Big Mac Tacos

Ingredients
 

Sauce

  • ¼ cup plain, nonfat Greek yogurt
  • 1 tablespoon mustard
  • 1 tablespoon sugar free ketchup
  • 1 teaspoon Splenda
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dill pickle juice from a jar of pickles
  • 1 pinch salt

Meat

  • ¼ white onion
  • 3 cloves minced garlic
  • 16 ounces ground chicken breast one package
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ cup Taco Bell Sauce mild or hot

Tacos

  • 12 taco shells old el paso, crunchy
  • shredded lettuce
  • ¾ cup shredded lite Mexican cheese TJ's
  • pickles
  • tomatoes
  • red onion
  • cilantro

Instructions

Sauce

  • Combine all the ingredients for the sauce in a bowl. Store in the fridge to allow the flavors to form together.

Meat

  • Heat a large pan over medium/high heat. Grease with cooking spray
  • Dice onion then place onion and minced garlic on the heated pan. Saute until slightly soft, about 3 minutes
  • Add ground chicken, as a whole piece, to the pan and cook for 2 minutes to allow it to brown. Do not begin to break up yet. Flip over and brown the other side for 1 minute
  • Once browned on both sides, begin to break up. Add all the seasonings and continue to break up while cooking
  • Once almost cooked, add the Taco Bell sauce and bring to a simmer until chicken is completely cooked, all the pink is gone

Tacos

  • Dice as many pickles, onions, tomatoes and cilantro as you would like. Assemble all of the tacos into the shells.
  • A scoop of meat and tablespoon of cheese per taco. Three tacos per serving.

Instant Pot Garlic Parm Pasta

Creamy, delicious and easy- INSTANT POT GARLIC PARM PASTA!!!! Holy cow this dish is absolutely incredible! I cannot believe how quick and easy it is to cook in a pressure cooker! The sauce is just so light, yet absolutely amazing.

Instant Pot Garlic Parm Pasta

Equipment

  • Pressure cooker

Ingredients
 

  • 1 tablespoon light margarine ICBINB
  • 4 cloves minced garlic
  • 16 ounces chicken breast skinless, boneless
  • 6 ounces penne pasta dry
  • 1.25 cups chicken broth low sodium, fat-free
  • 1 tablespoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon italian seasonings
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 ounces ⅓ less fat cream cheese
  • ¼ cup reduced fat, part skim shredded mozzarella cheese
  • 2 tablespoons reduced fat parmesan cheese
  • 1 teaspoon oregano
  • 1 teaspoon parsley

Instructions

  • Cut chicken up into bite sized pieces, about one inch by one inch
  • Turn the Instant Pot to the saute setting. When the pot heats up, add the margarine and allow it to melt.
  • Add in the garlic and saute for about 20-30 seconds. Add in the cut up chicken and about half the seasonings. Mix up the chicken into the seasonings. Lightly saute the chicken for about 2-3 minutes then turn the Instant Pot off.
  • Add the pasta noodles (dry). Pour the broth around the pasta.
  • Add the seasonings to the broth and stir to combine. Try not to disturb the pasta.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.
  • When the timer goes off, let the pot sit for 3 minutes. Move the valve to venting then remove the lid.
  • Turn the pot back to the saute setting. Add the cream cheese. Stir until melted. Stir in the shredded cheese and parmesan until melted.
  • Top with oregano and parsley.

Lemon Pepper Chicken Bites

I was in the mood for something light and bright today so I whipped up my lemon pepper chicken bites. You guys, this tastes just like Wing Stop’s lemon pepper wings which used to be a favorite of mine. My dish is only one point and let’s not even begin to talk about how many points are in wings!! Paired perfectly with my zero-point homemade ranch. Check out that recipe down below.

Ingredients
 

  • 16 ounces chicken tenderloins
  • 1 tablespoon lemon pepper seasoning
  • 1 tablespoon corn oil

Instructions

  • Grease air fryer with cooking spray and preheat to 375 degrees.
  • Cut chicken tenderloins up into bite sized pieces, about one inch by one inch
  • Place chicken tenderloins in a bowl and drizzle with the oil. Toss to evenly coat.
  • Sprinkle with the seasonings and toss to evenly coat.
  • Place in the greased air fry and cook for about 9-10 minutes, flipping every 3 minutes. Make sure the chicken is fully cooked before removing from the air fryer.

