Soy Sauce Chicken

This recipes just screams Allie Carte and I am all about it. We combine takeout, lots of onions and chicken, what could be better! This one-pot dish is very easy to make and creates the most delicious sauce. Definitely serve it over some rice (4 points) because there will be lots of sauce leftover for some rice!

Soy Sauce Chicken

Ingredients
 

  • 2 green onions
  • ¼ white onion
  • ½ teaspoon minced ginger
  • 4 cloves minced garlic
  • ½ tablespoon sesame oil
  • 2 tablespoons soy sauce low-sodium
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons brown sugar replacement Swerve
  • ½ cup chicken broth no sodium
  • 4 chicken cutlets 4 ounces each
  • 1 tablespoon water
  • 1 tablespoon cornstarch

Instructions

  • Preheat oven to 425 degrees F.
  • Chop green onions and white onion into slices. Mince the ginger and garlic, if not already minced.
  • Heat a large pan over medium/high heat. Add the sesame oil.
  • Once heated, add green and white onions, saute for about 3-4 minutes, until softening. Add ginger and garlic and continue to saute for about 2-3 more minutes, until onion are very soft and garlic is fragrant.
  • Add soy sauce, rice wine vinegar and brown sugar to the pan with the onions. Mix to combine and dissolve the sugar.
  • Add the chicken broth and mix to combine. Bring to a slight simmer then turn off the heat.
  • Add the chicken cutlets to the pan, spooning some of the sauce on top.
  • Place in the oven and bake for approximatley 15 minutes, until fully cooked.
  • Once cooked, remove chicken and place on a clean plate. Place the sauce back on the stove, over medium heat.
  • Bring sauce to a simmer. Combine water and cornstarch in a small bowl. Add the mixture, little by little, to the sauce, until desired thickness is reached. Be sure to immediate stir, rigorously, when adding in the cornstarch mixture.
  • Once sauce is thickened to your likeness, pour over the chicken.

Healthy Copycat Auntie Annes Pretzel Bites

Your sweet tooth is calling and it needs some Auntie Anne’s pretzel bites! These little pretzel bites are seriously so good that you’ll have to stop yourself from eating them all. I made cinnamon sugar and salted ones. Which is your favorite??? Pair it with some cheese dip or icing dip!


Be sure to use self-rising flour for this recipe, it is the key. If you do not have self-rising flour, or are gluten free, try out my recipe below to make your own!

I use Swerve, typically, for my sugar replacement, but feel free to use whichever brand you like. Monk fruit sweetener works really well here too.

I make my bites a little small so they are truly bite sized. Plus, when they are smaller, they get a little more crisp. You can make them a little bigger, just adjust the cooking time and serving size.

Make sure you grease the baking sheet very well and most importantly, add the baking soda slowly!! It will bubble over if you do not go slow.

The whole recipe, for the pretzels, serves 6. Each dip recipe serves 3. So either double it, or make both.

If you prefer the cheese dip, don't forget to order the secret ingredient, cheese powder!

Ingredients
 

Pretzels

  • 1 cup self-rising flour
  • 1 cup plain, nonfat Greek yogurt
  • 2 tablespoons granular sugar replacement Swerve
  • 5 cups water
  • ¼ cup baking soda

Cinnamon Sugar Topping

  • 2 tablespoons granular sugar replacement Swerve
  • 2 teaspoons cinnamon

Salted Topping

  • 1 teaspoon salt coarse

Icing Dip

  • ¼ cup plain, nonfat Greek yogurt
  • 2 tablespoons confectioners sugar replacement
  • ½ teaspoon vanilla extract

