One Point Spaghetti Squash alla Vodka

One. Point. Spaghetti. Squash. Alla. Vodka. Do I need to say more??? How can something this low in points, taste this good! It is so creamy and really tastes like alla vodka sauce. I have been eating this almost everyday and I am never tired of it. Try adding some ground chicken breast for extra protein.

One Point Spaghetti alla Vodka

Ingredients
 

  • 1 spaghetti squash
  • cooking spray
  • ½ tablespoon garlic salt
  • 3 laughing cow cheese wedges garlic and herb
  • ¾ cup Allie Carte homemade tomato sauce

Instructions

  • Slice spaghetti squash in half, longwise. Remove the seeds and the core
  • Spray with cooking spray and sprinkle with the garlic salt
  • Place, cut side down, on a microwave safe dish and take a fork and carefully fork up the skin. Microwave for 8-10 minutes, until the skin is slightly soft to the touch
  • Or bake in the oven on a baking tray, cut side down, at 400 degrees for 45 minutes to an hour
  • Once cooked, fork up the insides of the squash
  • Add the laughing cow cheese wedges and mix until completely melted, 1.5 per each side of the squash
  • Add the tomato sauce and mix again
  • Divide into three servings and enjoy!

Meatball Subs

I have been absolutely craving some meatball subs lately so one night, I just decided to make them! They were so fun and easy to construct and I utilized my zero point tomato sauce and meatball recipe to keep it low point. So yummy!

Ingredients
 

Meatballs

  • 16 ounces ground chicken breast 1 package
  • 2 tablespoons liquid egg whites 1 egg
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Sauce

  • 1 can diced tomatoes 14.5 oz can
  • 4 cloves minced garlic
  • 2 tablespoons oregano
  • 2 tablespoons Italian seasonings
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon granular sugar replacement Swerve
  • 1 teaspoon lemon juice

Subs

  • 4 hoagie rolls
  • 20 sprays butter spray ICBINB
  • 1 cup reduced fat, part skim shredded mozzarella cheese

Instructions

Meatballs

  • preheat oven to 450 degrees
  • place ground chicken in a large bowl and sprinkle with the seasonings, mix up with a spoon
  • add the egg and breadcrumbs and mix well
  • divide chicken into 16 equal pieces, about a heaping ⅛ cup
  • spray chicken with cooking spray then roll each piece into a ball. The spray helps your hands not get to sticky
  • place on a greased baking tray and bake for 18 minutes. Flip and spray with cooking spray halffway

Tomato Sauce

  • Blend tomatoes in a blender until pureed
  • Heat a pot over low heat. Once heated, spray with cooking spray and add garlic. Cook for 1-2 minutes, until fragrant
  • Add tomatoes and the remaining ingredients to the pot and stir to combine. Bring to a slight boil and allow the sauce to simmer fo 30-45 minutes, stirring occasionally

Subs

  • Preheat oven to 400 degrees
  • Open up each hoagie roll and spray with 5 sprays of ICBINB spray, each
  • Add ¼ cup shredded cheese to each hoagie
  • Place in the oven for about 5-7 minutes, until cheese is melted and hoagies are toasted
  • Add 4 meatballs to each hoagie and top with tomato sauce

Broccoli Bacon Beef Pasta

Ingredients
 

  • 6 ounces pasta fettuccine or spaghetti
  • 1 tablespoons light margarine ICBINB
  • 2 cloves minced garlic
  • ¼ yellow onion diced
  • 16 ounces extra lean ground beef
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 3 strips fully cooked bacon
  • 2 heads broccoli
  • ¼ cup pasta water
  • 2 ounces ⅓ less fat cream cheese
  • ¼ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • Cook pasta according to the package. Reserve ½ cup of pasta water then drain well and set aside
  • Heat a large pan over medium/high heat
  • Add margarine and allow it to melt
  • Add garlic and cook for one minute, until fragrant
  • Dice onion. Add to pan and cook until slightly soft, about 3-4 minutes
  • Add ground beef and break apart a bit. Sprinkle on the seasonings and mix to combine, while continuing to break apart
  • Dice the bacon. Once the beef is halfway cooked, add in the bacon and continue to cook the beef.
  • Cut up the broccoli and set aside.
  • Once the beef is almost cooked, about 90% cooked, add in the broccoli and a ¼ cup of pasta water. Cover the pan and allow broccoli to steam and beef to fully cook.
  • Once beef is completely cooked and the broccoli is soft, add the cream cheese and mix everything together as the cream cheese melts
  • Add the shredded cheese and mix everything together as the cheese melts
  • Bring the heat up for just a few minutes to reduce the sauce
  • Add in the pasta and toss to coat, add more pasta sauce if needed.

