MERRY CHRISTMAS!!! IT IS FINALLY HERE!

I feel like I have a love hate relationship with Christmas dinner. While I love getting together with all my friends and family, I am picky when it comes to food. While I do eat a lot, I am a bit overbearing when it comes to how food is prepared, I like it the way I like it, ya know!? We typically go down to my parent's or aunt's house for Christmas. I am usually the one who will bring some sides (my favorite part).

I think sides really hold down the holiday. I mean, could you really go wrong with a turkey or ham... maybe? But not really. Actually, one time, my grandma BURNT the entire prime rib for our Easter dinner (sorry nanny!), so I guess it is possible. There is so much you can do with different sides though, it really makes or breaks the event.

Oh! And we cannot forget about appetizers! We are pulling out the best appetizers for when your guests arrive. There is nothing like a great first impression. Apps are my favorite foods, any time. I guess we will start this guide with some appetizers, since they are first. Let's get into it.


Appetizers

I would say the most classic appetizer you can make is a cheese board. There are so many different types of meats, cheeses, crackers, fruits, veggies that you can put on it to make it very customizable to every person. I have a whole guide on all my favorite tips and tricks to a WW friendly cheese board.

You can even make it into a Christmas tree shape! I usually do that. Add some rosemary and cranberries to make it extra festive.

Next is dips. I love dips because everyone can stand around trying them all out while hanging out. My most popular dip recipe is my hot wing dip. I know it is not very "Christmas-y" but it is my most popular and it is AMAZING. Zero points and great paired with carrots, celery or chips. Serve this warm or cold. Plus, you can make this ahead of time.

We do a holiday at my Aunt Dale's every other year. The appetizer I always look forward to is her French onion dip. I know, it is so simple and easy, but this is maybe my favorite dip ever. I am obsessed with French onion dip and it always reminds me of my family. I, of course, made a lightened up version which is zero points. Great ith carrots, celery or chips.

My final dip recommendation is my skinny spinach and artichoke dip. I think this one is very holiday friendly. Spinach dip is amazing at any gathering. Who doesn't love a good spin dip.

Sides

Oh boy do I love sides. We would be here all day if I went through all my sides so let's just go with my tried and true, tested, holiday sides. These are some that I have brought to holiday gatherings in the past that everyone has loved!

Vegetables

My number one side that never fails, kid favorite, husband approved.... CANDIED CARROT CHIPS!! These are the most amazing carrots in the entire world. I could eat them any day.

Cranberry French Toast Bites

Easy and delicious breakfast with some holiday cheer!? Try out my cranberry French toast bites. Made in one dish and all you do is pop it in the oven. Double, triple, quadruple this recipe and you have an amazing breakfast on a busy holiday morning.

What I love about the new personal points plan is that I discovered that I can add my recipe builder here (linked above) and it will pull up the recipe I made within the WW app. When you pull it up onto your app, you can edit the recipe. That way, if you use a different brand or ingredient that I did, you can edit the recipe and make it your own. I know not everyone likes the same bread, therefore, it is easy to edit the recipe and calculate your specific points. Plus, the toppings can be easily modified.

What If I Need More:

This recipe can be easily doubled, triple, quadrupled, etc. Just find a casserole dish or baking tray that fits your needs.

What You Need:

For this recipe, you will need a personal sized casserole dish. I grabbed a couple of these from HomeGoods and they come in handy all the time. It is about 5 inches by 5 inches and about an inch or two tall. If you do not have one of these, simply create one out of foil or bake on a cookie sheet.

For the toppings, I used this cranberry nut mixture. It really caught my eye when I was buying salad dressing and I had to pick it up. I used it for a salad this past weekend and then I had to try it out again. If you are allergic, or do not prefer nuts, you can get just cranberries. If you do not want any toppings, you can certainly skip that all together.

In addition, this recipe calls for liquid egg whites. I prefer them to real eggs because they are easier and a lot less messy. If you like real eggs, just whisk them before adding in the cinnamon. According to my package, 1 egg white equals ⅛ cup of liquid egg whites. Adjust accordingly.