Cheese Dip

  • ¼ cup plain, nonfat Greek yogurt
  • 2 tablespoons cheddar cheese powder

Instructions

Pretzels

  • Preheat oven to 425 degrees. 
  • In a large bowl, combine flour, sugar and yogurt. Mix with a spoon until dough is sticking together. 
  • Set out on a clean surface and knead dough for about 3-4 minutes, until completely sticking together and dough like. Divide into 4 pieces.
  • Roll each piece out into worm shapes, about 1 inch thick and 15 inches long. Then cut each worm into 15 pieces. 
  • Boil water in a medium sized pot. 
  • Grease a baking tray with cooking spray, thoroughly
  • Meanwhile, gather the toppings in a small bowl. If doing the cinnamon sugar then mix together.
  • Once water is boiling, add baking soda, 1 tablespoon at a time. Be very slow so it does not boil over.
  • Add pretzel bites, about 10 at a time, to the water and cook, while stirring, for 20 seconds. Once the bites float to the surface, remove them with a slotted spoon and set out on the greased baking tray. Be careful not to let them touch. 
  • Once all pretzel bites are on the tray, spray with cooking spray then sprinkle with your topping choice, the salt or the cinnamon sugar mixture.
  • Bake for about 17-20 minutes, until desired wellness, flipping halfway.

Dipping Sauce

  • While the pretzels cook, combine the ingredients for your dip of choice in a small bowl. Store in the fridge while the pretzels cook to allow the flavors to form together.

Spinach Artichoke Stuffed Peppers

Been craving some spin dip so I whipped up some spinach artichoke stuffed peppers. I have been living off ground sausage (which needs to stop, it’s so addicting) so I added that in the mix for extra protein. It was so creamy, cheesy and flavorful. I need to try this with some ground chicken, I think that would be amazing and super low point!

Spinach Artichoke Stuffed Peppers

Ingredients
 

  • 2 bell peppers
  • 4 cloves minced garlic
  • ¼ white onion
  • 16 ounces ground mild italian sausage Publix
  • ¼ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon italian seasonings
  • ½ teaspoon paprika
  • 1 cup baby spinach
  • 1 artichoke heart canned
  • 2 ounces ⅓ less fat cream cheese
  • ¼ cup reduced fat, part skim shredded mozzarella cheese

Instructions

  • Preheat oven to 425 degrees F
  • Slice peppers in half then remove the seeds and core. Place on a greased baking sheet, cup side up, and bake for 20-25 minutes, until desired wellness
  • Meanwhile, heat a medium sized pan over medium/high heat
  • Dice the onion, spinach and artichoke heart
  • Once the pan is heated up, add the garlic and onion and saute for 2-3 minutes, until fragrant
  • Add the ground sausage and begin to break up. Add the seasonings and continue to break up while cooking
  • Once the sausage is about 90% cooked, add the spinach and artichoke, finish cooking the sausage
  • Once cooked, at the cream cheese and mix until fully combined and melted
  • When the peppers are done to your likeness, stuff the sausage mixture into the pepper, evenly
  • Evenly top with the shredded cheese and bake or broil for 3 minutes, until the cheese is melted

Pepper alla Vodka Pasta

New favorite sauce alert!!! This pepper alla vodka pasta is absolutely amazing. All the flavors just mend together and form into a perfect, thick and creamy sauce. Think penne alla vodka, but with sun-dried tomatoes and a bell pepper! You would never even know!! This sauce has been my absolute favorite thing lately and I love how versatile it is.

I used a red bell pepper since it was the same color as the tomatoes I used. That way the color of the sauce was rich and beautiful. You can use yellow or orange, if you can’t find red. But I don’t suggest green because it will make the sauce turn into a weird color, and color is important!

