is about 120 chocolate chips, into a microwave safe dish. Add the oil and mix to combine. Microwave in 10 second intervals for about 45 seconds, until melted, stirring each 10 second interval.
  • Place just enough chocolate in the bottom of each mold to completely cover the bottom and the sides a bit. Spread out to evenly cover then place in the freezer for 10 minutes.
  • Meanwhile, combine the PB2 powder, sugar and milk in a small bowl. Stir to combine and get the lumps out.
  • Evenly divide the peanut butter into each mold, on top of the chocolate, and spread out across each mold. Place in the freezer for about 20 minutes.
  • Heat the chocolate up again and spread of evenly over each mold. Using a knife, carefully smooth out the tops of each mold.
  • Place in the freezer for 2 hours or overnight.
  • Store in the fridge once set.

Sticky Chicken Nuggets

I have been craving something sweet, yet garlic-y, with a hint of spice. So here we have it, STICKY CHICKEN NUGGETS. Perfectly air-fried chicken nuggets, lightly brushed with a perfectly delicious sauce.

This recipe reminds me of my Nashville hot chicken nuggets, recipe here, except definitely not as spicy. This is a kid-friendly, wimp friendly (which I am) version of that amazing recipe.

My husband requested some of my healthy homemade ranch with this dish. You can find that recipe here. It tastes, in our opinion, better than ranch and, of course, it is way healthier. It looks really good too!


Here is What You Need:

  • Chicken tenderloins
  • Flour
  • Breadcrumbs
  • Egg beaters
  • Light margarine
  • Minced garlic
  • Brown sugar replacement
  • Honey
  • Hot wing sauce
  • Seasonings

I love using chicken tenderloins to make chicken nuggets because they are already thin and you just need to make a few slices. But go ahead and use any form of chicken

For the breadcrumbs, I use Italian Panko most of the time.

I prefer egg beaters for this type of use. They are very liquid-y, which is perfect to coat the chicken in. Real eggs are string-y and cover too much. Plus, cracking eggs is literally my arch nemesis, so egg beaters it is.

My light margarine of choice is ICBINB, and for those who are not in the know, that's I Can't Believe It's Not Butter. I literally grew up on this brand and I am so brand loyal to them. It tastes like 'real' butter too and I honestly prefer using this. Only 1 point for an ENTIRE TABLESPOON. That a lot if you need butter for anything else.

My brown sugar replacement of choice is Swerve. I mean is there any other!? I picked up a pack on amazon, you can find that here. Zero points and tastes like real sugar. They have a ton of varieties too.

For the hot wing sauce, I used Sweet Baby Ray's buffalo sauce. I love their bbq sauce so I tried out this one and it was really good.

What To Do, Step By Step

Start by slicing up the chicken tenderloins into bite-sized, nugget shaped pieces. About 5-6 pieces per tenderloin, depending how big the tenderloins are and how small you want the nuggets.

You will need two small, shallow bowls. I use Tupperware, it's the best I have for this and the perfect size.

Pour out the liquid egg whites in one, and combine the flour, breadcrumbs and seasonings in another.

Little tip is to make sure the breadcrumbs are not too big. Either buy a brand that has very crushed up breadcrumbs or crush up the one's you have. Our's were a little too big so we sealed them in a baggie and crushed them with a rolling pin.

We are going to set up a little fried chicken assembly line. Start with the chicken tenderloin pieces on one end, move on to the egg whites, breadcrumb/flour mixture and then the air fryer.

Grease the air fryer tray with cooking spray, I love the butter version. It will work out well with this dish as we will be using margarine as the base for our sauce.

One by one, dunk chicken pieces in the liquid egg whites. Gently roll each piece in the flour mixture, to coat, then place in the greased air fryer, in a single layer without chicken pieces touching.

You will have to work fast or work in batches as to not let the chicken set too long. If it sets, the flour will soak into the chicken and it will get soggy. We did about half and half. Luckily I have a two drawer air fryer and didn't have to wait for the first batch to be done before cooking the second. I love my air fryer! Grab it here.

Air fry the chicken for 1 minute then spray with cooking spray. You need to make sure the chicken is heated up before spraying. This will prevent it from getting soggy and will simulate for of a frying experience.

Air fry the chicken for another 3 minutes. Flip the chicken over, spray with cooking spray again then cook again for another 4-6 minutes.

You can also cook them in the oven, but it is better in the air fryer.

While the chicken cooks, we will make the sauce.

Heat a small saucepan over medium heat. Add the margarine and melt it. Add in the minced garlic and cook for about 2 minutes.