What To Do:

This recipe is very easily and all you have to do it basically cut up some bread and stick it in the oven. This has become a daily request in my household and I hope you enjoy it as much as we do.

Ingredients
 

  • 2 slices bread
  • 3 tablespoons liquid egg whites
  • ¼ teaspoon cinnamon
  • 1 tablespoon sugar free maple syrup
  • 2 tablespoons cranberries

Instructions

  • Preheat oven to 400 degrees.
  • Slice bread, longwase, into four strips. Cut each strip in three pieces. You should have 12 pieces of bread cubes per slice of bread.
  • In a bowl, whisk together cinnamon and egg whites. Add bread cubes to the bowl and toss to coat in the egg mixture.
  • Grease a small baking casserole with cooking spray. Add the bread and place in the oven for 10 minutes.
  • Flip/toss the bread then place back in the oven for 5-10 minutes, depending on how well done you like your French toast.
  • Drizzle with maple syrup and sprinkle with the cranberries. Place back in the oven for 1-2 minutes.

Caprese

Caprese is such a great appetizer to serve when you are having people over. I made mine into this pretty wreath shape for the holidays. You know I lightened up this dish too, while still keeping it delicious.

  • 2 tomatoes
  • 8 ounces part-skim mozzarella cheese ball
  • ¼ teaspoon salt
  • 1 tablespoon olive oil

Instructions

  • Slice tomatoes and mozzarella into 8 slices, each
  • Assemble your capers on a round plate. Set down the tomato slices, with a slice of mozzarella on top of each one, you may need to overlap them. Sprinkle with salt
  • Drizzle with the olive oil and balsamic glaze
  • Slice basil into thin sliced and cover the top of the caprese with basil

  • 1 cup chicken broth low sodium
  • ⅛ cup flour all purpose
  • ½ teaspoon salt

  • Heat a small saucepan over medium/high heat.
  • Add ¾ cup of the broth and bring it to a slight simmer. Pour the remaining ¼ cup broth in a bowl on the side with the seasonings. Then measure out the flour, keep to the side.
  • Once the broth on the stove comes to a simmer, pour the flour into the ¼ cup of broth in the bowl. Whisk vigorously to combine and remove the lumps.
  • Pour this thickened broth into the simmering broth on the stove. Whisk vigorously to combine and remove the lumps.

Easy Garlic Butter Green Beans

I know not everyone has the time, the tools, or knows how to make crazy recipes. Sometimes I do not either, and that is okay!! Being in the kitchen all day does not define who you are as a person. I know, I am a food blogger, but sometimes I do not have the time or mental capacity for a full course meal from scratch, and that is okay!! This is why I am creating some of these easy meals, I have done it before. Really, there is no cooking required, we are just spicing up some pre-cooked items. These easy garlic butter greens beans are SO GOOD! My husband and I tried so hard to not devour them all, and it took me 6 minutes to "cook". I just hope this helps one person who feels the pressure to bring a side during the holidays but doesn't have the time, tools to capability to cook something outrageous! The holidays are the time to enjoy yourself, your family and/or your friends. Not the time to stress.

Here is the photo of the green beans I used. You can use another brand, or the "cut" version (I used whole green beans). You can also make your own green beans then toss them in this sauce. This is just a great idea for a stress free holiday. I actually used this because I forgot to order veggies for one night and I always keep frozen veggies on hand. I like to spice up these freezer veggies to make them delicious! Also... yes... I dug this container out of the trash because I completely forgot what I used haha!

I guess while you are here.. you need to order my automated trash can!! It opens when you come to it, to throw something away. It also has a scent defense thing inside of it. I am in love... with a trash can.

  • Cook for 25-30 minutes, stirring/flipping every 10 minutes

Instructions

  • Preheat oven to 350 degrees. Line a baking tray with aluminum foil and spray with cooking spray.

