Cheddar Bacon Ranch Meatballs

Every single flavor you love comes together in these delicious little cheddar bacon ranch meatballs! Simple to make and literally exploding with flavor. The meatballs are garlic-y, onion-y and, of course, ranch-y. They are packed with cheddar, to really give it that cheesy, burger flavor. Then, yes there's more, they are wrapped in bacon! Literally wrapped up in a bacon blanket. It really cannot get any better. Just 30 minutes from start to finish.

How To Reduce Points / Calories

I made this recipe with ground beef. Why? I honestly do like ground beef, chicken is my favorite, but I do like ground beef. But really, the main reason, was because my husband begged me to feed him some ground beef. Aren't they dramatic. There is a time and a place for beef, and I think this is a good one, but this would also taste amazing with ground chicken breast. Using ground chicken breast, my points would be 2 points for 3 meatballs.

I wrapped this the meatballs in bacon. In full fat bacon. You can sub turkey bacon and that would taste really good. Just make sure the turkey is FULLY cooked. Another idea is to skip the wrapped bacon and put some reduced fat bacon crumbs inside the meatballs. Alternatively, skip the bacon if you do not like or want it.


What Do You Need To Make Cheddar Bacon Ranch Meatballs

To actual cook the meatballs, you need an oven. The idea of cooking then in the air fryer was tempting, and could be possible, but I am not a huge fan of crispy bacon. If you are, trying cooking them in the air fryer or finish them off in the air fryer.

Ingredients Needed:

  • Ground beef
  • Seasonings
  • Cheddar cheese
  • Bacon
  • Brown sugar replacement

Pretty simple, not too complicated. Nothing crazy needed. Just like usual.

I made this recipe with ground beef. Why? I honestly do like ground beef, chicken is my favorite, but I do like ground beef. I used fat-free shredded cheddar cheese. This used to be more difficult to find, at least for me, but now I see it all the time and I use that. I honestly don't notice a taste difference between that and regular cheddar so why not. You can certainly use low-fat or full-fat or a different type of cheese.

For the seasonings, I used salt, garlic powder, onion powder and, obviously, ranch. Apparently Ranch has a lot of sodium so you can skip the salt if you like, I love sodium. Along with any other recipes, feel free to adjust the seasonings to your liking or add some (ground red pepper if you like it spicy) to your liking.

I added a little brown sugar replacement on top. Hey, I like things sweet. This is completely and totally optional. I think it adds just a little step up to the flavor profile. You can also use regular brown sugar.


How To Make Cheddar Bacon Ranch Meatballs

Of course, start by preheating your oven. Or don't and wait later, whatever. Preheat to 350 degrees and grease a baking tray with cooking spray.

In a bowl, flatten down the ground beef to the bottom of the bowl. Evenly sprinkle on the seasonings and give it a good mix. Use your hands and get a little dirty, it is fun! Once mixed, flatted the ground beef back to the bottom of the bowl. Sprinkle on the cheddar cheese, evenly, over the entire ground beef. I found this method best when using shredded cheese in meatballs, it helps keep everything packaged up nicely and evenly. Looks something like this:

Make 12 equal sized meatballs, about a little more than ⅛ cup each. You can certainly make them smaller or bigger but 12 worked perfectly for the length of my bacon strips. Make them smaller for a party appetizer! Just remember to cook them for less time. Place the meatballs on the greased baking tray as you start to form them.

Once you have the 12 meatballs, start wrapping them in bacon. I use a HALF strip of bacon for each meatballs. Wrap them tightly in the bacon, being sure to tuck the ends under the meatball to keep everything together. It will look something like this:

Once all the meatballs are tucked into their bacon blankets, add a little brown sugar replacement on top, if you wish.

Then bake in the oven for 20 minutes, until cooked. They will be EXPLODING with flavor and cheese! This makes 12 meatballs, 3 per serving.

Ingredients
 

  • 1 pound extra lean ground beef
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder

Instructions

  • Make 12 equal sized meatballs, about a little more than ⅛ cup each. Place the meatballs on the greased baking tray as you start to form them. 
  • Once you have the 12 meatballs, start wrapping them in bacon. Use a HALF strip of bacon for each meatballs. Wrap them tightly in the bacon, being sure to tuck the ends under the meatball to keep everything together.
  • Sprinkle on a ½ teaspoon of brown sugar replacement to the tops of the bacon, pressing in slightly. You can skip this step if you do not want to add the sugar.
  • Bake in the oven for about 20 minutes, until fully cooked.

Healthy Super Bowl Snacks

It is time for some healthy super bowl snacks that put a little spin on some classic dishes. If you know me, you know I love eating fun and exciting food, but I just make it a little healthier. This is your ultimate guide to healthy super bowl appetizers, vegetable super bowl recipes, easy healthy finger foods and much more! I may not care about who is playing but I do care about my healthy game day food! Let's get to out healthy super bowl snacks!