Ingredients
 

  • 4 pieces chicken cutlets 4 ounces each
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

  • 4 ounces fat-free feta crumbles
  • 16 cherry tomatoes

Instructions

  • Preheat oven to 375 degrees F.
  • Grease a casserole dish with cooking spray.
  • Season both sides of the chicken cutlets evenly with the seasonings. Add to the bottom of the casserole dish.
  • Spread out a clove of minced garlic onto each chicken cutlet. Top each one with 1 ounce fat-free feta crumbles
  • Slice cherry tomatoes in half and place on the chicken cutlets, cut side down. Add more or less tomatoes to taste.
  • Bake in the oven for 20-25 minutes, until chicken is fully cooked. Top with fresh herbs.

Birria Tacos

Have you heard of Birria Tacos??? They have been all over TikTok and I have just been needing to try them! The flavors of these tacos are UNREAL, so worth the extra effort to create these. Grab your fork and knife, it's going to get messy!

Ingredients
 

Chicken

  • 1 teaspoon olive oil
  • 16 ounces chicken breast about 2 pieces
  • 1 can diced tomatoes
  • ½ cup chicken broth fat free, low sodium
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ¼ teaspoon black pepper
  • ½ teaspoon oregano

Birria Tacos

  • 12 street corn taco shells Mission
  • ¾ cup shredded lite Mexican cheese Traders
  • red onion diced
  • cilantro

Instructions

Chicken

  • Add oil to your instapot and turn it to the saute setting. When the oil heats up, add the chicken breasts (whole) to the pot and sear both sides for about a minute
  • Turn the instapot off
  • In the instapot, add the diced tomatoes, chicken broth, lime juice and seasonings. Stir to combine.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 20 minutes and start it
  • Once completely cooked, vent and de-pressurize the instapot then open the lid. Shred the chicken with two forks or a hand mixer in a large bowl.
  • Add about a cup or so of the remaining juices to the bowl with the chicken

Birria Tacos

  • Meanwhile, dice the red onion and shred/chop the cilantro
  • Heat a large pan over medium heat, grease with cooking spray
  • Once heated, add three of the tortillas. Add a bit of meat to each shell, being sure to keep it along only one half of the surface of the shell
  • Top with some of the juices from the Instant Pot. It is going to get messy, that is okay
  • Add about a tablespoon of shredded cheese, some diced onions and cilantro. Flip the half of the tortilla shell over, creating sort of a quesadilla
  • Flip the taco over and fry the other side then remove to a clean plate
  • Repeat these steps until all the tacos are made, you should have 12 tacos

Hawaiian Chicken Sliders

Not only do these Hawaiian Chicken Sliders look absolutely amazing, but the smell and taste even better! I was completely blown away by the amazing taste these skewers had. The sauce / glaze that I made for this was simply OMG!!

We used onions and peppers but use anything you like! You can make this vegetarian by swapping out the chicken. Either way, the sauce and glaze just speaks for itself and brings the whole dish into one amazing flavor.


What You Will Need:

  • Can of pineapples
  • Sugar free BBQ sauce
  • Chicken tenderloins
  • Bell peppers
  • Red Onion
  • Sliders - not included in points or calories but I used King's Hawaiian, because duh.

You will also need a blender to create the sauce and a grill to cook everything.

Be sure you grab a can of pineapples that are canned in their own juice. This is super important as there are no added sugars in this one. You can also use fresh pineapple and slice it up but that was just way too much work for me.

I blended the whole can of pineapples (because I made some frozen Piña Coladas!) but this recipe will just need ⅛ cup of blended juice, which is about two slices of pineapples and some juice. Add more or less, you just need ⅛ cup of blended juice.

For the BBQ sauce, I used G Hughes original. You can pick that up here.

As mentioned, I grilled everything so you will need a grill. You can certainly cook the meal a different way, but I love how the grill charred the chicken, it gave it such an amazing flavor. Plus, it was super easy to just throw it all on the grill. Just be cautious as different grills have different cooking times. Be sure the chicken is fully cooked before consuming.

The buns are not included in the points or calories because I like to let people choose their own buns. I used King's Hawaiian sweet slider buns. They are 3 points for one and so so perfect for this dish.

This makes 6 sliders, 2 per serving.

Ingredients
 

Sauce

  • ⅛ cup blended pineapple juice
  • ¼ cup sugar free BBQ sauce G Hughes

Sliders

  • 16 ounces chicken breast 2 pieces
  • 1 bell pepper
  • ½ red onion
  • cilantro

Instructions

  • Get the grill started, we used a charcoal grill.