Ingredients
 

  • ½ can diced tomatoes ½ a 14.5 ounce can
  • ¼ cup sundried tomatoes drained
  • ½ bell pepper
  • 1.5 fully cooked links of sausage Boar's Head Robust Italian Chicken Sausage
  • 4 cloves minced garlic
  • ⅛ cup diced white onion
  • 2 cups chicken broth
  • 8 ounces Banza pasta dry
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon parsley
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon ground red pepper
  • 2 ounces ⅓ less fat cream cheese

Instructions

  • Dice the onion and slice the sausage, set aside.
  • Chop the half pepper up into smaller pieces so it is easier to blend. Blend tomatoes, sundried tomatoes and bell pepper until smooth then set aside.
  • Turn your Instapot to the saute setting. When the display says HOT add in the garlic and diced onion and saute for 1-2 minutes, until slightly soft.
  • Add in the pasta noodles (dry). Pour the broth and blended tomatoes around the pasta.
  • Add in the seasonings and stir to combine, top with the cooked sausage.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it (set to 6 if you like the pasta softer).
  • When the time is up let the pot sit for 3 minutes and then move the valve to venting. Remove the lid, it will be water-y, that is okay.
  • Turn the pot to saute. Add the cream cheese into the pot. Stir until melted.

Sausage Spinach Sun-Dried Tomato Pasta

I waited all week, and saved up so many points, for this dish. This sausage spinach sun-dried tomato pasta was so worth it. Might be one of my favorites! The tomatoes combine together so perfectly and give the dish such a unique and vibrant taste. Plus, this sausage is one of my newest obsessions. Add some spinach in there for some veggies!!

Sausage Spinach Sun-Dried Tomato Pasta

Ingredients
 

  • 8 ounces Banza pasta dry
  • 2 cloves garlic minced
  • 16 ounces ground sausage Johnsonville sweet
  • ¼ onion diced
  • 2 cups baby spinach
  • ¼ cup sundried tomatoes drained
  • ½ cup reserved pasta water
  • 2 ounces ⅓ less fat cream cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Cook pasta according to the package directions. Reserve ½ cup of pasta water then drain well and set aside.
  • Heat a large pan on the stove over medium/high heat. Spray with cooking spray.
  • Add minced garlic and cook for one minute. Add diced onion and cook until soft and translucent, about 3-4 minutes.
  • Add ground sausage, breaking it apart while cooking. Once slightly broken up, season with the salt and pepper. Cook almost through, until almost all the pink is gone.
  • Add baby spinach and sun-dried tomatoes. Mix to allow the spinach to completely wilt. Allow chicken to cook completely.
  • Add in cream cheese and stir in until melted. Add a splash of pasta water until desired consistency is reached.
  • Add in the pasta and stir to combine in the sauce.
  • Divide evenly into four bowls.

Meal Prep Grilled BBQ Chicken Nuggets

Best meal prep alert!! I had the fantastic idea to make my own bbq chicken nuggets and boy these good. I was astonished by how easy they were to make, yet how absolutely tasty they were for lunch all week. Double, triple, quadruple the recipe, make however many servings you need. Next time, I’m going to try grilling these on my blackstone!!

Grilled BBQ Chicken Nuggets

Best meal prep alert!! I had the fantastic idea to make my own bbq chicken nuggets and boy these good. Meal prep, dinner, appetizer, anything you like!!

I use chicken tenderloins because they are easy to cut up but use whatever chicken you like, cutlets or boneless skinless breasts. Use any flavor of G Hughes that you like, they have original, spicy, honey, tons of flavors, choose your favorite. I also topped mine off with some green onions for a little crunch.

Ingredients
 

  • 4 ounces chicken tenderloins 1.5 pieces
  • 2 tablespoons sugar free BBQ sauce G Hughes

Instructions

  • Preheat oven to 400 degrees F
  • Fork the chicken tenderloins with a fork a couple times, it will allow the sauce to penetrate the chicken and get a really flavorful dish
  • Chop chicken tenderloins into bite sized pieces, about one inch by one inch, about ten pieces total
  • Place chicken in a bowl and pour on the BBQ sauce, toss to coat
  • Place coated chicken nuggets on a greased baking tray
  • Bake for 8-10 minutes, or until fully cooked, flipping halfway

Pepper Tomato Sauce

Remember, this recipe is for the sauce only. The chicken was extra. This recipe makes 6 servings total, at about 2 tablespoons per serving.