Ingredients
 

  • ⅔ cup Kodiak flapjack and waffle mix
  • ⅔ teaspoon baking powder
  • 1 tablespoon confectioners sugar replacement Swerve
  • 1 teaspoon pumpkin pie spice sub cinnamon
  • ⅓ cup pure pumpkin heaping cup
  • ¼ cup liquid egg whites
  • 2 tablespoons water
  • 1 tablespoon brown sugar replacement Swerve

Instructions

  • Combine pancake mix, baking powder, confectioners sugar and pumpkin pie spice in a bowl.
  • Add the pumpkin, egg and water then stir until just combined, do not over mix
  • Spray a muffin tin with cooking spray and evenly divide the mix into 5 muffin holes
  • Then preheat the oven to 350 degrees. While the oven is preheating, the muffin mix will rise creating a lighter muffin
  • Once preheated, top each muffin with some of the brown sugar
  • Bake for 30 minutes
  • Allow muffins to cool in the pan for 5 minutes then enjoy

Parmesan Truffle Fries

OH MY GOODNESS, I have made the greatest fries in the entire world. I literally cannot stop thinking about them and could eat them all the time! It was so hard not to devour this entire thing before I took a photo. The slight hint of truffle, with the parmesan cheese, absolutely amazing!!

Ingredients
 

  • 1 russet potato large
  • 2 teaspoons truffle oil
  • 1 tablespoon reduced fat parmesan cheese
  • ½ teaspoon garlic salt

Instructions

  • Cut potato up into French Fry shaped pieces and then place in a bowl of ice water for approximately 30 minutes.
  • Preheat air fryer to 400 and spray the tray with cooking spray.
  • Remove the fries from the bowl of water and pat dry.
  • Place fries in a large bowl. Drizzle with the truffle oil, tossing to coat. Sprinkle with the parmesan and garlic salt, tossing to coat.
  • Place fries in the air fryer, air fry for 10 minutes.
  • Open the air fryer and shake up/flip the fries. Spray with cooking spray and cook for another 10-15 minutes, until desired crispness.

Tomato Alfredo Pasta

I have been on an Alfredo kick lately and I cannot be stopped. My sister was in town and we were really craving some Alfredo but wanted to use my sun-dried tomatoes. We whipped up this tomato Alfredo pasta and this may be the best sauce I have ever had. I love the creaminess mixed with the sun-dried tomatoes. Truly amazing!!

  • ¼ cup sun-dried tomatoes in oil, drained
  • 4 cloves minced garlic
  • 2 ounces ⅓ less fat cream cheese
  • ⅛ cup plain, unsweetened almond milk
  • ½ cup pasta water
  • ¼ cup Allie Carte homemade tomato sauce
  • 1 teaspoon garlic salt
  • ½ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • Cook pasta according to box. Set aside ½ cup of pasta water then drain well and set aside
  • Heat a large pan, greased with cooking spray, over medium heat. Add sundried tomatoes and minced garlic, cooking for about 4 minutes, until fragrant.
  • Add in cream cheese and almond milk. Allow it to melt, adding in pasta water as needed.
  • Add in the tomato sauce and garlic salt, tossing to combine.
  • Allow sauce to come to a slight boil and stir while it thickens.
  • Add shredded mozzarella cheese to pan and stir until completely melted
  • Add in pasta and toss to completely coat.

Sheet Pan Sausage and Potatoes

Super easy dinner or meal prep! This sausage and potato dish can be made on one sheet pan, which means easy clean up. I added some onions and peppers for flavor and veggies but I wish I had some zucchini too, next time!

  • Place potatoes on the baking tray then drizzle on the oil, toss to coat
  • Add the minced garlic and seasonings, toss to coat
  • Bake for 20 minutes, flipping halfway
  • Meanwhile, slice up the onion, bell pepper and chicken sausage
  • After the 20 minutes, add the onion, pepper and sausage to the pan with the potatoes, toss to coat
  • Bake for another 10 minutes, or until desired wellness

Cajun Chicken Alfredo

Cajun Chicken Alfredo, creamy, a little bit spicy, but oh so delicious. I love how all of the flavors combine into one amazing dish. Plus, this makes amazing leftovers.