Add in the seasonings, brown sugar, and honey and stir to combine. Reduce heat to low and add in the buffalo sauce and water. Careful adding the water as it will bubble over quickly. Stir until thickened, about 2-3 minutes.

Once chicken is cooked, brush sauce onto the cooked chicken pieces. It is a lightly coated sauce type of dish. I wanted to simulate a less spicy Nashville hot chicken tender dish. Still really good and flavorful.

How good to these look! I am in love!!

  • 12 ounces chicken tenderloins about 4-5 pieces

Instructions

  • Slice chicken tenderloins up into bite-sized pieces, about one inch by one inch
  • In a small bowl, combine flour, breadcrumbs and chicken seasonings. Pour the liquid egg whites in another bowl. You can use eggs, just whisk well
  • Grease air fryer with cooking spray and preheat to 400 degrees
  • One by one, dunk chicken pieces in the liquid egg whites. Gently roll each piece in the flour mixture, to coat, then place in the greased air fryer, in a single layer without chicken pieces touching
  • Air fry for 1 minute then spray with cooking spray. Cook for another 3 minutes
  • Flip chicken over, spray with cooking spray again and cook for another 4-6 minutes, until fully cooked (Or bake at 450 for about 10 minutes, flipping halfway)
  • Meanwhile, melt margarine in a small pan over medium heat. Add the minced garlic and cook for about 2 minutes
  • Add in the seasonings, brown sugar, and honey and stir to combine. Reduce heat to low and add in the buffalo sauce and water. Stir until thickened, about 2-3 minutes
  • Once chicken is cooked, brush sauce onto the cooked chicken pieces

Publix

Literally where shopping is a pleasure.

There is nothing like Publix, sorry westerners, northerners, basically everyone not in or around Florida. Publix is the ultimate grocery store and you cannot deny that.

I am so obsessed with Publix that I moved in right next door to them! (It was the only room available haha).

There is absolutely nothing better than walking into Publix. The atmosphere, the workers, the organization and the overall vibe of the place is just amazing.

I am going to go through my whole guide of what I get from Publix. Some of the things might be Publix brand, which is just generic. I know many of my followers have said they can get similar products at Walmart. Some of the items below are not specific to Publix and are just my everyday grocery essentials.

You don't have to stick to this list exactly, find your favorite variety or brand. This is just to help you get started.


Butter Flavored Cooking Spray

We found this butter flavored cooking spray recently and OH EM GEE this takes cooking to a whole new level. The Publix brand is way better than all the competitors. It looks like butter, tastes like butter, smells like butter, it is so good. And you cannot argue that butter doesn't belong on everything. It does.

Shredded Reduced Fat Low-Moisture Part-Skim Mozzarella Cheese

Yeah it's a mouthful but it is amazing! It is 33% less fat than the regular kind and made with 2% milk. It is lower in points than the regular version but still melts the same and tastes the same. You know I use this in SO many recipes.

Shredded Reduced Fat Sharp Cheddar Cheese

It goes along with the last item I mentioned. There's a time for mozzarella and a time for cheddar. This one is also 33% less fat than regular cheddar, still tastes great and melts great. It is a little higher in points than the mozzarella but only 10 more calories.

⅓ Less Fat Cream Cheese

Did you know this is called Neufchatel Cheese? I had no idea. This is really ⅓ less fat THAN cream cheese, because I guess it's Neufchatel. Who knows. Anyways, I love this stuff so much. It is a great way to thicken up sauces while making them creamy. There are so many recipes where I call for this. It tastes and spreads like regular cream cheese too, just for less points. I like how the blocks have measurements on them already for easy cooking.

⅓ Less Fat Cream Cheese

Okay same thing as above, again, but this time it's Philadelphia brand and in a carton. Publix has a ton of different ⅓ less fat cream cheese varieties in these little cartons. I use these more for a breakfast bagel or crackers. The chive and onion is my favorite but there are others.

Ranch Seasoning Mix

Ranch seasoning mix is one of the greatest things! You can make the best zero point ranch dressing/dip from this stuff. We buy the big bottle because we make homemade ranch so much. There are little packets too but I think the big bottle is worth it. Skip the bottle ranch and grab this stuff. You can also use it as seasoning when you are cooking.

Water Enhancer

I don't really even know what to call this stuff, I have always called it water enhancer. Publix makes the best water enhancers though! This is one of my favorites and tastes so much like sweet tea, but for no points. You just add a couple drops to your water and BAM you have sweet tea. I use some of the other flavors to make a low point alcoholic drink.