  • Cut up pepper into smaller slices, so it is able to be blended.
  • Places pepper, half the can of diced tomatoes (with the juices), the drained sundried tomatoes and garlic in a blender. Blend until smooth, or desired consistency.
  • Heat a medium sized pan over medium/low heat, greased with cooking spray.
  • Once heated, add the cream cheese and stir until melted. You may need to add a little bit of the tomato sauce to help melt the cream cheese.
  • Add the tomato sauce in and stir until combined. Bring to a slight simmer and simmer for about five minutes, to allow the flavors to form together. Stir occasionally.

Creamy Fajita Pasta

Y’all. This creamy fajita pasta was so good, so filling and so easy to make. This was absolutely jammed packed with veggies and protein. Three different veggies and two different proteins, plus a little bit of carbs. The best easy dinner or meal prep. Creamy and delicious!

I used the original Rotel for this, but you can use any one you like, depending on your spice level. You can also add in some ground red pepper for some more spice but I wanted to keep it more mild.

I loved using Banza for this because it made the dish so filling but you can of course use regular pasta. You can also skip the pasta water to make a more thicker sauce and completely skip the pasta. Just add it to the chicken! So good like this.

Ingredients
 

Pasta

  • 4 ounces Banza linguine, dry

Chicken

  • 8 ounces chicken breast skinless, boneless
  • ½ teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin

Sauce

  • ½ bell pepper
  • ¼ red onion
  • 4 cloves minced garlic
  • ½ can rotel half a 14.5 oz container
  • 1 ounce ⅓ less fat cream cheese
  • ¼ cup shredded lite Mexican cheese Trader's
  • ½ cup reserved pasta water
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • cilantro

Instructions

Prep

  • Dice pepper and onion, set aside

Pasta

  • Cook pasta according to package instruction. Reserve ½ cup of pasta water then drain well and set aside.

Chicken

  • Heat a medium sized pan over medium/high heat, grease with cooking spray.
  • While the pan heats up, season both sides of the chicken breast with the seasonings.
  • Add chicken to the pan and sear both sides for about 3 minutes each. Cover the pan and reduce heat to medium. Allow chicken to steam in the pan until fully cooked, about 5 minutes.
  • Remove chicken from pan, shred it up and then set aside.

Sauce

  • Without cleaning, spray the pan with more cooking spray, bring back up to medium/high heat.
  • Add diced bell pepper and saute while scraping up the bits from the bottom of the pan. Cook for about 2 minutes.
  • Then, add the diced onion and minced garlic. Saute for 3-4 more minutes, until translucent and fragrant.
  • Add half a can of rotel tomatoes, without the juice. Mix that into the peppers and onion while crushing up the tomatoes. Add in more cumin, salt and pepper to taste.
  • Add the cream cheese and reduce to medium/low heat. Stir together while the cream cheese melts.
  • Add the shredded cheese and mix to melt the cheese.
  • Add in the pasta water, until desired consistency. I use about a ¼ cup.
  • Once the cheese is all melted and desired consistency is reached, add in the cooked, shredded chicken and toss to coat. Add in the cooked pasta and toss to coat.
  • Top with cilantro.

Garlic Parmesan Zucchini Chips

I think I just discovered the most amazing way to make zucchini with these garlic parmesan zucchini chips. This is basically a zero point recipe for parmesan zucchini because you gain a point from the vegetable. They are cooked in the air fryer to make more of a zucchini parmesan crisps type of snack! I seriously cannot stop making this and every time I do, I try to devour it all before even sitting down at the dinner table. It’s slightly crispy, full of flavor, and my favorite thing right now. I am so obsessed with these, I need to make some more air fryer zucchini recipes.

How annoying is it that a bag of potato chips is like a zillion calories! Trust me… I've been there which is why I'm showcasing one of the best air fryer zucchini recipes you’ll find on the web. 