Instructions

  • Preheat oven to 425 degrees
  • Season both sides of each chicken cutlet, evenly, with the onion and garlic powder
  • In a small bowl, combine cream cheese, yogurt, Ranch, salt, pepper and paprika, stirring to completely combine
  • Place chicken cutlets on a greased baking tray
  • Spread the cream cheese mixture, evenly, onto each chicken breast
  • Top each chicken cutlet with ⅛ cup shredded cheese and one piece of bacon
  • Bake for 15-20 minutes, until fully cooked

Ingredients
 

  • 1 can crushed tomatoes 14.5 ounces
  • 1 teaspoon olive oil
  • 4 cloves minced garlic
  • 16 ounces chicken breast skinless, boneless
  • 2 tablespoons oregano
  • 2 tablespoons Italian seasonings
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon granular sugar replacement Lakanto or Swerve
  • 6 ounces rigatoni pasta dry (½ box)
  • 1.25 cups chicken broth fat-free, low sodium
  • ⅓ cup part skim milk ricotta cheese
  • 1 tablespoon reduced fat parmesan cheese

Instructions

  • Tip: measure out all seasonings in a bowl before getting started. This recipe goes quick!
  • Dice chicken up into bite-sized pieces
  • Turn your Instapot to the saute setting. When the display says HOT add in the oil and allow it to heat up
  • Add in the garlic and saute for 30 seconds
  • Add in the diced chicken and the seasonings. Brown chicken for about 3 minutes then turn off the saute on the Instapot
  • Remove chicken and set on a clean plate
  • Add in the pasta noodles (dry). Pour the broth and blended tomatoes around the pasta
  • Add chicken back in, on top of the pasta
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it
  • When the time is up let the pot sit for 3 minutes and then move the valve to venting
  • Once finished venting, remove the lid. Add in the ricotta cheese and stir to combine and melt
  • Top with the parmesan and fresh herbs if you have any

Thanksgiving

I feel like I have a love hate relationship with Thanksgiving. While I love getting together with all my friends and family, I am picky when it comes to food. While I do eat a lot, I am a bit overbearing when it comes to how food is prepared, I like it the way I like it, ya know!? So it may shock you when I say, I have never hosted a Thanksgiving. I am usually the one who will bring some sides (my favorite part) but I have never fully hosted a Thanksgiving.

Last year, my husband and I did a mini vacation with the assistant in Rosemary Beach. We made a very small chicken and all the sides to go along with it, but that was the most hosting for Thanksgiving I have ever done. This year, my husband and I purchased a house and we will be hosting our first Thanksgiving. While I will be ordering a Honey Baked turkey and ham, I will be preparing all of my favorite sides.

I think sides really hold down the holiday. I mean, could you really go wrong with a turkey or ham... maybe? But not really. Actually, one time, my grandma BURNT the entire prime rib for our Easter dinner (sorry nanny!), so I guess it is possible. There is so much you can do with different sides though, it really makes or breaks the event.

Oh! And we cannot forget about appetizers! We are pulling out the best appetizers for when your guests arrive. There is nothing like a great first impression. Apps are my favorite foods, any time. I guess we will start this guide with some appetizers, since they are first. Let's get into it.


Appetizers

I would say the most classic appetizer you can make is a cheese board. There are so many different types of meats, cheeses, crackers, fruits, veggies that you can put on it to make it very customizable to every person. We do Thanksgiving at my Aunt Dale's every other year. The appetizer I always look forward to is her French onion dip. I know, it is so simple and easy, but this is maybe my favorite dip ever. Cheesy Fried Chicken

  • 4 ounces chicken cutlet one piece
  • 2 tablespoons liquid egg whites
  • 2 tablespoons nutritional yeast
  • 1 tablespoon flour
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon Italian seasonings
  • 1/16 teaspoon salt
  • 1 pinch black pepper