Starting with some healthy super bowl appetizers, which all of these snacks and dinners could be appetizers, that is the point here. Make sure to grab an air fryer to make a couple of these recipes. A lot of these are dinners that I have made, that would work out very well as easy healthy finger foods, perfect for game day.

Famous Recipe

We have to start with my FAMOUS queso smothered chicken casserole. Prefect for making little tacos!

This quick and easy, queso smothered chicken casserole is packed with flavor and absolutely irresistible. This oven baked Mexican chicken and rice uses 4 ingredients for an easy weeknight dinner or meal prep. Crock Pot Pork Tenderloin

Crock pot pork tenderloin has been one of my favorite things to make lately. It cuts like butter and has such an amazing flavor. It is an easy, no mess, one press of a button meal.

Turkey Tenderloin Slow Cooker

Make sure you are using pork tenderloin for this meal. It is a long and skinny cut of meat, that looks very odd...

What Do You Need To Make Crock Pot Pork Tenderloin

Well a crock pot of course. I use the original crock pot brand and I love using the liners for easy clean up. I will tag those below for you to order.

Then you will just need a couple other ingredients.

  • Pork tenderloin
  • Spices
  • Brown sugar replacement
  • BBQ Sauce
  • Honey mustard

You can adjust the spices to your liking as well. I like my pork tenderloin sweeter, hence all the brown sugar and honey mustard. If you are looking for a true savory dish, skip the sugar and switch the honey mustard to regular mustard. If you like it spicier and more peppery, add ground red pepper and black pepper. Alternatively, you can use regular brown sugar if you do not like sugar replacements.

Here’s the specific pork tenderloin that I used. I have been getting a little backlash saying this isn’t actually pork tenderloin? Not sure why but anyways here’s the photo proof! Sorry it’s such bad quality, had to screenshot the recipe video.


How To Make Crock Pot Pork Tenderloin

It is quite simple to make, and pretty quick in the crock pot.

Combine all of the seasonings together and press into the pork tenderloin. Place the pork into the crock pot. I use a crock pot liner for easy cleanup.

Pour all the sauces over the pork, including some extra brown sugar, and swirl them together. Alternatively, you can stir them together in a small bowl and pour on top.

I use a crock pot thermometer to know exactly when the pork is done. It is really important to stop cooking right when it hits 140 degrees for the optimal pork. At this point, I would stick my probe into the pork. I will link my favorite thermometer below, it can be used in the air fryer, oven and grill as well.

Place the lid on the crock pot and cook for about an hour and a half to an hour and 45 minutes, just to when the internal temperature hits 140 degrees. Let rest for a couple minutes then slice and serve.

Increasing The Servings:

I have only tried this with two pork tenderloins (1 pound each) that’s about all that fits into my crock pot. For two pounds of pork tenderloins, two tenderloins, double the recipe of ingredients and double the cook time. I cooked two tenderloins for about 3.5 hours. One was ready 15/20 minutes before the other, different thicknesses cook at different times, so I took it out before the other. Again, use the thermometer probe to make sure you do not over or under cook either tenderloins.

You can also add some more bbq sauce on top after for a prettier presentation. Or slice it and no one will know the difference!!

Ingredients
 

  • 1 pound pork tenderloin
  • 1 teaspoon brown sugar replacement
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  • Combine all the seasonings in a small bowl.
  • Pat dry the pork tenderloin and sprinkle all sides with the seasonings, pressing down to really get the seasonings in.
  • Add pork tenderloin to the crock pot.
  • Add the BBQ, honey mustard and brown sugar to the top of the pork, swirling together to combine.
  • Cook on low for an hour and a half to an hour and 45 minutes, until the internal temperature reaches 140 degrees.
  • Let rest for 10 minutes then slice into 12 equal sized pieces.

Pasta

  • 6 ounces pasta dry, elbow shaped

Chicken

  • 1 can diced tomatoes 15oz can
  • 4 cloves minced garlic
  • 2 tablespoons oregano
  • 2 tablespoons Italian seasonings
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon granular sugar replacement
  • 1 pound ground chicken breast

Lasagna

  • 1 cup mozzarella cheese shredded, fat-free
  • 15 pieces turkey pepperoni
  • 1 tablespoon reduced fat parmesan cheese

Instructions

  • Preheat oven to 400 degrees.

Pasta

  • Cook pasta according to package instructions. Drain well and set aside.