These perfect chips are sure to make you ditch the classic potato chip for a healthier alternative. Mark my words when I say that  garlic parmesan zucchini chips are the new chips of 2022. This recipe for parmesan zucchini is so good my mouth waters just thinking about it.

Allie’s Tips & Tricks for Garlic Parmesan Zucchini Chips

Before we dive into how to make the tastiest garlic parmesan zucchini chips (or what I like to call zucchini parmesan crisps) I love to give my tips and tricks on what I personally do.

-First of all, to make any air fryer zucchini recipes, we are going to need an air fryer. You can use a basket type air fryer; however, I really like a rack type air fryer for this recipe.

- If you’re a garlic fan like myself, don’t be afraid to add a few extra garlic cloves to your mixture! This will make your garlic parmesan zucchini chips extra garlic-yyyy (YUM!)

- I love my zucchini parmesan crisps super salty! Every once in a while sprinkle a little extra salt! I won’t tell anyone if you don’t 😉

- Make sure you spray the air fryer with cooking spray. This is so your zucchini parmesan crisps won’t stick to the tray. We don’t want a pan full of broken chips! 

- If you want that perfect zucchini chip, try cutting the zucchini slices to about ⅛ an inch. When eating, you’ll think they’re actually potato chips! I like to use a mandolin to cut mine.

-If you don’t own an air fryer, don’t panic! These garlic parmesan zucchini chips are great in the air fryer but just as good in the oven. Simply follow the same instructions and be sure to put your zucchini parmesan crisps on a thoroughly greased baking tray, or parchment paper. Increase the temperature to about 350 degrees, and be sure to flip the zucchini as well.

What Do You Need To Make This Garlic Parmesan Zucchini

First of all, to make any air fryer zucchini recipes, we are going to need an air fryer. You can use a basket type air fryer; however, I really like a rack type air fryer for this recipe because it is easier to flip the zucchini over. However, it really depends on your personal preference and/or what you already have on hand.

Next, super easy, just a couple ingredients

  • Zucchini
  • Minced garlic
  • Parmesan cheese

Oh garlic, boy do I love me some garlic. I use minced garlic that is already minced; however, you can use fresh garlic and mince it yourself. Either work here, it is really your personal preference.

Parmesan is the key for this recipe for parmesan zucchini, obviously. For this recipe, I use reduced fat parmesan cheese that comes in a container near the pizza sauce. However, you can use regular parmesan cheese or grate your own. It really depends on your personal preference and what you have on hand already.

Recipe for Parmesan Zucchini

This recipe is quite simple and will be done in under 20 minutes. Be sure to wash zucchini thoroughly then, slice and pat dry with a paper towel if moist. I use a mandolin to cut the zucchini but you need to be very careful. Cut the zucchini to about an ⅛ inch in thickness. While you are cutting the zucchini, preheat the air fryer to 325 degrees.

Next, place zucchini in a bowl and spray with cooking spray and toss to evenly coat. Add minced garlic, parmesan, garlic powder and salt, tossing to evenly coat.

Spray the pan in the air fryer as the zucchini will stick if not thoroughly greased. Air fry for 13-17 minutes, (at 325 degrees) until desired wellness. Be sure to flip and respray the zucchini every 4 minutes.

Other Ways To Cook

Don't have an air fryer but still want to make these? These garlic parmesan zucchini chips are great in the air fryer but just as good in the oven. Simply follow the same instructions and be sure to put your zucchini parmesan crisps on a thoroughly greased baking tray, or parchment paper. Increase the temperature to about 350 degrees, and be sure to flip the zucchini as well.

  • Place chicken on the baking sheet. Evenly spread the softened cream cheese onto each chicken cutlet. Evenly top with the wilted spinach then evenly sprinkle with the shredded cheese.
  • Bake until chicken is fully cooked, about 15 minutes.