Cajun Chicken Alfredo

Ingredients
 

  • 6 ounces pasta dry, fettuccine or spaghetti
  • 16 ounces chicken cutlets breasts
  • 2 tablespoons cajun seasoning
  • 4 strips fully cooked bacon
  • 2 cloves minced garlic
  • 2 ounces ⅓ less fat cream cheese
  • ⅜ cup plain, unsweetened almond milk
  • ½ cup chicken broth fat free, low sodium
  • ½ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • Cook pasta according to box, drain well and set aside
  • Slice chicken up into bite-sized pieces, about 1 inch by 1 inch. Season with half the cajun seasoning
  • Dice the fully cooked bacon and set aside
  • Heat a large pan, greased with cooking spray, over medium heat, add garlic and cook for one minute
  • Add chicken to the pan, cook about 3-4 minutes per side. Once almost cooked, add the bacon and allow it to heat up while the chicken cooks
  • Once the chicken is fully cooked, remove from pan and set aside on a clean plate
  • Re-spray the pan and add in cream cheese. Allow it to melt halfway then add milk and broth. Stir until all the cream cheese is melted then add the second half of the cajun seasonings
  • Allow sauce to come to a slight boil and stir while it thickens
  • Add shredded mozzarella cheese to pan and stir until completely melted
  • Add in chicken and pasta and toss to completely coat

Ingredients
 

  • 4/3 cup Kodiak flapjack and waffle mix
  • 4/3 teaspoon baking powder
  • 2 tablespoons granular sugar replacement Swerve
  • 2 teaspoon pumpkin pie spice
  • ⅔ cup pure pumpkin heaping
  • ½ cup liquid egg whites
  • ¼ cup water
  • 2 tablespoons brown sugar replacement Swerve

Instructions

  • Add all dry ingredients (not brown sugar) to a bowl and stir together
  • Add in wet ingredients and mix until just combined and all the lumps are out, do not overmix
  • Grease a bread baking tin and pour the mixture in
  • THEN start preheating the oven to 350 degrees. The mixture will rise and become fluffy as the oven preheats
  • Once the oven is preheated, sprinkle on the brown sugar
  • Bake for 30 minutes. Remove from oven and let the bread rest in the baking tin for 5 minutes, as it cool
  • Slice into 10 pieces

You can make the parmesan garlic ones with store bought Buffalo Wild Wings sauce, I thinned it out a bit because it was so thick.

If you want the BBQ boneless wings, just toss the wings in some G Hughes BBQ sauce. It will reduce the points by two points. Or do a combo!

  • 16 ounces chicken tenderloins about 6-7 pieces
  • 4 tablespoons flour
  • 6 tablespoons breadcrumbs
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper

Sauce

  • 6 tablespoons buffalo wild wings grocery parmesan garlic sauce
  • 3 tablespoons water

Instructions

  • preheat air fryer to 400 degrees
  • combine flour, breadcrumbs and seasonings in a small bowl
  • cut chicken tenderloins into bite-sized pieces, about 5 pieces per tender
  • roll each piece in the flour mixture, being sure to completely coat each piece
  • place the coated chicken into the air fryer and cook for one minute. Spray chicken with cooking spray and cook for another 3 minutes
  • flip chicken over and spray with cooking spray again. Cook for another 6 minutes, until fully cooked
  • or bake in the oven at 450 degrees for about 10-12 minutes, flipping halfway

Sauce

  • In a baggie, add the buffalo wild wings sauce and water. Mix together.
  • Add the cooked boneless wings and shake to coat
  • Or substitute with G Hughes BBQ sauce (without water) to reduce the points by 2 points per serving

Bacon Smash Cheeseburgers

Stepping up the burger game with BACON SMASH CHEESEBURGERS!!! Ahhh!! Seriously, I mean look at these! Double patties, double cheese, topped with bacon… omgggg. I’m not even kidding, my husband and I make these every other week, if not every week. Perfect on the blackstone too!