Sauce

  • Blend pineapple until you have ⅛ cup of pineapple juice. It took about two slices of pineapple with a little juice.
  • Place that in a bowl and add in the BBQ sauce, stir together.

Chicken

  • Lay chicken breast out on a cutting board. Cut chicken breast in half, seperating the thin half from the thicker half. Set the thicker side upwards and cut in half, like butterflying the chicken, to thin it out. There should be 6 pieces total.
  • Add to the bowl of pineapple and BBQ and toss to coat the chicken completely.
  • Let the chicken marinate while slicing the vegetables.

Veggies

  • Cut pepper and onion into thin strips.

Grilling

  • Once the grill is heated, place the chicken on the heated grill. Cook the chicken for about 15 minutes, or until fully cooked. Flip the chicken every few minutes.
  • Add a skillet to the top of the grill and heat it up. Add pepper and onion slices and saute until desired wellness.

Sliders

  • Assemble the sliders and top with fresh cilantro.

Instant Pot Sausage Spinach Pasta

My husband has been asking me for sausage pasta lately, so we compromised and I got to add spinach to it! lol. This Instant Pot Sausage Spinach Pasta was so good and worth every point. It has a rich, gravy-like sauce to it while still keeping that creamy flavor. It has A LOT of meat too, guaranteed to keep you full. Total comfort food. That's the beauty of WW, I can eat this 13 point dish and feel no guilt, because I had 10 points leftover for any other food I need!

Here is what you will need to make this recipe:

A pressure cooker

I absolutely love my Instant, you can order that here. I also recommend getting a non-stick insert. It makes clean up much easier and the food does not stick to the bowl. With the Instant, you need to work very quickly so having the insert is great. You can order that here.

Next will be all your ingredients

  • A white onion
  • Garlic cloves
  • Olive oil
  • Ground Italian sausage, mild
  • Seasonings
  • Broth, I used chicken
  • Pasta
  • Reduced-fat parmesan
  • ⅓ less fat cream cheese

The first thing you will need to do is dice up the onion. I love my new knife set, it is amazing how much a good knife really changes the game. You can order that knife set here.

This is the sausage that we used. I know most people don't have Publix (which is really sad) so just substitute it for something else, but be mindful of the point values.

Next you'll need to separate your pasta. I pour out 6 ounces of pasta in a bowl and bag up the rest for another night.

Next, we will begin adding everything to the Instant Pot. Be sure to spray the pot or use this insert. I love this insert because nothing sticks, making it such an easy clean-up.

Make sure you have the seasonings and everything else ready to go as working in an Instant goes really quick! There will be no time to spare.

Start with the garlic and onions. Turn the Instant Pot to the saute setting and cook the garlic and onion for 1-2 minutes, until they look like this.

Then add the ground sausage and begin breaking it up while adding the seasonings. Continue breaking up while cooking, until it is about halfway cooked, about 3-5 minutes.

Add the pasta on top of the sausage then the broth around the pasta. And start the Instant Pot.

Once that is finished cooking, add the spinach and cheese and just mix until the spinach is wilted and the cheeses are melted.

How easy is this!!

  • 1 tablespoon reduced fat parmesan cheese

  • 2 cups baby spinach

Instructions

  • Make sure the onion is diced and the garlic is minced, set aside
  • Turn your Instapot to the saute setting. When the display says HOT add in the oil and allow it to heat up
  • Add in the garlic and onion, sauteing for about 1-2 minutes
  • Add the ground sausage and seasoning with all the seasonings. Start to break up the ground sausage. Continue breaking up while cooking it for 3-5 minutes. Turn off the saute setting
  • Add the pasta noodles, dry, on top of the ground sausage. Add the broth around the pasta.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it
  • When the time is up let the pot sit for 3 minutes and then move the valve to venting. Remove the lid.
  • Add the cream cheese, parmesan cheese and spinach. Stir to combine until the cheese is melted and the spinach is wilted.

  • Place on a greased baking tray and bake for 10 minutes
  • Meanwhile, in a small bowl, stir together all the ingredients for the sauce
  • Once the chicken has cooked for 10 minutes, flip each piece over then top evenly with the sour cream mixture.
  • Bake for another 10 minutes, or until the chicken is fully cooked.
  • Top with cilantro and enjoy

Taco Ground Chicken

I haven't had classic taco meat in a really long time. Ground chicken taco meat is very easy to make, yet is so flavorful and delicious! I had three tacos, served in street corn tortillas (1 pt each). I topped them off with some of my homemade salsa and corn salsa (corn, red onion, cilantro, lime juice and salt). I added a little rice on the bottom too. Such a delicious meal!