Instant Pot Chicken Cajun Boil

My not-so-authentic but so so delicious take on the New Orleans Cajun Boil! This one is made in the Instant Pot and served with lots of chicken. Flavor is not sacrificed in this easy dinner!

I find this to be a bit spicy but my husband wants even more spice and will top it off with hot sauce. He says it really makes the dish. Try it out and see if you want it spicier or not!

Ingredients
 

  • 16 ounces chicken breast skinless, boneless
  • 6 baby red potatoes
  • 2 tablespoons cajun seasonings
  • 4 cloves minced garlic
  • 1 cup chicken broth low sodium
  • 1 ears of corn
  • 2 links fully cooked links of sausage boar's head chicken chorizo

Instructions

  • Dice chicken up into bite sized pieces, about 1-1.5 inches by 1-1.5 inches. Cut each potato up into 6 pieces.
  • Place cut up chicken and potatoes in a small bowl. Add the cajun seasonings and minced garlic then toss to completely coat.
  • Cut the ear of corn into four pieces and dice the two chicken sausages into thin slices.
  • Pour chicken broth to the bottom of the Instant Pot.
  • Add the potatoes and chicken to the Instant Pot and press down to create an even layer. Add corn to the sides then add the sausage slices to the middle.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.
  • When the timer goes off, de-pressurize the Instant Pot and remove the ingredients with a slotted spoon, I do not typically keep the juices.

  • 16 ounces chicken breast
  • 2 tablespoons flour
  • 2 tablespoons reduced fat parmesan cheese
  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasonings

  • ¼ teaspoon paprika

Instructions

  • Cut chicken breast up into 4 equal sized pieces. Pound them down a little to get an even thickness across them.
  • In a small, shallow bowl, combine flour, parmesan and half the seasonings, stir together.
  • Sprinkle the other half of the seasonings on both sides of the chicken breasts.
  • Heat up 1 tablespoon of margarine over medium high heat. I cooked the chicken in two patches so I only used 1 tablespoon at a time.
  • Meanwhile, press both sides of each chicken breast into the flour mixture, being sure to cover all sides. Set aside on a clean plate.
  • When the margarine starts to bubble, place half the chicken breasts on the heated pan. Cook until fully cooked, about 4-5 minutes per side.
  • Remove the chicken breasts then add the other tablespoon of margarine, allow it to melt/heat up then cook the other chicken breast pieces.

TikTok Pasta Chips

Viral TikTok pasta chips with a WW spin on them! I made these viral pasta chips a little healthier by cutting back some of the oil, using reduced fat cheese and air frying them to perfection. I wanted a garlic parm flavor and it was so good. Make sure you pair it with my zero point tomato sauce.

  • Add minced garlic and cook for one minute. Add diced onion and cook until soft and translucent, about 3-4 minutes.
  • Add ground chicken, breaking it apart while cooking. Once slightly broken up, season with the seasonings. Cook almost through, until almost all the pink is gone.
  • Add cut up broccoli and cover the pan. Let steam for about 5-6 minutes, until desired wellness.
  • Sprinkle on shredded cheddar cheese and recover the pan. Let melt then toss to coat.
  • Add in cream cheese and stir in until melted.
  • Add in the pasta and stir to combine in the sauce

Chocolate Peanut Butter Protein Milkshake

This peanut butter and chocolate protein milkshake is one of my greatest inventions. It literally tastes like you are drinking a milkshake, yet it is full of protein and only 3 points!! How is that even possible!! Keeps me full all morning long and craving more delicious milkshake!

I added some sugar free whip cream and sprinkles on top, not included in the points, just for a pretty photo. I really didn't need it though, it was so good without the added toppings. I made two for the photo too! I was actually making six of them for a bunch of family members that were over. Everyone goes crazy for these!!

What You Will Need:

The ingredients are so simple! Plus, you can change them out depending on your flavor preference, or if you just want to keep up a different flavor each day.