Instructions

  • Preheat air fryer to 400 degrees and grease with cooking spray
  • Stir together nutritional yeast, flour and seasonings on a small plate
  • In a small shallow bowl, pour out the liquid egg white
  • Dip chicken into the egg white, being sure to coat all sides
  • Press chicken onto the flour mixture, being sure to coat all of the sides
  • Air fry for 2 minutes, then spray the chicken with cooking spray. Air fry for 4 more minutes. Flip chicken over and spray again. Cook for another 4-6 minutes, until fully cooked
  • (Or bake in the oven at 450 degrees for 15 minutes, flipping halfway)

Spicy Rigatoni alla Vodka

My instant pot penne alla vodka has been a fan favorite so I put a little twist on it and made some spicy rigatoni alla vodka. But just a warning, this is SPICY and not for the weak of heart. So creamy, so delicious, with a little kick!

  • ⅛ cup diced white onion
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon parsley
  • ⅛ teaspoon black pepper
  • ½ teaspoon ground red pepper
  • ½ teaspoon paprika
  • ½ teaspoon crushed red pepper
  • 6 ounces rigatoni pasta dry
  • 1 cup chicken broth
  • 2 ounces ⅓ less fat cream cheese
  • 1 tablespoon reduced fat parmesan cheese
  • 1.5 links fully cooked links of sausage Boars Head chicken chorizo

Instructions

  • Blend tomatoes until smooth then set aside.
  • Slice sausage and set aside.
  • Turn your Instapot to the saute setting. Grease with cooking spray.
  • When the pot heats up, add in the minced garlic and diced onion and sauté for 1-2 minutes, until slightly soft.
  • Turn the Instant Pot off.
  • Add in the pasta noodles (dry). Pour the broth and blended tomatoes around the pasta
  • Add the seasonings and stir just a little, trying not to disturb the pasta. Add the sliced sausage on top.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.
  • When the time is up let the pot sit for 3 minutes and then move the valve to venting. Remove the lid.
  • Turn the pot to saute. Add the parmesan and cream cheese into the pot. Stir until melted.

Maple Bacon Brussels Sprouts

Do you like Brussels sprouts? Well you will now!! My maple bacon Brussels sprouts are so delicious and crispy! Slightly sweet, yet a little salty then topped with a balsamic glaze. Don't be afraid of all the little leaves that come off the Brussels sprouts. Toss them in with the rest of the sprouts, makes for delicious, super crispy pieces.

Ingredients
 

  • 1 pound brussels sprouts
  • ½ cup sugar free maple syrup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 slices fully cooked bacon
  • 2 tablespoons balsamic glaze

Instructions

  • Cut each Brussels sprout in half, cut into quarters if there are any extra large ones
  • Place in a bowl and pour maple syrup over the Brussels sprouts, toss to coat. Sprinkle with the salt and pepper and toss to coat.
  • Place Brussels sprouts in a greased air fryer.
  • Dice bacon up into tiny pieces and sprinkle bacon pieces on top of the Brussels sprouts.
  • Air fry at 325 degrees for 15 minutes, tossing every five minutes. Adjust timing depending on how crispy you like them.
  • Once cooked, transfer to a serving dish and drizzle with the balsamic glaze.
  • Or bake in the oven at 400 degrees for 45 minutes, tossing every 15 minutes.

Instructions

Tomato Sauce

  • Blend tomatoes in a blender until pureed
  • Heat a pot over low heat. Once heated, spray with cooking spray and add garlic. Cook for 1-2 minutes, until fragrant
  • Add tomatoes and the remaining ingredients to the pot and stir to combine. Bring to a slight boil and allow the sauce to simmer fo 30-45 minutes, stirring occasionally

Pesto Sauce

  • Add all ingredients to a blender and blend until smooth

  • Once the tomato sauce is ready, combine both sauces and whisk together

  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasonings
  • ¼ teaspoon salt

Chicken

  • 4 chicken cutlets 4-5 ounces each
  • ½ cup panko breadcrumbs
  • 4 tablespoons flour
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon Italian seasonings
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon paprika
  • ¼ cup liquid egg whites