This recipe calls for Taco Bell sauce, but you can use any taco sauce you like. Taco Bell sauce is my personal favorite and considered a staple for me!

  • ¼ white onion
  • 3 cloves minced garlic
  • 16 ounces ground chicken breast one package
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder

  • ⅛ cup Taco Bell Sauce mild or hot

Instructions

  • heat a large pan over medium/high heat. Grease with cooking spray
  • dice onion then place onion and minced garlic on the heated pan. Saute until slightly soft, about 3 minutes
  • add ground chicken, as a whole piece, to the pan and cook for 2 minutes to allow it to brown. Do not begin to break up yet. Flip over and brown the other side for 1 minute
  • Once browned on both sides, begin to break up. Add all the seasonings and continue to break up while cooking
  • Once almost cooked, add the Taco Bell sauce and bring to a simmer until chicken is completely cooked, all the pink is gone

It has been a long long time since I had one of my favorite burger toppings- CRISPY ONIONS! They add so much crunch and flavor to a burger, I cannot resist. Super easy to make and a great topping to offer for your burger. I chose my smash burgers and added these onions on top. It was such a hit!

Instructions

  • Slice the half onion into very thin strips
  • Add liquid egg whites to one bowl
  • Add flour and seasonings to another bowl, stirring together
  • Place the onions into the egg whites and toss to coat
  • Place the onions into the bowl of flour, shaking off any excess liquids. Toss to completely coat the onions in the flour
  • Place the coated onions in a greased air fryer. Air fry at 350 degrees for about 10 minutes, or until desired wellness. Shake and spray the onions with cooking spray every few minutes.

I love making this dish in the Instant Pot because it is just a one pot, press go kinda meal. The easiest thing!

I use this Instapot, you can find that here. But I also use this non-stick insert so my food does not stick to the bottom. It makes for a super easy clean up as well.

  • 4 cloves minced garlic
  • ⅛ cup diced white onion
  • 16 ounces extra lean ground beef 96% fat-free
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 ounces pasta dry, elbow
  • ⅛ cup Worcestershire sauce
  • ⅛ cup sugar free ketchup G Hughes
  • 1 tablespoon Splenda
  • 1 can diced tomatoes 14.5 oz
  • ¼ cup sweet corn kernels canned
  • 1 cup chicken broth low sodium
  • 2 ounces ⅓ less fat cream cheese
  • ¼ cup reduced fat, 2% milk cheddar cheese

Instructions

  • Spray the Instant Pot with cooking spray. Set to saute setting and heat up.
  • Once heated, add minced garlic and diced onion and saute for about a minute or two.
  • Add ground beef and season with the seasonings. Break up the ground beef as it cooks. Cook for about 5 minutes, while continuing to break up, until about halfway cooked.
  • Turn off the Instant Pot.
  • Add pasta noodles, dry on top of the beef.
  • Add in Worcestershire, ketchup, Splenda, tomatoes, broth and corn kernels. Stir to combine, trying not to disturb the pasta.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 4 minutes and start it.
  • Once the timer goes off, vent and de-pressurize the instapot then open the lid.
  • Add in cream cheese and shredded cheese, stirring to combine.

Ground Orange Chicken

The recipe that started it all - GROUND ORANGE CHICKEN. This dish is high in protein and flavor, yet low in points. When I first started WW, I kid you not, I made this recipe (and stuffed peppers) every single day for weeks.. ha! All of my friends kept asking for this recipe which is how Allie Carte started. I love how versatile it is; it can really be paired with anything! Today I chose Taste of Thai rice noodles (for 6 additional points), but it is so good with spaghetti squash or rice. As mentioned, this recipe only includes the meat. I added Taste of Thai noodles for an additional 6 points. Feel free to pair it with anything you would like. For a low point version, I HIGHLY suggest spaghetti squash. This recipe pairs so well with it.