  • PB2
  • Sugar free pudding mix
  • Protein powder
  • Water
  • Frozen water (ya know, ice)

For the PB2, I typically use the chocolate PB2 flavor. While I do love peanut butter, I do like to keep it toned down a little by using the chocolate one. My mom and sister are peanut butter fanatics and prefer this with just the regular PB2 peanut butter powder. It is totally up to you if you want a more peanut butter or more chocolate flavor. Or, fun idea, mix them if you can't decide!

For the sugar free pudding mix, I typically always do the Jell-O brand chocolate flavor. I love the chocolate PB2, mixed with the chocolate Jell-O, it creates a really chocolate-y milkshake. However, I do like this with the white chocolate mix and the regular peanut butter PB2, for a super peanut butter flavor milkshake. Or the cheesecake Jell-O mix with the chocolate PB2 for a chocolate cheesecake flavor. You can mix and match as much and often as you want. For the protein powder, I use Orgain. They do have unsweetened and chocolate but I love the vanilla flavor.

I use water in this recipe because it is obviously free and zero points. My cousins love to use plain unsweetened almond milk. It makes it a little more creamy and it only adds one extra point. Let me know what you prefer!

Then, just add ice until your desired thickness. I like mine pretty thick so that way it lasts until I get to work. I suggest you start with about 1 cup of ice and then slowly work your way up to more, if you even need anymore. Depending on your desired thickness, 1 cup might be good. I just like mine super thick and super frozen.

I pour mine into a Yeti cup so it stays frozen for long. I usually make it and then pop it into the freezer while I clean up and pack up my stuff. This usually takes about 10 minutes. That way the milkshake is extra frozen and won't immediately melt on my commute to work.

Another tip/suggestion is to add collagen! This is my favorite powdered collagen. It apparently helps grow your hair and nails, give your better skin and stronger bones. I definitely notice my hair and nails though! Click here to order collagen.

Another option is to add in a banana. While WW says to count blended fruits, you can do what you want to do. It tastes really good with the peanut butter but I have only done this once, I don’t find it necessary. But my aunt loves to do it this way! or maybe some strawberries with the chocolate! It would be like a chocolate covered strawberry milkshake, YUM!

You can always add another scoop of protein as well. The serving size on the protein powder is two scoops but I typically do one unless I know I won’t be eating lunch for a long time. It’ll just keep you more full while only adding an extra two points.

  • 1 tablespoon PB2 chocolate
  • 1 tablespoon sugar free pudding mix chocolate, jell-o brand
  • 1 scoop protein powder
  • 1 cup water
  • 1.5 cup ice or to deisred thickness

Instructions

  • Blend all ingredients until smooth. Add more or less ice to taste.
  • I suggest you start off with less ice, about a cup, and work your way up to more, until your desired consistency.

Baked French Toast Strips

Super easy breakfast idea! Do you love french toast (as much as I do) but hate how long it takes to make? Because I sure do! Here we have it: BAKED FRENCH TOAST STRIPS! You can make so much at once and they all come out perfectly. Great for family brunch or meal prep. Freezer friendly too!

I used Sara Lee wheat bread but you can use a lower point bread to reduce the points. I also use almond milk; however, feel free to use any milk which you like. I always have almond milk on hand because it lasts for a long time and is low point.

Then I topped the sticks with Swerve confectioners sugar and dipped it in some sugar free syrup.

Ingredients
 

  • 4 slices bread
  • ½ cup liquid egg whites
  • 1 tablespoon plain, unsweetened almond milk
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees F. Line a baking tray with parchment paper and slightly grease with cooking spray.
  • Slice each piece of bread, longwise, into three strips.
  • In a shallow bowl, whisk together the liquid egg whites, milk, vanilla and cinnamon.
  • Dip each strip of bread into the egg mixture, coating all the sides. Then place on the baking tray. Repeat for each strip of bread.
  • Bake for approximatley 15-18 minutes, flipping halfway, or until desired wellness.