Lasagna

  • 6 sheets oven ready lasagna noodles
  • 1 cup part skim milk ricotta cheese
  • 1 cup reduced fat, part skim shredded mozzarella cheese
  • 1 tablespoon reduced fat parmesan cheese

Instructions

Preparation

  • Preheat oven to 400 degrees

Sauce

  • Drain tomatoes and add them to a blender. Add the seasonings and blend until smooth. Set aside

Chicken Cutlets

  • Preheat air fryer to 400 degrees and grease with cooking spray
  • Stir together breadcrumbs, flour and seasonings on a small plate
  • In a small shallow bowl, pour out the liquid egg white
  • Dip chicken into the egg white, being sure to coat all sides
  • Press chicken onto the flour mixture, being sure to coat all of the sides
  • Air fry for 2 minutes, then spray the chicken with cooking spray. Air fry for 4 more minutes. Flip chicken over and spray again. Cook for another 4-6 minutes, until almost fully cooked. The chicken will finish cooking in the lasagna
  • (Or bake in the oven at 450 degrees for 15 minutes, flipping halfway)
  • Cut chicken cutlets up into long, narrow strips

Lasagna

  • Grease an 8x8 casserole dish with cooking spray
  • Add a layer of the meat/sauce to bottom. Just a very thin layer, barely enough to cover the bottom, about ¼ of the total sauce
  • Add two whole lasagna noodles, slightly overlapping, then split another one in half (longwise) to fill the remaining space, top with another ¼ of the tomato sauce
  • Top with half the chicken cutlet strips, then ½ cup of ricotta and ½ cup shredded cheese, spreading to evenly layer
  • Repeat this layering process one more time, tomato sauce, noodles, tomato sauce, chicken then cheese. Top with the parmesan cheese
  • Cover and bake for 30 minutes then uncover and bake for another 5 minutes, for the cheese to get slightly browned (Double check the directions of your specific box/brand of lasagna noodles to ensure an optimal cooking time)
  • Let rest for 15 minutes before cutting into 6 pieces

You need to go grab this peppermint mocha protein powder now because their last holiday flavor sold out so quick. It is very chocolatey with a hint of peppermint, perfect for the holidays. I have been using it to make my morning protein milkshakes. So rich and so creamy. They are delicious and keep me full until lunch.

  • 1 scoop Orgain protein powder peppermint hot cocoa
  • 1 tablespoon PB2
  • 1 tablespoon Jell-O Sugar-Free Instant Pudding Mix chocolate
  • 1 tablespoon sugar free syrup peppermint mocha
  • 1 cup water
  • 1 glass ice

Instructions

  • Add all ingredients to a blender and blend until smooth
  • Add an extra scoop of protein powder for an additional 2 points

Pesto Chicken Bake

I have been on a pesto kick lately and I am not stopping! I have a basil plant in my backyard that is just THRIVING so the pesto will not be stopping anytime soon. You know, until my lack of a green thumb kick in. Anyways, pesto chicken bake is on menu today. The pesto and the sun-dried tomatoes give the chicken so much flavor and then, of course, we have to add some cheese. Top it off with some balsamic too!

  • 4 chicken cutlets 4 ounces each

  • ⅓ cup pesto sauce
  • ½ cup sun-dried tomatoes in oil, drained
  • 1 cup reduced fat, part skim shredded mozzarella cheese

Allie Carte Light Pesto

  • 1 cup basil packed
  • ¼ cup chicken broth low-sodium, fat-free
  • 4 cloves minced garlic
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ¼ teaspoon black pepper

Instructions

Pesto Sauce

  • Add all ingredients to a blender and blend until smooth

Chicken

  • Preheat oven to 400 degrees
  • Season both sides of each chicken breast, evenly, with the seasonings
  • Add chicken to a greased baking tray
  • Top each piece evenly with the pesto sauce
  • Add the sun dried tomatoes over the pesto sauce
  • Finally, sprinkle, evenly, with the mozzarella cheese
  • Bake in the oven for 20 minutes, or until fully cooked