Sauce Ingredients

  • 2 teaspoons teriyaki sauce low sodium
  • 2 tablespoons soy sauce low sodium
  • 3 tablespoons white vinegar
  • 1 orange juice only
  • 6 teaspoons Splenda (6 packets)

Chicken Ingredients

  • 1 teaspoon sesame oil
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 16 ounces ground chicken breast
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon paprika

Slurry Ingredients

  • 1 tablespoon cornstarch
  • 1 teaspoon water

Instructions

  • Add the sauce ingredients to a bowl and stir to combine. Set aside.
  • Heat sesame oil up in a medium pan over medium/high heat
  • Once heated, add minced garlic and ginger and cook for one minute, until fragrant
  • Add the ground chicken, whole and brown each side for about 1 minute.
  • Start breaking up the chicken. While the chicken breaks up, add the seasonings and continue to break up the chicken while it cooks.
  • Once chicken is fully cooked, reduce the heat slightly.
  • Add the sauce and stir until it comes to a boil. Allow the sauce simmer for about 5 minutes, until thickening
  • Meanwhile, combine the ingredients for the slurry in a small bowl.
  • Slowly stir the slurry into the sauce until desired thickness is reached

Instant Pot Penne Vodka Meal Prep

I have just been absolutely craving penne alla vodka. But that can get very very high in points. So, as I usually do, I said, why don’t I put my Allie Carte spin on it and make something extremely delicious that’s low in points! How good does this super creamy, tasteful sauce look! I paired it with some ground chicken and Banza pasta for a whole lotta protein. A great way to keep me full all day while working.

  • 1 can diced tomatoes 14.5 ounces
  • 16 ounces ground chicken breast
  • 4 cloves minced garlic
  • ⅛ cup diced white onion
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon parsley
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon ground red pepper
  • 8 ounces penne pasta dry, Banza, one box
  • 1.25 cups chicken broth
  • 2 ounces ⅓ less fat cream cheese
  • 1 tablespoon reduced fat parmesan cheese

Instructions

  • Blend tomatoes until smooth then set aside.
  • Turn your Instapot to the saute setting. Grease with cooking spray.
  • When the pot heats up, add in the minced garlic and diced onion and sauté for 1-2 minutes, until slightly soft.
  • Add the ground chicken and begin to break up.
  • Season with the seasonings and continue breaking up until about halfway cooked.
  • Turn the Instant Pot off.
  • Add in the pasta noodles (dry). Pour the broth and blended tomatoes around the pasta
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it (set to 6 if you like the pasta softer)
  • When the time is up let the pot sit for 3 minutes and then move the valve to venting. Remove the lid
  • Turn the pot to saute. Add the parmesan and cream cheese into the pot. Stir until melted

Instant Pot Pork Carnitas

I tried Chipotle carnitas a couple weeks ago and I have been CRAVING them ever since. I decided to make my own, in the Instant Pot, and I have to say, I think I really nailed it. Chipotle has some competition. These pork carnitas were perfectly cooked and perfectly seasoned. They shred apart in such a perfect way. Absolutely delicious!!

I made tacos one night with these and then a bowl the next day! I paired it with some corn salsa too for a sweet taste. It was just sweet corn kernels, diced onion and cilantro. Super good!

Make sure you pick up an Instant Pot for this recipe. Here is the one I use. I also use this nonstick bowl insert so my food does not stick and burn. Very helpful!

You can also broil the meat afterwards. I have done that with my chicken carnitas but I do not think it helped with the pork.


Instant Pot Pork Carnitas

Ingredients
 

  • 1 pound pork shoulder blade steak
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • 1 tablespoon olive oil
  • ¼ cup broth
  • ¼ cup orange juice
  • ⅛ cup lime juice

Instructions

  • I used a 1.25 pound pork shoulder and trimmed down the fat so it was about a pound.
  • Season both sides of the pork shoulder with the seasonings.
  • Add the oil to your Instant Pot and turn it to the saute setting. When the oil heats up, add the pork to the pot and sear both sides for about two minutes.
  • Turn the Instapot off.
  • In the instapot, add the broth, orange juice and lime juice.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it. (It will take about 15 minutes per pound to cook).
  • Once completely cooked, let it set for 5-7 minutes. Then, vent and de-pressurize the instapot then open the lid.
  • Remove the pork and place in a large bowl. Shred with a hand mixer or two forks.
  • Store the pork with the liquids for a juicer meat.

Skinny Zero-Point Salsa

Introducing my newest obsession: my skinny zero-point salsa. Better and healthier than your average Mexican restaurant with even better taste! I’m not lying when I say this stuff packs a punch! It’s great paired with chips or veggies, but watch out, you may become addicted as well!! 


Make it spicer with more jalapeño! Or more onion-y with more onion! Totally up to you what you want to do with this dip, this is just what I like and a great base to start with.

Makes about 2 cups of sauce, ⅛ cup per serving.... but hey, its zero-points, enjoy as much as you want!!