Bacon Smash Cheeseburgers

Ingredients
 

Burgers

  • 16 ounces extra lean ground beef
  • ½ tablespoon garlic salt
  • 6 slices fully cooked bacon
  • 8 slices Velveeta cheese
  • 4 hamburger buns of your choice

Instructions

  • heat a large pan over medium/high heat. Grease with cooking spray
  • divide ground beef into 8 equal pieces and roll each into a ball
  • place 2-3 balls on your heated pan (depending how many will fit) and let the burger balls brown up a little
  • once browned, flip the burger balls over and smash down with the spatula
  • sprinkle each with just a pinch of the garlic salt and cook on that side for about 2-3 minutes
  • flip each burger over and cook for another 2-3 minutes, until desired wellness. Set aside
  • spray the pan again and repeat until all burgers are cooked
  • heat up the fully cooked bacon in the microwave
  • assemble each burger with two patties, two slices of cheese and 1.5 strips of fully cooked bacon onto your bun of choice

Starbucks Pumpkin Cream Cold Brew

Skip the drive thru and make my zero point, copycat starbucks pumpkin cream cold brew, with the foam, at home! 

It is pumpkin season! Undeniably my favorite season ever. It starts in August, yes, give this Floridian SOMETHING, and end in... December?? That is when peppermint mocha and gingerbread season starts!

I just love love love the flavor of pumpkin and will enjoy that in the 95 degree Florida weather anytime, anywhere. Starbucks released their pumpkin cream cold brew a couple years ago. But, did you know it is literally 17 points for a venti? HOW WHY UGH! But do not worry, I made you a zero point version that you can make at home! Cheaper, healthier and absolutely delicious.

I make my zero point Starbucks vanilla sweet cream cold foam ALL the time and this is very similar and easy! But, it is fall, we are making pumpkin!!

What You Will Need:

This is mostly the recipe for the actual pumpkin cold foam; however, I can show you how to make the cold brew part too.

I prefer to make the actual coffee part first. Then, the coffee will be ready to pour the super froth-y foam over it! Let's start with that!

You will need two glasses, one to make the coffee and one to make the actual cold foam. I prefer using a glass jar, like a mason jar, to make the foam as it really allows it to expand. However, I do use plastic or just anything I have laying around.

Next, the most important tool is a REALLY GOOD frother. I am telling you, the actual frother is VERY important and you will not get good results without a good frother. This is the frother that I use and I HIGHLY recommend it. However, if you do have your own frother that you like, you can try that.

Now, we can get into the ingredients.

Cold Brew

I go through different ones; however, I usually end up with Stok Unsweetened Cold Brew. You can use any cold brew that you prefer. But, you can also make this with hot coffee and pour the pumpkin cold foam on top. I am not the biggest hot coffee fan; therefore, I have not tried it but I am sure it will taste wonderful.

I know that Starbucks also sells their cold brew in grocery stores, if you want to very authentic. Dunkin has one too and I am sure lots of brands do. You can also make your own cold brew at home, which I have done many times. I just use this super easy cold brew maker.

Pumpkin Syrup

I use Jordan's Skinny Syrups pumpkin caramel scone flavor. I have a couple different pumpkin flavored items here from skinny mixes, the exact flavor you use does not matter too much. This specific one is sweeter, probably from the caramel, but I have other ones that are more pumpkin SPICE. You can use anything you want, just make sure it is sugar free. I grab these at HomeGoods for pretty cheap.

Almond Milk

Grab a plain, unsweetened almond milk. I usually, almost always, have plain unsweetened almond milk at home. I love it because it is very neutral and light. It does not froth too well, which is why I add in a little fat-free half and half.

If you are allergic to almonds, you can substitute oat milk, which does froth a little better. You can also just use fully half and half or try in some heavy whipping cream. Also, if you can find it, sugar free pumpkin creamer is very good!

Half and Half

Adding just a little bit of half and half is going to make the foam last a bit longer. I use a 1 to 3 ratio, which I thinks works fine. I use fat-free half and half, just to keep it a bit lighter; however, you can use the regular one. In addition, you can also try some heavy whipping cream.

Pure Pumpkin

Starbucks pumpkin cream cold brew needs some pumpkin. This is canned pure pumpkin. I typically find it in the baking section on the very bottom shelf. Just make sure it is PURE PUMPKIN. Do not come at me with pumpkin pie filling. Nope.

Splenda

I like mine sweeter; however, you can skip the Splenda and it will have more of a spice flavoring to it. I personally think it needs the Splenda though. You can also use a different type of sweetener, if you do not like sugar replacements.

Pumpkin Pie Spice

You can grab this at your grocery store, comes in a little container.

What You Will Do:

Let's make some Starbucks pumpkin cream cold brew!!

You will need two glasses, I always use mason jars for my coffee because they are so pretty and easy to handle. Plus, your girl cannot handle too much coffee! You can use a larger glass, just adjust your flavoring accordingly.

I prefer to make the actual coffee part first. Then, the coffee will be ready to pour the super froth-y foam over it! Let's start with that!