Chicken

  • Drain the can of tomatoes then blend tomatoes and half the seasonings until puréed
  • Heat a large pot over low heat. Once heated, add garlic and cook for 1-2 minutes, until fragrant
  • Add ground chicken and begin to break it up. Add the remaining seasonings and continue to break up the chicken while mixing together and cooking
  • Once completely cooked, add the blended tomatoes and stir together
  • Bring to a simmer then cut off the heat

Lasagna

  • Grease an 8x8 casserole dish with cooking spray.
  • On the bottom, add half the pasta, then layer with half the meat, then half the shredded mozzarella. Repeat this step again.
  • On top, add the pepperoni, then sprinkle with the parmesan.
  • Bake until the cheese is melted, about 5-8 minutes.
  • Cut into 4 pieces.

Homemade Sushi

I made homemade sushi and it was better than takeout! I used my teriyaki chicken recipe and cut the chicken up into thin slices. In my sushi, I added cucumber, avocado, carrots and green onions, which I sliced up very thin as well. I made my rice in the Instant Pot, it makes the best rice. Then I wrapped it all up together using the seaweed and sushi roller. I tried a couple seafood nori sheets but I will link the one I like the most below. I will also link my sushi roller, it was a great price and works really well.

I paired my sushi with my homemade yum yum sauce! Yum yum sauce is great on everything. Add extra sriracha if you want it spicier.

PEPPERMINT CRANBERRY SANGRIA! This was so so good and perfect for the holidays. It came out to 5 points for me but it’s kinda two drinks (strength wise) which is pretty good to me. Use ‘garnacha’ wine for this, it’s probably found in the Spain area of you wine store, because it makes for the best sangrias. Make sure you grab some skinny mixes sugar free simple syrup for this or make your own sugar free version, if you like it sweet, which I certainly do. I love the peppermint hint in this, you can use as much or as little peppermint as you like, but remember, it packs a peppermint punch! Make sure to add lots of ice and enjoy.

Garlic Butter Chicken Thighs

Juicy, tender and delicious. That's what you get when you make my garlic butter chicken thighs. They are easy to make and taste great with anything you pair them with. All of the flavor gets completely absorbed into the chicken for the most amazing dish.

Simple is best when it comes to these chicken thighs. The meat really speaks for itself and only a couple extra ingredients are required. This sauce goes well with any other cut of chicken or other types of meat, especially fish. Use a different cut of chicken, such as cutlets, to keep the points and fat down.

What Do You Need To Make Garlic Butter Chicken Thighs

Not Much! You probably have all of the ingredients on hand.

  • Chicken Thighs
  • Garlic Salt
  • Light Margarine
  • Minced Garlic

How Do You Make Garlic Butter Chicken Thighs

Start by sprinkling just a little bit of garlic salt. Alternatively, use salt and garlic powder. If you like it spicier, add just a pinch of ground red pepper.

Heat a medium sized pan over medium high heat. Add the margarine and minced garlic and cook until the margarine has melted, about 3 minutes.

Add the chicken thighs and cook for about 3-4 minutes per side. This is when you can get the skin as crispy as you would like. Be careful not to burn it though. While cooking, move the chicken thighs around a little to absorb all of the melted margarine.

They will look something like this, more or less crispy, depending on how you like it.

Place in the oven and bake at 350 degrees for about 15 minutes, until fully cooked. I like using a meat thermometer that is oven safe, to pull out the chicken right when it hits 165 degrees. You do not want it over or under cooked. You can order my thermometer here, it works for the crock pot, grill, air fryer and oven.

That's it! A delicious meal in under 30 minutes.

  • Sprinkle the garlic salt over both sides of the chicken thighs.
  • Heat a pan over medium high heat. Add the margarine and minced garlic. Cook for about 3 minutes.
  • Add the chicken thighs and cook for 3-4 minutes per side. Move then around a little to absorb all of the margarine.
  • Transfer to a greased baking tray and bake in the oven for about 15 minutes, until fully cooked.
  • Top with herbs.

Ingredients
 

  • 4 ounces chicken tenderloin about 2 pieces
  • ¼ teaspoon garlic salt
  • ¼ teaspoon Italian seasonings
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon paprika
  • 20 sprays butter spray ICBINB
  • butter flavored cooking spray

Instructions

  • Cut chicken up into bite-sized pieces, however small or big you want them to be. Season with the seasonings, tossing to evenly coat.
  • Heat a small pan over medium high heat, grease with butter flavored cooking spray.
  • Add chicken and cook for about 7-10 minutes, flipping every few minutes until chicken is fully cooked.
  • Once fully cooked, spray with the butter spray and toss to evenly coat.
  • You can also bake them in the oven or air fry them.