PB2 Powder

This peanut butter powder has seriously changed me in all the best ways. I have never really been a peanut butter fan, yeah I liked it but I didn't really care for it. Until now. I just mix mine with almond milk until I get the desired consistency, about 4.5T powder and 3T milk. That will last me all week in the fridge for breakfast.

Weight Watchers Alfredo Sauce

Try this roasted garlic alfredo sauce made with and almond milk, without any heavy cream to keep it weight watchers friendly. 

Alfredo is one of my biggest weaknesses. Who doesn't love a rich and creamy sauce one top of a big bowl of pasta? I lightened up the classic sauce to bring you a lighter alfredo pasta. Perfectly paired with shrimp, sausage or chicken.

Try this roasted garlic alfredo sauce made with and almond milk, without any heavy cream to keep it weight watchers friendly.

Serve this dish with some added protein to keep you full and satisfied. Try this out with my honey butter chicken, which brings in a sweeter flavor, the grab the recipe here. Or with my buttery lemon pepper chicken. That would compliment these flavors very well and that recipe is here. There are great low point, pre-cooked sausages that would be easy for this. Or, my husbands favorite, spicy grilled shrimp.

What You Need for a Weight Watchers Friendly Alfredo Sauce

This is a two-pot kind of dish. You will just need a medium sized pot, for the pasta, and a large pan, for the sauce. You can certainly cook the sauce in the pot after the pasta is finished, but I don't wait for that.

Then the ingredients, remember, this is an Alfredo sauce without any heavy cream!

  • Pasta
  • Minced garlic
  • ⅓ less fat cream cheese
  • Plain, unsweetened almond milk
  • Chicken broth 
  • Reduced fat, part skim shredded mozzarella cheese
  • Seasonings
  • Cooking spray

And that is all you need. How easy is this!

I always keep cream cheese, almond milk, chicken broth and mozzarella cheese in my fridge. These are some of my top essential WW items. I definitely use one of these every single day. However, we can also go over some suggestions and substitutions.

Pasta

I typically prefer a penne pasta with this; however, you can also do a fettuccine Alfredo as well. Really any type of pasta works great; however, you can also try this on spaghetti squash or grilled chicken to keep it low carb.

Minced Garlic

Some roasted garlic Alfredo sauce calls for some garlic! I love mincing my own fresh garlic with this mini food processor. However, you can use pre-minced garlic. I also love putting some finely diced onion into this mixture as well. It provides an elevated flavor; however, I know not everyone loves onion.

Weight watchers alfredo sauce

This is a more weight watchers friendly Alfredo sauce, made without heavy cream and substituted with some almond milk and lower fat cheeses.

Cream Cheese

Like I said, this is a lightened up sauce. Therefore, ⅓ less fat cream cheese it is! You can use regular cream cheese, if that is what you have and like. It will turn out the same. If I remember, which I usually do not, I like to leave my cream cheese on the counter for a little, to soften, as it is easier to melt into the sauce.

Plain Unsweetened Almond Milk

Now, this is where things get a little crazy, HAHA! Almond milk is a staple in my Weight Watchers journey. It is the lowest point milk and I use it in tons of recipes and as a creamer.

I believe it has more of a neutral taste and you cannot taste the almond. However, you can substitute a different type of milk, or a heavy cream / half and half.

Chicken Broth

The chicken broth thins out the sauce a little while providing a delicious flavoring.

Typically, I have chicken broth on hand. It just has a very nice neutral, yet slightly meaty, taste to it. I usually make this dish with chicken broth; however, you can use another type of broth. Alternatively, use a vegetable broth if you are vegetarian.

Additionally, you can do a water and broth concentrate mixture. Any one of these options will work well. Just be mindful that I use low sodium broth and if you are using regular broth, you will have to adjust the salt content.

You can also substitute pasta water in here too! This will make it a bit thicker than the broth though.

Seasonings

You should have most, if not all, of the seasonings in your cabinet as well. These are pretty simple, nothing too fancy.

  • Oregano
  • Garlic powder
  • Onion powder
  • Italian seasonings
  • Salt
  • Black pepper

If you want an herby taste too, I highly recommend adding fresh basil and parsley on top. I love those added flavors.

And of course, butter flavored cooking spray adds the best flavoring. Especially in this dish, I love the butter flavor.

Alfredo sauce with almond milk

How to Make a Weight Watchers Friendly Alfredo Sauce

First step is to cook the pasta. Measure out 6 ounces of dry pasta. I always measure dry, it is way easier. Just place a bowl on the scale, zero it out and pour out some pasta until it reaches 6.0 ounces. A little tip is that a box of pasta has 1 pound of pasta, therefore, you will need ⅜ of the box of pasta.