Cold Brew:

Fill one up with ice, about ¾ of the way full. Add in the cold brew, leaving 2-3 inches at the top for the pumpkin foam. Pour in the pumpkin syrup and just mix to combine. If you like it super sweet, you can also add some Splenda into this. Set that aside and grab a new glass.

Cold Foam:

In a clean glass, add the half and half, almond milk, pure pumpkin and Splenda. You can add the pumpkin pie spice into this, or on top. I do both, both are good, whatever you prefer.

Froth the creamer mixture until it has doubled. I have the most amazing frother, a good frother is SUPER important here. Mine is pretty cheap and has been with me for two years, works so well!

After the foam has doubled, pour that on top of the cold brew and sprinkle on some pumpkin pie spice!

One Point Alfredo

Just two ingredients are required to make this creamy and delicious one point Alfredo! I swear I could eat this every night and never get tired of it. You can serve it as a side or add some chicken or shrimp and make it a whole meal. It’s an amazing low point lunch too!

This recipe is for a medium sized squash. I generally eat three servings for a medium sized squash; therefore, I use three laughing cow cheese wedges, 1 per serving. If I have a smaller squash, I will just use two cheese wedges and eat half. If I have a larger squash, I may add another cheese wedge and eat more servings. Basically, however many cheese wedges I need is how many servings I divide the squash into so I just eat one wedge a serving.

The cooking directions are also for a medium sized squash. If using a smaller or larger squash, adjust your timing. I love baking it in the oven but rarely do I have time to wait an hour so the microwave works just fine. If you have the time, try it in the oven, the squash gets caramel-y and amazing.

One Point Alfredo

Ingredients
 

  • 1 spaghetti squash
  • cooking spray
  • ½ tablespoon garlic salt
  • 3 laughing cow cheese wedges garlic and herb

Instructions

  • Slice spaghetti squash in half, longwise. Remove the seeds and the core
  • Spray with cooking spray and sprinkle with the garlic salt
  • Place, cut side down, on a microwave safe dish and take a fork and carefully fork up the skin. Microwave for 8-10 minutes, until the skin is slightly soft to the touch
  • Or bake in the oven on a baking tray, cut side down, at 400 degrees for 45 minutes to an hour
  • Once cooked, fork up the insides of the squash
  • Add the laughing cow cheese wedges and mix until completely melted, 1.5 per each side of the squash
  • Divide into three servings and enjoy!

  • 1 can diced tomatoes 15 ounce can
  • 4 cloves minced garlic
  • ⅛ cup white onion diced
  • 16 ounces ground chicken breast

  • 2 teaspoons Italian seasonings
  • 1 teaspoon parsley
  • ½ teaspoon salt

  • 4 ounces fat-free feta crumbles
  • ½ cup reduced fat, part skim shredded mozzarella cheese
  • 1 tablespoon reduced fat parmesan cheese

Instructions

  • Preheat oven to 400 degrees
  • Cook pasta according to package instructions. Drain well and set aside
  • Drain the liquids from the can of tomatoes then blend until smooth. Set aside
  • Heat a medium pan over medium/high heat. Grease with cooking spray
  • Add diced onions and minced garlic. Sauté until fragrant, about 2-3 minutes
  • Add ground chicken, whole, and brown for 1-2 minutes. Start breaking up the chicken and season with the seasonings
  • Once almost cooked, add blended tomatoes, mix together and bring to a slight simmer until the chicken is fully cooked
  • Grease an 8x8 casserole dish with cooking spray. Add half the pasta to the bottom of the dish. Top with the entire pan of chicken.
  • Sprinkle on half the feta cheese and add the remaining pasta on top
  • Spread the remaining feta cheese to the top of the pasta. Sprinkle with the shredded mozzarella and Parmesan
  • Bake at 400 for about ten minutes, until cheese is melted

Ingredients
 

  • 1 can artichoke hearts quartered, 14 oz can
  • 3 cups baby spinach
  • 1 cup plain, nonfat Greek yogurt
  • 1 cup reduced fat, part skim shredded mozzarella cheese
  • 2 tablespoons reduced fat parmesan cheese
  • 4 cloves minced garlic
  • 1 tablespoon onion diced
  • ½ teaspoon salt

Instructions

  • Preheat oven to 350 degrees
  • Chop artichoke hearts and spinach into small pieces
  • Dice onion, you do not have to use onion if you do not want to but I like the flavor of it
  • Grease a casserole dish with baking spray
  • Add all the ingredients to the casserole dish and mix together well
  • Bake for 20-25 minutes, stirring halfway

Greek Yogurt Buffalo Chicken Dip (Hot Wing Dip)

Healthy Greek yogurt buffalo chicken dip, also known as hot wing dip, is delicious and creamy while keeping it a skinny recipe, perfect with weight watchers, any diet, or if you just want a yummy dip!