Ingredients
 

  • 1 pound shrimp raw
  • ¼ cup flour
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup liquid egg whites 2 eggs
  • ¾ cup shredded coconut unsweetened
  • ¼ cup breadcrumbs

Instructions

  • Make sure your shrimp are peeled and deveined.
  • Add the flour and seasonings to a small bowl, stirring to combine. Add the eggs to a second bowl. Combine the shredded coconut and breadcrumbs in another bowl.
  • One by one, cover each shrimp in flour, then in egg, then in the shredded coconut mixture.
  • Add the shrimp to a greased air fryer.
  • Repeat for each shrimp until all shrimp are covered. Place each in the air fryer, trying not to let them touch.
  • Air fry at 350 degrees for 3 minutes. Open the air fryer and spray the shrimp with cooking spray. Air fry for another 2 minutes.
  • Flip the shrimp then spray again with cooking spray. Air fry for another 5-8 minutes, until fully cooked.

Cheeseburger Bombs

One of the best ways to make cheeseburgers are these cheeseburger bombs. Low carb, if that is what you are going for, but has all the taste of a restaurant burger. Plus, the glazing on top is so amazing!!

Ingredients
 

  • 1 pound extra lean ground beef
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • ⅛ cup Worcestershire sauce
  • ⅛ cup flour
  • ⅛ cup bacon bits
  • ½ cup fat-free shredded cheddar cheese
  • 2 tablespoons sugar free ketchup
  • 2 tablespoons brown sugar replacement swerve

Instructions

  • Preheat oven to 400 degrees
  • Combine beef and seasonings in a bowl and mix to combine. Add worchestire, flour, bacon bits and half the shredded cheese (¼ cup) and mix to combine.
  • Divide into 16 equal pieces, about a heaping ⅛ cup. Spray beef with cooking spray then roll each piece into a ball. The spray helps your hands not get to sticky.
  • Bake in the oven for 5 minutes.
  • Meanwhile, combine ketchup and brown sugar in a small bowl. Remove meatballs from oven and flip over. Brush on the ketchup mixture and sprinkle with the remaining cheddar cheese.
  • Bake for another 10 minutes or until fully cooked.

Loaded Cheesy Fries Casserole

All the tastes of a loaded cheesy fries, with some added protein. Loaded cheesy fries casserole is a one-pot meal that is sure to please the crowd. Potatoes, chicken, cheese and bacon, what could be better?! This may be one of my top new favorite dishes of mine, it is seriously so good.

For this recipe I used Ore Ida golden fries. The specific brand does not particularly matter. I usually grab those or the Publix brand. I did not pre-bake them before adding in the chicken. It did make them soft but I loved that because it was truly like eating a loaded baked potato and having the mashed potato at the bottom. You can pre-bake the fries or keep everything separate if you want crispy tater tots but I prefer it like this. Plus, my way is easier.

  • 50 frozen fries
  • ½ teaspoon seasoned salt
  • 1.25 pounds chicken tenderloins
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon seasoned salt
  • ¼ teaspoon oregano
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon paprika
  • 1 cup fat free cheddar cheese shredded
  • 3 tablespoons bacon bits
  • ¼ cup plain, nonfat Greek yogurt
  • 2 green onions

Instructions

  • Preheat the oven to 450 degrees
  • Grease an 8x8 casserole dish with cooking spray. Add the fries to the bottom of the dish. Sprinkle with the seasoned salt.
  • Cut chicken tenderloins into bite sized pieces, about 1 inch by 1 inch. Season with the remaining seasonings and place on top of the fries, in a single layer.
  • Bake for 30-35 minutes, until chicken is almost fully cooked. About half way, carefully flip over the chicken, trying not to disturb the fries.
  • Top with the shredded cheese and bacon bits then place back in the oven for about 10 minutes, until chicken is fully cooked and cheese is melted.
  • Serve with nonfat greek yogurt and sliced green onions.

Air Fryer Easy Enchiladas

Air fryer easy enchiladas. I have been keeping this recipe in my vault for months. Mostly because the photo came out horribly and the tortillas cracked a bit. This was one of the best meals I have had in a long time so I thought I would just post it! Sometimes things do not look as good or work out as perfectly as I may think. But these tasted AMAZING and were so fun to make.

For the chicken, I grabbed a rotisserie chicken and shredded up all the white meat, without the skin or fat. This made the recipe very easy. You can also cook your own chicken or use any other type of shredded chicken. You can use any taco sauce you prefer as well.

As mentioned, these did break apart pretty easy so please be as gentle as possible. They will break but they will taste amazing.

  • 2 cups shredded chicken
  • ¼ cup Taco Bell sauce
  • ¼ cup salsa con queso
  • 8 street corn tortillas

Instructions

  • In a bowl, combine shredded chicken, Taco Bell sauce and salsa con queso.
  • Evenly divide the chicken mixture into the tortillas, placing the chicken in the middle area of the tortilla, in a long thin strip.
  • Roll up the tortillas tightly. Then place in a greased air fryer.
  • Spray with cooking spray and air fry at 400 degrees for 10 minutes.