When I open a new box of pasta, I always measure and bag the portions out right then. They are ready to use when I need them. I split them into 6 ounces, 6 ounces and 4 ounces.

Cook the pasta according to the package instructions, drain well then set the pasta aside.

Begin on the sauce when the pasta is halfway done.

Sauce

Let's start on the sauce now. Heat a large pan over medium/high heat, greased with cooking spray. Again, love the butter flavor. Add the minced garlic and sauté for about a minute or two, until fragrant.

Add in the cream cheese and start breaking it up while it melts. When it is about halfway melted, add in the milk and broth. Little by little as you continue to melt the cream cheese.

After adding the broth and milk in, bring the mixture to a slight simmer and continue melting the cream cheese, stirring occasionally. Add in the seasonings and continue melting the cream cheese until it is completely melted.

Add in the shredded mozzarella and bring the mixture to a low simmer while the cheese melts. Simmer the mixture until desired thickness, about 2-3 minutes.

Once the sauce is done, add the pasta noodles in and toss to coat. For added flavor, top with basil and parsley.

  • ½ cup reduced fat, part skim shredded mozzarella cheese
  • 2 teaspoons Italian seasonings
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  • Cook the pasta according to the package instructions, drain well then set the pasta aside.
  • Heat a large pan over medium/high heat, greased with cooking spray. Sauté the garlic for about a minute or two, until fragrant. Add in the cream cheese and start breaking it up while it melts.
  • When the cream cheese is about half way melted, pour in the milk and broth. Pour in the liquids little by little as you continue melting the cream cheese.
  • Bring the mixture to a slight simmer and continue melting the cream cheese, stirring occasionally. Add in the seasonings and continue melting the cream cheese until it is completely melted.
  • Sprinkle in the shredded mozzarella and bring the mixture to a low simmer while the cheese melts. Simmer the mixture until desired thickness, about 2-3 minutes.
  • Once the sauce is done, add the pasta noodles in and toss to coat.
  • For added flavor, top with basil and parsley.

Chipotle

Oh Chipotle. One of my favorite places to grab a quick bite to eat. Everything is completely customizable and the rice is perfection. My only complaint is that they use a bad cut of meat so I only end up eating maybe ⅔ of my meat because I refuse to eat the fatty bites. All in all, I LOVE Chipotle and absolutely love eating there.

I recently switched up my Chipotle order, which is huge for me. I literally change anything or try new things, but here I am, recreating (kinda) my whole chipotle order! For some reason, I have been absolutely craving Chipotle so much lately. I love that you have the freedom to create your own bowl and pick the amount of points you want.

Here’s what I got:
White rice (6PTS)
Chicken (3PTS)
Mild salsa (0PTS)
Corn salsa (0PTS)
Lettuce (0PTS)

This is literally just one more point than the bowl shown in my next review. But for this one, I got to ENJOY RICE. I swapped out the cheese, that you don’t really even taste, for some delicious rice. I didn’t even finish a lot of the chicken, so really this bowl was probably just 8 points for me. I used to be against the corn, no clue why, I love corn. I just don’t try new things, as we know. But I LOVE it. It added extra filling to the bowl for no added points and gave it some sweet bites to it. I definitely have my new favorite bowl.


Chipotle launched their new cilantro-lime cauliflower rice and I am in love!! It is 40 calories or 1 WW point per serving as compared to their rice at 6 points per serving. I heard complaints about it being watery but after mixing it in with my double lettuce, it just counteracted the dry lettuce and was perfectly fine. I hardly noticed the different taste / texture, it was like I was eating rice. My only complaint is that it’s TWO DOLLARS extra. Are you kidding me!? Oh well, I will definitely be returning for low points lunches!!

Veggies Made Great has two new breakfast frittatas and they are amazing! Sausage, Egg & Cheese Frittata made with Beyond Meat® and Sausage & Pepper Frittata made with Beyond Meat®.

Veggies are the first and primary ingredient in every product,  so they’re gluten free and soy free. They best way to get your veggies in, everyday. 

As you know eating healthy is a huge priority of mine therefore, having a great healthier alternative for breakfast is amazing! Veggies made great frittatas are vegetarian, made with cage free eggs, and contain 5g of protein or higher.

The perfect, convenient snack for your on-the-go life. All you need to do is pop them in the microwave for 45 seconds and they are done! This is perfect for those mornings when I am rushing to work and do not have time to make breakfast.

Trader Joe's

I have been loving Trader's so much lately! It is a little bit of a drive, well only 15 minutes but I literally live on top of another grocery store so any drive is a lot, but really worth it.