Buffalo chicken dip, or HOT WING DIP! Whatever you want to call it, but this is the WAY healthier version of it. I could seriously devour this entire thing. I’ve brought it to many tailgates and parties and people love this version more than the normal way! Serve it cold with some chips or vegetables.

Allie’s Tips & Tricks for Greek Yogurt Buffalo Chicken Dip

Before we dive into how to make the tastiest greek yogurt buffalo chicken dip (or what I like to call healthy buffalo chicken dip) I love to give my tips and tricks on what I personally do.

  • If you like SPICY foods, don't hold back on the buffalo sauce. Sometimes I pour until my healthy buffalo chicken dip has a medium-red color.
  • This skinny buffalo chicken dip is a great leftover! If you happen to have extra, store in a tight sealed container and grab when you’re looking for a quick snack (YUM!)

I usually use rotisserie chicken to make this because it’s so easy. But you can also make your own chicken. Use about a half pound of skinless, boneless chicken breast. Bake those in the oven, on the stove, in the Instapot, whatever you prefer. Then just shred it up and add it to the rest of the ingredients. It’s okay if it’s cold or warm.

Ingredients for: Buffalo Chicken Dip With Greek Yogurt

For this skinny buffalo chicken dip, sometimes known as hot wing dip, you will need just four ingredients.

  • Chicken
  • Greek yogurt
  • Ranch seasoning
  • Buffalo sauce

I usually use rotisserie chicken to make this because it’s so easy. It basically requires all of the white meat from a normal sized rotisserie chicken. Make sure to only grab the white meat and not any skin, as this is my skinny recipe.

But you can also make your own chicken. You can make your own rotisserie chicken, which I typically do in the Instant Pot or use about a pound of skinless, boneless chicken breast. Bake those in the oven, on the stove, in the Instapot, whatever you prefer. Then just shred it up and add it to the rest of the ingredients. It’s okay if it’s cold or warm.

Greek yogurt buffalo chicken dip does call for greek yogurt. As this is a weight watchers buffalo chicken dip, plain, nonfat greek yogurt is preferred. However, you can more than certainly use another type of yogurt.

Ranch seasonings and buffalo sauce are pretty self explanatory. I use the ranch seasonings that come in the big jar, as opposed to the little packets, because I use ranch a lot. For the buffalo sauce, use any buffalo sauce, sometimes called hot wing sauce, that you prefer.

How to Make Skinny Buffalo Chicken Dip

It takes all but 10 minutes to make this healthy buffalo chicken dip. Shred the rotisserie chicken, add it to the rest of the ingredients and that is it. I think this tastes better if you let it set in the fridge for at least 30 minutes but you can certainly eat it right away. I serve it cold, just like it is.

What To Do With Leftover Greek Yogurt Buffalo Chicken Dip

Now, do you really think you are going to have leftovers!? I'm just kidding, this makes a lot of food and you might! Just store it in a sealable container in the fridge. You can eat it just like that, from the fridge, and it will be good for about four days.

You can also make stuffed chicken breasts with the dip, just cut open the center of your chicken breast, stuff some of the dip inside and bake. This technique also works for stuffed peppers or stuffed zucchini boats. Give it a try!

I REALLY LOVE this buffalo chicken dip weight watchers recipe because it’s so tasty! This dish is perfect for tailgates, parties or even as a Netflix snack! Don’t knock it until you try it 🙂

This recipe makes 6 servings at about ⅓ cup per serving. The measurement really depends how you shred the chicken and also how much you sample as you are making it, which is a big issue for me!

Ingredients
 

  • 4/3 cup rotisserie chicken
  • 1 cup plain, nonfat Greek yogurt
  • 3 tablespoons Ranch seasoning
  • ¼ cup buffalo sauce hot wing sauce

Instructions

  • Remove about all the white meat from the rotisserie chicken, be sure to remove the skin as well. Shred with two forks or a hand mixer
  • Combine all the ingredients in a bowl
  • For extra spice, add more buffalo sauce
  • Store in the fridge for at least one hour to allow all the flavors to form together