I served mine with some thin and crispy Tostitos.

  • Add diced tomatoes, seasonings, and lime juice to a blender. Blend until your desired consistency. You will be blending again so do not over blend.
  • Add cilantro and blend until just combined.
  • Add diced onion (and diced jalapeño, if desired) and stir together.

Sweet and Spicy Asian Pasta

This meat is my absolute favorite thing to make lately! I cannot get enough of it so I decided to change it up a bit and turn it into a creamy pasta!! The sweet and spicy flavors of this meat combine together perfectly with the creamy pasta for one amazing dish. You seriously need to try this out!! You will not believe how amazing these flavors are.

  • 2 teaspoons garlic powder
  • 3 tablespoons Splenda 9 packets
  • 1 teaspoon Sriracha sauce more to taste
  • ½ teaspoon paprika sub ground red pepper for spice
  • ⅛ cup soy sauce low sodium
  • 1 teaspoon salt and pepper
  • 2 ounces ⅓ less fat cream cheese

Instructions

  • Cook pasta according to package instructions. Reserve ¼ cup pasta water. Then drain well and set aside.
  • Heat sesame oil up in a large pan. Slice green onion and add to the pan with the minced garlic. Cook for about 2-3 minutes, until garlic is starting to brown.
  • Add the ground meat and break up a bit while cooking. Once broken up, add the garlic powder, paprika and 1 teaspoon of Splenda sugar. Cook completely.
  • Once cooked, reduce the heat and add the remaining ingredients and stir together. Boil for about 2-3 minutes to allow to flavors to absorb into the chicken.
  • Add the cooked pasta and toss to combine. Add a splash of pasta water if needed.

Enjoy this perfectly cooked, deliciously seasoned chicken, topped with a rich, creamy and veggie packed sauce. A super simple chicken dish to whip up for dinner. Perfectly paired with some sun-dried tomatoes and some rice or pasta!

  • 4 chicken cutlets 4 ounces each
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasonings
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • 20 sprays butter spray ICBINB
  • 1 tablespoon light margarine ICBINB
  • 2 ounces ⅓ less fat cream cheese
  • ⅓ cup plain, unsweetened almond milk
  • 1 cup baby spinach

Instructions

  • Season both sides of the chicken cutlets with half of the seasonings.
  • Heat large pan over medium high heat, greased with cooking spray. Add the chicken cutlets and cook each side for about 4-5 minutes, until fully cooked.
  • Spray with 10 sprays of butter spray and flip the chicken again. Let the chicken sear in the butter. Spray the other side and flip again. Let that side sear in the butter. Remove from heat and set chicken aside on a clean plate.
  • Heat a small pan over medium low heat. Add the margarine and allow it to melt. Add the cream cheese and mix while it melts. Add the almond milk and stir together. Add more almond milk for a thinner sauce.
  • Season with the other half of the seasonings. Add the spinach and mix until completely wilted.
  • Top chicken with the sauce and enjoy.

Cheeseburger Stuffed Peppers

Cheeseburger Stuffed Peppers: Everything you know and love about a cheeseburger, now low carb and packed with veggies! The tastes and textures of this dish are truly incredible, I could eat it everyday. So rich, so creamy, so delicious, I am always wanting more. I topped mine off with some pickles and jalapeños for a super burger dish!!

Ingredients
 

  • 3 bell peppers
  • 2 cloves garlic minced
  • 16 ounces ground chicken breast or 99% fat free ground turkey breast
  • ¼ onion diced
  • 5 tablespoons Allie Carte homemade tomato sauce recipe linked below
  • 2 tablespoons sugar free ketchup (G Hughes brand)
  • 2 ounces ⅓ less fat cream cheese
  • ½ cup reduced fat, 2% milk cheddar cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Preheat oven to 450 degrees. Slice peppers and remove the seeds/core. Place on a greased baking dish, cut side up, and bake for 20-30 minutes.
  • Heat a large pan on the stove over medium/high heat. Spray with cooking spray
  • Add minced garlic and cook for one minute. Add diced onion and cook until soft and translucent, about 3-4 minutes
  • Add ground chicken, breaking it apart while cooking. Once slightly broken up, season with the seasonings. Cook almost through, until almost all the pink is gone
  • Add tomato sauce, broth, ketchup and stir to combine. Allow chicken to cook completely
  • Add in cream cheese and stir in until melted. Add in cheddar cheese and stir until melted
  • Once the peppers are cooked, stuff the chicken mixture into the peppers and enjoy!