Here is where I will go over all my must haves for Trader Joes. I will leave a quick list right here and further detail out the items below, including my review and WW points. If you have any more suggestions, leave them in the comments below and I will check them out.

Just Grilled Chicken Strips

This chicken has seriously changed my life. I used to be so against freezer chicken because I could not find any good, zero-point options, until now. This chicken is not fatty like a lot of those other freezer chickens that you can get. It is also zero-points, which is hard to find because most freezer chickens are fatty (aka not zero points) or have some sauce/marinade on them that increases their points. This chicken also tastes amazing and makes your whole house or office smell like a gourmet chef is in there cooking. ⠀⠀⠀⠀⠀⠀⠀⠀

Lite Mexican Blend (Shredded)

I will go so far out of my way to get this cheese. It may be my number one find here at Trader's. I love using reduced fat cheeses in my recipes and you all know I love my tacos, so this is a must. You really cannot tell that it is 'lite', all of the flavor and texture is still there. It also melts and freezes perfectly. I usually buy a couple bags and keep them in the freezer. ⠀

Shredded 3 Cheese Blend

This cheese is a mixture of low-moisture mozzarella cheese, monterey jack cheese and cheddar cheese. While I think the taste is pretty comparable to the one listed above, the real difference is how fine the cheese is shredded. This one is thicker and I like it more for sprinkling on top of tacos because you get those big pieces of cheese.

Reduced Fat Cheese Puffs

If the first thing you do when you walk into Trader Joe's is grab 4 bags of cheese puffs, you are wrong. At least in Winter Park you are because those are front and center. These things are probably too good but you can have so many for so little points. They taste like the real deal too, no compromises here. My husband eats them too which is a huge deal!!

Maple Chicken Breakfast Sausages

If you are not eating two of these for breakfast every single morning, you need to! I stumbled upon these a couple weeks ago and I cannot eat anything else for breakfast. They are slightly sweet, hence the maple, yet have such a great classic chicken sausage flavor to them too. I usually cut them in half and cook them on a pan, slice side down, for a couple minutes, until browned. They are seriously so good.

Light Laughing Cow Cheese Wedges

I do not know how they do it but these things are literally so buttery and soft. You will never find a creamier cheese than a laughing cow cheese wedge. They are low point and really good on a rice cake for breakfast. There are a couple different flavors but I always get the light original.

Southwestern Chopped Salad

There are a ton of varieties for this Trader Joe's salad kit but we like the Southwestern Chopped Salad version the most. My husband eats this for lunch a couple times a week and I will usually grab a few bites of it on the weekend. You can pair it with a different salad dressing to lower your points but I just think this is a great way to have a salad without having to buy and chop up every ingredient. It also pairs so well with the chicken I mentioned above.

Cauliflower Gnocchi

I usually try to keep some of their cauliflower gnocchi in my freezer. The kale one is good too but I like this one better. I like to sear it on a pan over the stove and pair it with a low point sauce, like my homemade tomato sauce linked here. A really great, easy lunch.

Reduced Guilt Mac and Cheese

First off, my favorite thing about this is that a serving size is an entire box. No tricks. While this is probably the least fanciest item I buy, it is good. The sauce is creamy and slightly salty, in all the best ways. The sauce to pasta ratio is perfect and making this dish is a breeze. It is great if you are craving Mac and cheese but do not want to cook.

Mini Chicken Tacos

These are not my favorite thing from Trader Joe's but they are good and I seem to keep buying them. They make for an easy lunch when you are in the mood for tacos. My only complaint is that some parts do not get crispy. I cook them in the air fryer for a little longer than it says. Overall, the flavor is really good and I love eating them.

Chick-Fil-A

Chick-fil-A is my go-to fast food! The one by me is closed for renovations and I am SO SAD. I cannot wait for them to open back up so now Chick-fil-A is just an out-and-about meal instead of a whenever I want meal.

Here is my guide to all things Chick-fil-A

I focused on the nuggets, sandwiches, sides and sauces because those are my favorite and the most popular. Then I threw in a few other items that I recommend.


I absolutely love their grilled nuggets.

I typically get an 8 count grilled nugget with one BBQ sauce. For the life of me, I thought the BBQ sauce was only one point. Maybe it used to be? I have been on WW for a long time now. But anyways, this is 2 points I guess.

My second favorite order would be the classic Chick-fil-A sandwich. 12 points but worth every single one of them and it keeps me full for so long. I really love the grilled version too, but if I have the points, and feel like splurging, I’ll get a fried one.
